Abstract

Μέθοδος παρασκευής για προϊόντα κρέατος με βάση τον κιμά με την προσθήκη τυριού φέτας που αναμειγνύεται σε όλο το προϊόν και με την ενσωμάτωση ελαιόλαδου, που περιλαμβάνει τα ακόλουθα στάδια : (α) ανάμειξη του κρέατος με νερό, αλάτι, τρίμματα ψωμιού και φυτικές ίνες (β) προσθήκη ελαιόλαδου και ανάμειξη (γ) προσθήκη φέτας (δ) ανάμειξη και εφαρμογή ψύξης με CO2 (ε) σχηματισμός μείγματος (στ) επεξεργασία με θερμότητα και (ζ) βαθιά ψύξη του προϊόντος. Μέθοδος παρασκευής για τα προϊόντα κρέατος με βάση τον κιμά με γέμιση τυριού φέτας και ενσωμάτωση ελαιόλαδου σε μια φορμαριστική μηχανή. Τα προϊόντα που παρασκευάζονται σύμφωνα με τις ως άνω αναφερθείσες μεθόδους έχουν εξαιρετική στερεότητα, όσον αφορά στη δομή, και διατηρούν τα οργανοληπτικά τους χαρακτηριστικά του τυριού φέτας που περιέχεται στα προϊόντα καθώς και τα φυσικά - χημικά χαρακτηριστικά του ελαιόλαδου.
