Description
a)ミルクを限外濾過すること、
b)限外濾過で得られるUF濾液をナノ濾過すること、
c)逆浸透により、ステップb)で得られるNF濾液を濃縮すること、
d)ステップc)で得られるRO保持液を、UF保持液に添加される塩として使用すること、
のステップを含むのが好ましい。
k=供される液(kg)/保持液(kg)
1.5%の脂肪含量を有する30リットルの低温殺菌した(72℃、15秒)ミルクを、20000Daのカット・オフ値を有するGR61PP 膜を用いて濃縮比1.5で研究室スケールのLabstak ultrafilterを用いる50℃で限外濾過した。得られた保持液(20L)と得られた濾液(10L)の両方を回収した。
1.5%の脂肪含量を有する低温殺菌(72℃、15秒)ミルク(30リットル)を、50℃、濃縮比1.5で、20000Daのカット・オフ値を有するGR61PP膜を用いて、限外濾過した。得られた保持液(20L)と得られた濾液(10L)の両方を回収した。
実施例1または2に従って製造されたミルクを、粉末に乾燥させることができる。ミルクを、75℃±3℃/3分で低温殺菌し、乾燥物含量40〜45%まで蒸留した。laminar drier (Filtermat)による乾燥を、正常なラクトース加水分解ミルク粉末と対応する乾燥値で行った。

薄層エアー160〜170℃の温度
乾燥後120〜130℃
冷却20〜25℃
外部温度60〜65℃
目的とする湿度1.75%、最高値2.3%
実施例1〜3のラクトースを含まない乳製品は、ラクトースを含まないが、従来の製品の、さらなる加工のために使用され得る。ラクトースを含まないミルクは、ラクトースの加水分解前に製品の適切な脂肪含量に調整することによって、ラクトースを含まないクリームを製造するために使用されうる。ラクトースを含まないミルクは、ミルク酸味剤をミルクに加え、ミルクを通常のサワーミルク製造のように酸っぱくさせることにより、サワーミルクの製造と同様に使用され得る。ラクトースを含まないアイスクリームは、通常のミルクからと同じ方法で製造され得る。同様に、ほとんどの実施可能な乳製品は、従来の製造技術によって、ラクトースを含まないものを製造され得る。様々な製品の製造に関するパラメーターにおける小さな変更は、ラクトースを含まないミルクを使用する場合に必要となることがある。
Claims (20)
- 実質的にラクトースを含まない、またはラクトースを含まない乳製品を製造するための方法であって、次のステップ、
a)濃縮係数1〜4でミルクを限外濾過すること、
b)限外濾過で得られるUF濾液をナノ濾過すること、
c)逆浸透により、ステップb)で得られるNF濾液を濃縮すること、
d)ステップc)で得られるRO保持液を、ステップa)で得られるUF保持液に塩として添加し、乳製品を得ること、および
e)ラクターゼを用いて乳製品を加水分解し、実質的にラクトースを含まない、またはラクトースを含まない乳製品を得ること
によって特徴付けられる方法。 - 濃縮係数1.5〜2でミルクを限外濾過することを特徴とする、請求項1記載の方法。
- 濃縮係数1.5でミルクを限外濾過することを特徴とする、請求項2記載の方法。
- ステップa)で得られるUF保持液が5〜7%のタンパク質および4.6〜4.9%のラクトースを含有する、請求項2または3記載の方法。
- UF保持液へRO保持液の他に別の塩を添加することによって特徴付けられる、請求項1〜4のいずれかに記載の方法。
- 他の塩がホエー塩であることによって特徴付けられる、請求項5記載の方法。
- 1〜36時間かけて加水分解することによって特徴付けられる、請求項1〜6のいずれかに記載の方法。
- 5〜70℃の温度で加水分解を行なうことによって特徴付けられる、請求項7記載の方法。
- ミルクを所望の脂肪含量に調整し、それを低温殺菌し、次いで限外濾過することによって特徴付けられる、請求項1〜8のいずれか記載の方法。
- 乳製品の乾燥物含量を水の添加により、調整することもまた含むことによって特徴付けられる、請求項1〜9のいずれか記載の方法。
- 濃縮係数1〜6で限外濾過で得られるUF濾液をナノ濾過すること、および
逆浸透によりステップb)で得られるNF濾液を濃縮係数2〜20で濃縮すること、
によって特徴付けられる、請求項1〜10のいずれか記載の方法。 - 濃縮係数3〜5で限外濾過で得られるUF濾液をナノ濾過すること、および
逆浸透によりステップb)で得られるNF濾液を濃縮係数5〜12で濃縮すること、
によって特徴付けられる、請求項11記載の方法。 - a)濃縮係数1.5でミルクを限外濾過すること、
b)濃縮係数4で限外濾過で得られるUF濾液をナノ濾過すること、
c)逆浸透によりステップb)で得られるNF濾液を濃縮係数10で濃縮すること、
によって特徴付けられる、請求項1〜12のいずれか記載の方法。 - RO保持液が0.5〜2%の灰分を含有する、請求項1〜13のいずれか記載の方法。
- 実質的にラクトースを含まない、またはラクトースを含まない乳製品が、<0.01%のラクトースを含有する、請求項1〜14のいずれか記載の方法。
- 実質的にラクトースを含まない、またはラクトースを含まない乳製品が、1.1のタンパク質対糖質の比を有する、請求項1〜15のいずれか記載の方法。
- 実質的にラクトースを含まない、またはラクトースを含まない乳製品が、3.4:3.0:0.8のタンパク質:糖質:灰分の比を有する、請求項1〜14のいずれか記載の方法。
- 実質的にラクトースを含まない、またはラクトースを含まない乳製品が、3.35:3.01:0.79のタンパク質:糖質:灰分の比を有する、請求項1〜14のいずれか記載の方法。
- 実質的にラクトースを含まない、またはラクトースを含まない乳製品が、0.8%の灰分含量を有する、請求項1〜18のいずれか記載の方法。
- 実質的にラクトースを含まない、またはラクトースを含まない乳製品が、0.79%の灰分含量を有する、請求項1〜18のいずれか記載の方法。
