Abstract

技术领域
本发明涉及包括存活微生物和包衣的丸,涉及益生生物递送系统,涉及所述丸在食品中作为益生生物递送系统的用途,还涉及得到增补食品的递送系统的方法。本发明还涉及含有所述丸的食品。
发明背景
益生性微生物(此后叫做:益生生物)是活的微生物,当其被摄入一定数量时,发挥超出基本营养以外的健康优点。益生生物可以引起的有益效果很多并且形成技术人员知识的一部分。可提及的一些例子是减少乳糖不耐受、抑制病原细菌和寄生虫、减少腹泻、抗幽门螺杆菌(Helicobacter pylori)的活性、防止结肠癌、改善或防止便秘、原位产生维生素、调节血脂,和调节宿主免疫功能。
上述有益效果对定居于哺乳动物,例如陪伴动物,如宠物,和人类的肠道内的非常特异的微生物菌株通常是有效的。
因此,对于将益生生物包含在食物中有相当大的兴趣。例如,可通过商业途径得到含有益生生物的许多发酵奶产品,如酸乳。
类似地,对于动物,将益生生物包含入动物饲料中也存在兴趣。这至少对于家畜的饲料和宠物食物是真实的。
许多益生生物主要在存活的时候发挥有益效果。因此,如果将益生生物加入到食品中,则意味着使益生生物存活通过食品贮存期,甚至更进一步在食物消化过程中存活通过胃肠道直到定居的位置。
因此,现有技术中的问题是与食物和/或宠物食品一起提供益生生物并使加入的益生生物具有延长的寿命。尤其是,益生生物在潮湿或半干食物中时对温度和湿度非常敏感,而它们在干燥环境(如特征是水活度(aw)低于0.2的干燥环境)中相当地稳定。因此,现有技术关注于在湿润的、潮湿的或甚至液体的环境中于室温和更高温度下保存活生物质。
EP 0862 863提供了含有糊化淀粉基质的立即可食用的谷类食品,其中淀粉基质包括含有益生生物的包衣或填充物。由此,喷雾干燥的益生生物被混合入载体基质中,载体基质可以是水、脂肪或蛋白质水解物,然后混合物基本上被喷雾到谷类食品上。当然,谷类食品必须自身具有低的水活度以保证益生生物的延长的寿命。
EP 0704 16更具体地关注乳酸细菌在潮湿食物中的保存。喷雾干燥的细菌被加到含有脂肪、发酵奶粉和糖类的组合物中。该组合物将是甜食的填充物。该发明通过将益生生物包埋到富含脂肪或油的基质中避免了水的有害影响但由此有使食品的均衡营养组成偏移到负面的危险。
EP 0 180 743公开了悬浮在油相中并被至少一个水溶性保护层(纤维素或淀粉、树胶或果胶的水溶性衍生物)包住的微生物。
微囊化形式的良好稳定的微生物可从例如Cerbios-PharmaSA(Bioferment,Lugano,瑞士,产品名LBC ME 10)通过商业途径得到。小胶囊(直径约700μm)切片的显微观察显示附着到载体的益生生物被保护益生生物的几个薄层包被。这些产品的特征是在潮湿环境中也具有相对高的稳定性,但是生产成本昂贵,因为必须加入几层以避免水进入微囊。
因此,仍需要提供能相对于现有技术在液体、潮湿或半潮湿环境中使益生生物具有更长寿命的益生生物递送系统。
具体地,本发明所要解决的问题是提供稳定的益生生物或益生生物递送系统,其被加入到aw值高于益生生物存活的最佳值的食品中。此外,益生生物应该优选以(从营养和感观的角度看)不会与它们所加入的食品有实质性差别或者对所加入的食品无实质性破坏的形式提供。
发明概述
引人注目地,发现通过将干燥的微生物和可由干燥食物材料组成的基质压制在一起,并通过用食品级防潮屏障包被此丸,可以在储存期得到优秀的稳定性。
因此,第一方面,本发明提供了包括压制的内部基质和至少一层包衣的丸,其中内部基质含有存活的微生物,包衣含有防潮屏障,该丸的特征是丸的体积为至少0.02cm3。
第二方面,本发明提供了食品内的丸,其中丸为根据本发明的丸并且丸的内部基质含有食品的至少一种组分。
第三方面,本发明提供了益生生物递送系统,其含有根据本发明的丸。
第四方面,本发明提供了根据本发明的丸作为潮湿、半湿或半干食品中益生生物递送系统的用途。
第五方面,本发明提供了得到用于向食品增补活微生物的丸的方法,该方法包括将微生物制品和其他组分混合,干燥混合物到aw低于0.3,在压力下压制混合物以得到体积至少为0.02cm3的丸,并用防潮屏障包被该丸。

表示压缩实体的比重的另一种方式是例如绝对密度(absolutedensity)。未加包衣的丸的绝对密度优选为高于1g/cm3,更优选高于1.2g/cm3,最优选高于1.5g/cm3。绝对密度可用例如MicromeriticsAccuPyc 1330设备估计。

通常,可以说包封密度是根据包括密闭孔和直到表面平面的开放孔在内的物体体积确定的物体的总密度。绝对密度为根据包括密闭孔(但排除开放孔)的物体体积确定的物体的密度。基质密度或真实密度(没有在上面的实施方案中指出)是通过排除了开放孔和密闭孔的基质的体积确定的物体密度。
通常,未加包衣的丸的包封密度是内部基质的未加包衣的未压缩组分的绝对密度的约50%到100%,优选70%到100%,更优选80%到100%。
在另一个实施方案中,根据本发明的丸含有105到1012个存活的微生物(cfu)。优选地,其含有105到1011cfu,更优选地106到1010cfu。例如,根据本发明的丸可含有106到108cfu。
上面的值取决于丸的尺寸和加入的cfu的数目。推荐的cfu值也可以以丸的克数来表示,而不管丸的尺寸。所以,根据本发明的丸优选含有105到109,更优选106到108cfu/g。
在另一个实施方案中,根据本发明的丸的内部基质还含有选自可消化淀粉、抗性淀粉(resistane starch)、其他纤维、碾磨的谷类、干燥并碾磨的蔬菜、纤维素和纤维素衍生物、宠物食品、麦芽糖糊精、菊苣面粉、蛋白质分离物、酵母提取物和它们的混合物的成分。

在根据本发明的方法的一个实施方案中,其他组分包括食品的至少部分成分。
不希望被理论所束缚,但认为通过将干燥的益生生物加入食品材料或特定食品级成分,干燥,将它们压制成相对大的颗粒或丸(≥0.02cm3),然后用充当防潮屏障的物质包被它们,可以得到高度稳定的包囊化的益生生物。这可能如此的部分原因是:与目前公知的包囊化或干燥的益生生物相比,好得多地利用体积和表面积的比率。压缩和防潮屏障进一步支持了此优化的比率并允许益生生物在湿环境中达到至今未有的储藏稳定性。
为了制备根据本发明的丸,可以选择不同的可能微生物的一种或者它们的混合物、内部基质的其他组分和疏水物质。
作为微生物,可选择任何微生物。优选地,选择对人或动物,如宠物,例如猫或狗,家畜,例如,猪、牛、水牛、绵羊或山羊的健康和保健发挥有益效果的微生物,优选微生物是益生性微生物。

微生物优选为干燥的形式,或者例如对于形成孢子的微生物而言优选为孢子形式。通过发酵生产后微生物的干燥是技术人员公知的。例如,EP0818 529(SOCIETE DES PRODUITS NESTLE),其中描述了粉碎干燥方法,或者WO 0144440(INRA)。通常,细菌微生物从培养基浓缩并通过喷雾干燥、流化床干燥、冻干(冷冻干燥)或其它恰当干燥方法干燥。例如,在干燥期间或干燥前将微生物与载体材料如糖,例如蔗糖、乳糖或麦芽糖糊精、脂或蛋白质,例如奶粉混合。如果使用载体材料,其也可以形成内部基质的一部分。
然而,微生物不必从开始就以干燥形式存在。也可想到将它们在发酵后直接与内部基质的其他组分(见下面)混合并之后进行干燥过程。这种方法可从从WO 02/065840(SOCIETE DES PRODUITS NESTLE)推演而来。
在一个优选的实施方案中,微生物以颗粒的形式存在,颗粒大小至少为100μm,优选至少200μm,更优选至少300μm。例如,颗粒大小可为约1mm。这些数字指颗粒的平均直径。
优选地,颗粒含有显著量的惰性无定形糖类,而微生物包埋于其中。优选地,颗粒含有(以总的干物质的重量百分比表示)10-90%,优选30-80%,更优选40-70%惰性糖类。惰性糖类的实例为麦芽糖糊精、淀粉、低分子量糖(蔗糖、乳糖、麦芽糖、甘露醇,等等)和亲水胶体(果胶、瓜尔豆胶、黄原胶、阿拉伯胶)。
优选含有微生物和惰性糖类的颗粒,因为微生物不易受到随后的压缩的影响从而更易存活。
可以通过发酵后将微生物和惰性糖类混合并根据本领域技术人员公知的成熟方法喷雾干燥或流化床干燥此混合物,得到适宜的颗粒。喷雾干燥和流化床干燥的现有技术描述在例如K.Masters,Spray Drying Hanbook,第五版,Longman,Harlow(1991)和K.Dewettinck和A.Huyghebaert,食品技术中流化床包衣.Trends Food Sci.Technol.10,163-168(1999)和其中所含有的参考文献。
此外,可选择内部基质的其他组分。本发明的一个优点是内部基质的其他组分的高度灵活性和变化性。这种高度变化性可以通过可加入内部基质的可能分子或功能的列表反映。
因此,其他组分可被认为是“填充”或“填料”组分并且它们的选择几乎是随意的和无阻碍地合格的。对于微生物已经与其他组分例如载体材料或保护剂混合的情况,甚至可以不必选择其他组分。
通常,如果选择内部基质的其他组分,就包衣丸在阻止内部水活度增加方面的能力而言,具有高的吸湿容量(hygrocapacity)的物质通常是有利的。即使水被丸的内部基质吸收,因为内部基质具有高的吸收水分的能力,水活度仍会保持相对较低。例如,聚合糖类具有高的吸湿容量。
优选地,可以选择内部基质的其他组分以便内部基质可以压缩。通常,这也可通过合适的粘合剂和/或增塑剂完成。
为了方便起见和避免选择内部基质的其他组分时由于高度变化性或选择性造成的混淆,将这些组分作为填充剂、功能性成分、润滑剂、增塑剂和粘合剂进行示例性的讨论。可以理解这些分类不完全覆盖不同的成分,而且可能甚至有实质上的重叠。例如,一些增塑剂也可用作粘合剂,或者填充剂也可含有功能性成分,如纤维。

可选择功能性成分以向根据本发明的丸或递送系统提供其它的优点。除了益生生物外,这些功能性成分可以包括益生素纤维,例如果寡糖(FOS)、多聚果糖,例如,菊粉或果聚糖、抗性淀粉,例如老化的淀粉、葡聚糖、阿拉伯半乳聚糖、例如,阿拉伯胶、半乳甘露聚糖,例如瓜尔豆胶、半乳寡糖、异麦芽寡糖、麦芽寡糖、麦芽糖糊精和它们的混合物。

如果需要,可将粘合剂和/或增塑剂加入到内部基质的组分中以提高内部基质组分的压缩性质。然而,其他组分和/或微生物本身可足够“粘”或粘着而允许压制。在这种情况下,可省略特定“粘合组分”。然而,如果将一种或几种粘合剂和/或增塑剂加入以支持通过压制形成丸,那么优选使用食品级成分。
增塑剂的实例可选自多元醇(例如,甘油、山梨醇、丙二醇)、醇(例如,乙醇、丙醇、丁醇、异丙醇、异丁醇、丁二醇)。
粘合剂的实例可选自例如合适的多糖,例如淀粉(天然淀粉、蜡质玉米淀粉、水解淀粉、麦芽糖糊精、预糊化的淀粉)、多聚果糖(菊苣面粉、菊粉)、亲水胶体、聚乙烯吡咯烷酮、羟丙基甲基纤维素。
润滑剂可起到方便丸从压片、压丸或压块模中释放的目的,其通过减少丸和成型模以及,如果相关,压片冲压机之间的摩擦而达到上述目的。而且,它们可促进进料斗中和压片或压丸模中的丸预混物的流动。润滑剂的实例可选自硬脂酸、硬脂酸盐、硬脂酸衍生物、滑石粉、聚乙二醇、表面活性剂和蜡。
因为本发明的目的是将丸加入食品中,一个显著的优点是内部基质可含有丸待加入的食品中的一种、几种或所有组分。
例如,如果丸将被加入宠物食品,那么可向内部基质补加丸将要加入的宠物食品的部分或全部。所以,宠物食品可以只是以已烹调或未被烹调的状态被碾磨和/或干燥并用作丸的内部基质的部分(例如,填充剂)。
因此,如果将丸加入谷物早餐中,内部基质可含有谷物。或者,例如,如果将丸作为薄片加入点心,那么内部基质可含有马铃薯淀粉或其他成分,如香料,用于制备薄片。本发明概念可延伸到任何食品。

在一个优选的实施方案中,防潮屏障是基于脂的包衣。
所提到的成分的混合物和叠层(laminate)可包括例如,酪蛋白-乙酰化甘油单酯、硬脂酸、蜂蜡;酪蛋白、明胶、大豆蛋白、玉米醇溶蛋白-脂肪酸直链淀粉酯;玉米醇溶蛋白、白蛋白、酪蛋白、明胶、大豆蛋白-植物油;硝化纤维素-蜡;玉米醇溶蛋白/植物蜡-油叠层。
选择微生物和内部基质中的其他组分后丸的制备可以以任何合适的方式发生。有关片剂压制的技术和材料科学的现有技术状态的最近回顾在“Pharmaceutical Powder Compaction Technology”,Alderborn G和Nystrm C,编辑,Marcel Dekker,纽约(1996)中给出。
丸制备的一些原理步骤可通常包括步骤“混合、干燥、压制和包衣”。这些步骤的顺序可以根据常识进行改变。例如,上述顺序可修改为“混合、压制、干燥和包衣”。

如上面的段落所举例阐明的,根据本发明的丸的制备非常灵活。然而,优选在对压制的内部基质加包衣前不久或当时,内部基质具有相对低的水活度(aw),例如aw低于0.3,优选低于0.2,更优选低于0.15。
例如,通过混合所有组分制备微生物和其他组分的干燥混合物。然后,将混合物干燥到aw低于0.3,优选低于0.2,更优选低于0.15,最优选大约、等于或低于0.1。可能的干燥设备包括对流烘箱、带式干燥机、真空干燥机、流化床干燥机、旋转干燥机,这仅仅提及了一些。
在制备丸的方法中干燥的时刻并不关键。例如,如果使用轻微湿润的组分更易压制,那么干燥可在压制后发生。然而,上面指出的aw值优选在包衣之前达到,最终低aw值在具包衣的丸中得以保持。
加入到内部基质的预混物中的存活细胞的数目(cfu)取决于每天想要消费的丸量,而这又反过来取决于加入到食品中的丸的大小和/或丸的数目。其他变量还有食品中丸将最终具有的密度或存在量、干燥形式的微生物的浓度、每客食品的大小,这仅仅提及了一些。
技术人员在知道消费的益生生物的日剂量后可以被教导计算加入到混合物中的cfu数。
如果一粒丸旨在含有全部一天供给的所有益生生物,或者如果除了一粒丸外不再食用其他含有益生生物的食物,那么该丸优选含有益生生物的日剂量。在这种情况下,一粒丸含有约105到1014,优选106到1013,更优选107到1011cfu/天。
如果,备选地,预期的丸的日消费量为2到10粒丸/天,上面指出的每粒丸的cfu范围可以用相应的数目除。
有利地,计算加入的微生物的量,以便微生物的有效量将通过食用一份或两份,任选三份丸所加入的相应食品而被消费。
如果使用粘合剂、润滑剂和/或增塑剂,其可选自上面的列表。例如,可将0.15到20%,优选0.5到10%(按内部基质的总重量计算)的甘油喷雾到内部基质组分和益生生物制品的表面。
在任选加入粘合剂、润滑剂和/或增塑剂(其可以在上面的干燥步骤前已经被加入到预混物中)后,所得混合物可以例如在足够的压制压力下进行压制。通常,可以想到应该避免非常高的压力,例如实质上高于10000巴的压力,因为细菌可能被破坏。然而,(益生性)细菌,依赖于它们的状况(干燥的,湿润的,载体上)可以支持不同的压力。
压制压力的下限取决于内部基质的“压缩”性质。原则上,压制压力可根据下面的标准调节:通过压制得到具有合理的硬度(consistency)和/或稳定性的丸。
上限原则上不加以限定,但是如果食品将进行咀嚼,那么压制压力优选以压制的丸不会太硬以避免损伤牙齿的方式来选择。
除了压制压力可以从宽范围选择外,还发现压力可以在100到10000巴的范围,优选200到9000巴,更优选300到8000巴。例如,可以在600到8000巴的压力下进行压制。上面指出的压力强烈依赖于微生物的状况。如果它们仍然是湿的,高于4500巴的压力可能破坏它们。然而,如果益生生物以孢子的形式存在,那么可应用高得多的压力。
可通过任何适宜的压制设备完成压制。实例为例如旋转压片机、离心压片机、单和双冲压片机、单和多层片压片机、压块机、制丸机。
丸可以具有上面指出的体积并且可以是任何适宜的、恰当的或想要的形状。例如,它们的形状可为球体、立方体、锥体、片或任何经典的、修改的或复杂的三维形状。此外,它们可具有与丸所加入的食品相对应的形状。例如,如果丸被加入到狗的宠物食品中,那么它们可具有骨头、动物、猫的形状或者与食品良好匹配的其他形状。
根据伴随微生物的组分,压制混合物的一般方法可被自由修改、补充和调整。
如果压制后基质的aw还不足够低(见上面给出的值),应该在随后包衣步骤(见上面)前进行干燥步骤。
然后,含有内部基质的压制丸可被包衣以进一步保护微生物免受随后食品贮存期间吸水造成的有害影响。可以通过任何适宜的包衣技术,例如,喷雾、热熔或溶剂包衣设备、流化床包衣机、鼓式包衣机或锅包衣机(仅仅提及一些)进行包衣。用如已经例举的优选食品级的防潮屏障包被丸。
优选地,包衣的量可为未包衣的丸的2到30%,优选5到20%,更优选8到18%。
为了本发明的目的可以理解所提到的包衣方法可在一步或多步中进行,并且“防潮屏障”指一种化合物或多种化合物的混合物的单层或者一种或多种具有所述屏障性质的化合物的多层。
由于包衣、内部基质的大多数或所有组分的干燥以及压制,丸的低aw可长期保持。
此后,欲应用益生生物的食品可补加足够量的根据本发明的丸。食品可具有显著高于丸aw的水分含量。例如,丸可以被加入到aw≥0.2,≥0.4,≥0.5或者甚至≥0.6的食品中,仍可以得到长储存时间内令人惊奇的高生存力。
食品可以是希望加入益生生物的有益功能的任何食品。例如,其可以是宠物食品,包括治疗品。然而,其也可以是打算供给任何动物的任何食物。例如,食品可以是颗粒食物或食物成分,如某些半干的宠物食物,早餐谷物、早餐薄片、早餐油炸马铃薯片或早餐酥皮点心、点心、薄片、调味液、饼干、糖果、甜食、巧克力、方条形食物、穆兹利(muesli)、片或丸形式的速溶饮料、肉羹小立方、片或丸形式的速溶汤和调味料、口服化妆品。当然,食品可以是例如,用颗粒成分制造的食品,如一些方条形食品,其由压制的颗粒成分组成。
如上面所暗示的,将要加入食品中的丸的数目/重量取决于几种因素,其中包括(I)丸的cfu/g,(II)每客食品的大小,和(III)“有效剂量”,即,优选被消费以得到期望的效果的cfu的量。就许多动物而言,许多益生生物的有效日剂量为107到1010,例如108到109cfu/天/个动物。

在另一个实施例中,丸可以以1到70%,优选3到50%,更优选5到30%,最优选8到20%的量加入到食品中。这些百分数可按颗粒如宠物粗磨食品的重量或数量计。
下面给出的实施例仅仅用于举例阐明而决不应理解为对本申请的主题的限制。再次说明本发明的要点还在于可以使用无限制的各种食物成分形成丸的内部基质。除非特别指出,百分数和部分都按重量计。
实施例1:用于宠物食品的丸的制备
丸通过压制粉末基质制备并用提供高度防潮屏障的食品级组分包被。全部混合物含有菊苣面粉、麦芽糖糊精(DE2-6)和FRISKIES Vitality、通过商业途径可得到的狗的半湿润宠物食品、食品级粘合剂,和屎肠球菌菌株的干燥细菌制品。
首先,制备菊苣面粉(预混物的50%)和粉末状FRISKIES Vitality(预混合物的25%)的预混物。该预混物在对流烘箱中干燥至水活度接近0(aw<0.01),并将湿润麦芽糖糊精(aw约0.3,预混物的25%)混合入以完成预混物。
将甘油(预混物重量的3%)喷雾到预混物粉末的表面以塑化粉末颗粒的表面。
通过加入细菌制品完成混合物。
用单冲水力实验室压片机(Beckmann PT16)将混合物压制成圆柱状丸(直径:1cm,高约1cm),其具有轻微凸起的顶部和底部。压制压力为3吨/cm2。丸的水活度为25℃时0.084。
半数丸用基于脂肪的防潮屏障(Witocan 42/44 pastillen,Condea,法国)包被。通过将丸浸入屏障物质的熔化物(温度约50℃)而加上四层包衣。包衣的总量为未包衣的丸的约15%。

实施例2:暴露于潮湿后微生物的回收
将根据实施例1的包衣丸的稳定性与来自Cerbios-Pharma,Lugano,瑞士的(含有约5×10E+10cfu/g)微囊化的屎肠球菌NCIMB 10415(商品名LBC-ME10)的稳定性相比较。此微胶囊含有蔗糖核心上的益生菌株,该蔗糖核心然后用几层不明确的物质(食品级防潮屏障)包被,并且得到这些微胶囊的方法大部分是未知的。公知此微胶囊在半潮湿环境中保持长时间并且被认为是市场上现今可得到的最好的产品。
所以,将根据实施例1的包衣丸和微胶囊化的屎肠球菌NCIMB 10415暴露于30℃潮湿的环境(相对湿度70%)中60天。不同时间间隔后,取样并确定丸和微胶囊中所含有的屎肠球菌NCIMB 10415的存活细胞数。
在图2中,显示了两种样品中屎肠球菌SF68的回收率(最初细胞数的百分数)。
明显地,压制的丸比商业途径可得到的微胶囊表现更好,特别是储存20天后。此商业途径可得到的产品的回收率剧烈而持续的下降,而在根据本发明的丸中,微生物回收率的下降明显较慢。
实施例3:具有变化的内部基质组分、包衣和微生物的不同丸的制备
通过改变内部基质组分、包衣和细菌菌株制备根据本发明的丸。

包衣2:Sepifilm LP010(Seppic,法国)。
通过流化床包衣法使用Glatt GPGC-3包衣机给丸加包衣。Sepifilm作为15%水性溶液应用,粗磨食物(Kibble)块上sepifilm的总量=7-15%。喷雾压力1.5巴,干燥温度50℃,包衣和干燥时间45-90分钟。
结果和结论
当细菌菌株以颗粒形式存在时储存约30-60天后得到最佳回收。当应用于在高压制压力(>4吨/cm2)下压制的粗磨食物中时,较不推荐使用脆弱的细菌培养物(例如不加入糖类的冷冻干燥的制品),因为观察到存活力的高损失。粒状制品,例如在喷雾干燥的细菌制品中含有显著量的糖类的粒状制品,工作得非常好。
通常,所有内部基质工作良好,且程度类似,证明了选择内部基质的组分时可以有高度变化性。就防潮屏障而言,用基于脂肪的防潮屏障得到最佳结果,而其他类型的防潮屏障也可以提供满意的结果。
包衣需要正确应用,必须保证包衣的质量和完整性,因为包衣中的任何破裂或结构缺陷都将导致储藏期间粗磨食物快速吸收水分和伴随地微生物存活力的大量损失。
Claims (14)
1.包括压制的内部基质和至少一层包衣的丸,其中内部基质含有存活的微生物并且包衣含有防潮屏障,其特征在于丸具有至少0.02cm3的体积。
2.根据权利要求1的丸,其中包衣之前或之后不久,内部基质的特征是低于0.3的水活度。
3.根据权利要求1的丸,其中内部基质具有大于0.8g/cm3的包封密度。
4.根据权利要求1的丸,其含有105到1014个存活的微生物。
5.根据权利要求1的丸,其中内部基质还含有至少一种选自填充剂、功能性成分、润滑剂、增塑剂、食品级粘合剂和它们的组合的组分。
6.根据权利要求1的丸,其中内部基质还含有选自可消化淀粉、抗性淀粉、其他纤维、碾磨的谷类、干燥并碾磨的蔬菜、纤维素和纤维素衍生物、宠物食品、麦芽糖糊精、菊苣面粉、蛋白质分离物、酵母提取物和它们的混合物的成分。
7.根据权利要求1的丸,其中包衣含有食品级防潮屏障。
8.食品中的丸,其中丸为根据权利要求1到7任一项的丸并且丸的内部基质含有食品的至少一种组分。
9.益生生物递送系统,其含有根据权利要求1到8任一项的丸。
10.根据权利要求1到8任一项的丸作为潮湿、半潮湿或半干燥食品中益生生物的递送系统的用途。
11.获得可以向食品中增补存活微生物的丸的方法,其包括步骤:将微生物制品和其他组分混合,干燥混合物到低于0.3的aw,在压力下压制混合物以得到具有至少0.02cm3的体积的丸,并用防潮屏障给丸加包衣。
12.根据权利要求12的方法,其中其他组分包括至少部分食品成分。
13.含有根据权利要求1到7任一项的丸的食品,其中食品和丸的内部基质共有至少一种组分、成分或要素。
14.由至少两种类型的颗粒的混合物组成的颗粒食物、食物添加剂、增补剂或药品,其中所述一种颗粒为根据权利要求1到8任一项的益生生物丸。
