Abstract
Un método para el tratamiento y envasado de un producto alimenticio, con el fin de obtener buenas propiedades de conservación del producto, caracterizado porque a) el producto de partida requerido para el producto alimenticio se trata por medios mecánicos y/o químicos y se disgrega en partículas, cuyo tamaño es menor que i mm y preferiblemente menor que 1 mm, de modo que forme un producto fluido o semi fluido sustancialmente homogéneo, b) dicho producto de partida se calienta antes, en relación con, o después que el procedimiento de disgregación en un grado tal que el producto llegue a ser estéril y que haga que las proteínas del producto coagulen al menos parcialmente preparadas, c) el producto que está al menos parcialmente coagulado se enfría a una temperatura por debajo de la temperatura de coagulación, y se trata y homogeneiza y tritura de nuevo en condiciones asépticas , en una forma fluida o semi fluida, d) el producto esterilizado se envasa en condiciones asépticas en envases a prueba de bacterias, en los que el producto endurece a una forma semi-sólida o sólida por medio de agentes de coagulación o compuestos orgánicos que absorben agua contenidos en el producto o añadidos especialmente a el.
