- the production of powder is particularly suitable for the production of fat-free lactose-free milk powder, but fatty powders may also be produced.
- lactose-free milk products according to examples 1 to 3 can be used for further processing of conventional, but lactose-free products.
- Lactose-free milk can be used to produce lactose-free cream by adjusting the fat content of the product suitable before the hydrolysis of the lactose.
- Lactose-free milk can similarly be used to produce sour milk by adding milk souring agent to the milk and letting the milk become sour as in normal sour milk production.
- Lactose-free ice cream can be produced in the same way as from normal milk.
- almost all feasible milk products can be produced lactose-free by means of conventional production technology. Minor changes in the parameters of the production of the different products may be required when lactose-free milk is used.

Claims (8)
- Procédé de production d'un produit laitier sensiblement sans lactose ou sans lactose caractérisé par les stades:a) d'ultrafiltration de lait,b) de nanofiltration du perméat UF obtenu de l'ultra filtration,c) de concentration du perméat NF obtenu au stade b) par osmose inverse,d) d'utilisation du rétentat RO obtenu au stade c) comme sel à ajouter au rétentat UF, ete) d'hydrolyse du produit laitier au moyen de lactase.
- Procédé suivant la revendication 1, caractérisé par l'addition d'un autre sel au rétentat UF outre le rétentat RO.
- Procédé suivant la revendication 2, caractérisé en ce que l'autre sel est un sel de lactossérum.
- Procédé suivant la revendication 1, caractérisé en ce que l'hydrolyse prend de 1 à 36 heures.
- Procédé suivant la revendication 4, caractérisé en que l'on effectue l'hydrolyse à une température de 5 à 70 ° C.
- Procédé suivant l'une quelconque des revendications précédentes, caractérisé en ce que l'on conditionne le lait à une teneur souhaitée en matière grasse et on le pasteurise avant l'ultra filtration.
- Procédé suivant l'une quelconque des revendications précédentes, caractérisé en ce qu'il consiste aussi à ajuster la teneur en matière sèche du produit laitier en ajoutant de l'eau.
- Procédé suivant l'une quelconque des revendications précédentes, caractérisé para) l'ultrafiltration de lait à un coefficient de concentration de 1 à 4,b) la nanofiltration du perméat UF obtenu de l'ultra filtration à un coefficient de concentration de 1 à 6.c) la concentration du perméat NF obtenu au stade b) par osmose inverse à un coefficient de concentration de 2 à 20.
