Claims (9)
- 락토오스 무함유 유제품의 제조 방법에 있어서,a) 우유를 한외 여과(UF)하는 공정과,b) 상기 한외 여과로부터 얻은 UF 투과물을 나노 여과(NF)하는 공정과,c) 상기 공정 b)에서 얻은 NF 투과물을 역삼투법(RO)으로 농축하는 공정과,d) 상기 공정 c)에서 얻은 RO 잔류물을 상기 UF 잔류물에 첨가할 염으로서 사용하는 공정과,e) 락타아제에 의하여 유제품을 가수 분해시키는 공정으로 이루어지는 것을 특징으로 하는 락토오스 무함유 유제품의 제조 방법.
- 제1항에 있어서, 상기 UF 잔류물에 RO 잔류물 이외의 또 다른 염을 첨가하는 것을 특징으로 하는 것인 방법.
- 제2항에 있어서, 또 다른 염은 유장염인 것을 특징으로 하는 것인 방법.
- 제1항에 있어서, 상기 가수 분해는 1 내지 36 시간 수행되는 것을 특징으로 하는 것인 방법.
- 제4항에 있어서, 상기 가수 분해는 5 내지 70℃의 온도에서 수행되는 것을 특징으로 하는 것인 방법.
- 제1항에 있어서, 우유를 소정의 지방 함량으로 조절하고, 한외 여과 전에 파스퇴르 살균시키는 것을 특징으로 하는 것인 방법.
- 제1항에 있어서, 물을 첨가하여 유제품의 건체 함량을 조절하는 공정을 더 포함하는 것을 특징으로 하는 것인 방법.
- 제1항에 있어서,a) 우유를 농축 계수 1 내지 4로 한외 여과 (UF)하는 공정과,b) 상기 한외 여과로부터 얻은 UF 투과물을 농축 계수 1 내지 6으로 나노 여과(NF)하는 공정과,c) 공정 b)에서 얻은 NF 투과물을 농축 계수 2 내지 20으로 하여 역삼투법으로 농축하는 것을 특징으로 하는 것인 방법.
