Abstract
L'invention concerne un procédé pour la fabrication de pizzas. Ce procédé est caractérisé par les étapes suivantes : a) On soumet à une précuisson dans un four à une température de 180 à 500 degre(s)C la pâte à pizzas terminée qui est éventuellement garnie au préalable; b) Un grillage des pizzas précuites par chauffage par le dessous a lieu ensuite; c) On continue par la cuisson finale des pizzas; d) Le garnissage des pizzas a lieu ensuite, éventuellement sous la forme d'un garnissage partiel; e) On réalise un grillage du dessus des pizzas au moyen de chaleur venant par le dessus; et f) Le garnissage final des pizzas a lieu après leur refroidissement. Application à la fabrication industrielle de pizzas.
