背景技术
醋是用各种酵后产生的酸味调味剂。酿醋主要使用大米或高梁为原料,适当的发酵可使含碳水化合物(糖、淀粉)的液体转化成酒精和二氧化碳,酒精再受某种细菌的作用与空气中氧结合即生成醋酸和水,所以,酿醋的过程就是使酒精进一步氧化成醋酸的过程。醋具有预防高脂血症、预防动脉硬化、消除疲劳、降低血压、生津开胃、促进人体能量代谢、帮助消化、美容、延缓衰老以及抗菌、杀菌等作用。
桑葚为桑科植物桑树的果穗,味甜汁多,是人们常食的水果之一。桑葚每年4-6月果实成熟时采收,去杂质,晒干或略蒸后晒干食用,也可用来泡酒。成熟的桑葚质油润,酸甜适口,以个大、肉厚、色紫红、糖分足者为佳。桑葚果实中含有丰富的活性蛋白、维生素、氨基酸、胡萝卜素、矿物质、白藜芦醇、花青素等成份,营养是苹果的5~6倍,是葡萄的4倍,具有多种功效,被医学界誉为“21世纪的最佳保健果品”。桑葚中的脂肪酸具有分解脂肪、降低血脂,防止血管硬化等作用;桑葚含有乌发素,能使头发变的黑而亮泽;桑葚有改善皮肤血液供应,营养肌肤,使皮肤白嫩及乌发等作用,并能延缓衰老;桑葚具有免疫促进作用,可以防癌抗癌;桑葚主入肝肾,善滋阴养血、生津润燥,适于肝肾阴血不足及津亏消渴,肠燥等症;常食桑葚可以明目,缓解眼睛疲劳干涩的症状。
CN03135156.5公开了一种桑椹醋,由食用醋、桑椹、蜂蜜按照20∶0.3-10∶0.3-6的比例配制而成,将桑椹洗净破碎后,榨汁过滤,取滤液与食用醋和蜂蜜混匀,灭菌、装罐即可。该桑椹醋虽能提高人体素质和免疫功能,尤其对化学性肝损伤具有很好的保护作用,但是该桑椹醋仅结合了食用醋和桑椹的保健功能,其风味和口感仍以食醋为主,不能作为醋饮料直接饮用,并且该保健醋虽然增加了桑椹的保健效果,但是其保健功能仍相对单一,不能满足人们的保健需求。

纯粮酿造食醋本身具有预防高脂血症、预防动脉硬化、消除疲劳、降低血压、生津开胃、促进人体能量代谢、帮助消化、美容、延缓衰老以及抗菌、杀菌等功效,桑葚原汁中含有丰富的葡萄糖、果糖、蛋白质、脂类、醇类、挥发油、芦丁、胡萝卜素、多种氨基酸、维生素以及锌、锰等多种微量元素。枸杞液的主要成分则为枸杞多糖、甜菜碱和枸杞色素。本发明由纯粮酿造食醋、桑葚原汁和枸杞液配制而成,枸杞液中的枸杞多糖具有促进免疫、抗衰老、抗肿瘤、清除自由基、抗疲劳、抗辐射等作用,可增强纯粮酿造食醋和桑葚的美容及延缓衰老的功效,甜菜碱则可辅助桑葚中的脂肪酸分解脂肪,促进脂质代谢,而枸杞色素则协同纯粮酿造食醋、桑葚进一步提高人体免疫功能、预防和抑制肿瘤及预防动脉粥样硬化。此外,枸杞本身养肝、滋肾、润肺、明目,桑葚主入肝肾,善滋阴养血、生津润燥,枸杞和桑葚配合,可有效缓解肝肾阴血不足、津亏消渴,肠燥以及眼睛疲劳干涩等症状。
本发明通过添加罗汉果苷、木糖醇和纽甜进行甜度调节,罗汉果苷的甜度为蔗糖的300倍,其热量为零,木糖醇是人体糖类代谢的正常中间体,甜度相当于蔗糖,热量相当于葡萄糖,纽甜的甜度比蔗糖高7000~13000倍,比阿斯巴甜高30~60倍,热量几乎为零。通过三种甜味剂的添加,保证了桑葚果蔬保健醋饮料的甜度和口感。本发明还添加了酱酒,即酱香型白酒,具有酱香突出且香而不艳,低而不淡、酒体醇厚、幽雅细腻、回味悠长、空杯留香持久等特点,酱酒会与醋中的有机酸进行酯化反应,生成酯类物质,即沉香物质,使得本桑葚果蔬保健醋饮料香气丰满、浓郁且持久,风味独特,解决了现有桑葚醋风味、口感差的问题,可作为醋饮料直接饮用。酱酒优选茅台酱酒,茅台酱酒本身含有较多的沉香物质,并且氨基酸种类丰富,富含维生素和微量元素,香味持久。
值得一提的是,由于桑葚含淀粉多,即糖量高,糖尿病人不宜食用含有糖分的食物,所以应忌食桑葚及含桑葚的饮料,而本发明一方面桑葚原汁的含量较低,另一方面,罗汉果苷具有降血糖作用,木糖醇可维持血糖正常水平,纽甜则不会引起血糖波动,因此,糖尿病人可放心饮用。并且,罗汉果苷还具有清热润肺镇咳、润肠通便的功效,木糖醇为人体提供能量,合成糖元,减少脂肪和肝组织中蛋白质的消耗,使肝脏受到保护和修复,减少人体内有害酮体的产生,不会因食用而为发胖忧虑,木糖醇和纽甜都有助于防止龋齿。
本发明还添加了果蔬添加剂、蜂蜜和富锶水,果蔬中含有人体必需的维生素、无机盐、生物酶以及植物纤维等,蜂蜜可促进代谢、改善便秘、平衡血糖,蜂蜜中的葡萄糖和果糖不需要经过人体消化,能够直接被人体肠壁细胞吸收利用,因此,不会加重胃肠负担,蜂蜜中还含有多种维生素、有机酸、矿物质和酶等,果蔬和蜂蜜可进一步丰富本桑葚果蔬保健醋饮料的保健功能。锶是人体内必需的一种微量元素,人体一旦缺乏锶,将会引起体内代谢紊乱,同时会出现肢体乏力、出虚汗、龋齿、骨骼发育迟缓,还会引起骨质疏松、增大心肺动脉的患病率等严重后果。锶是一种弱碱性微量元素,人体适量补充锶,可增加体内的碱性元素,中和酸性体质,从而改善人体的亚健康状态,锶还具有抗氧化防衰老的作用,还可以减少肝伤,具有解酒、醒酒的作用,通过添加富锶水,使得在饮用本桑葚果蔬保健醋饮料的同时为人体补充锶元素,调整人体酸碱平衡。

进一步地,纯粮酿造食醋的酿造方法为:
(1)制备药曲:将麦麸、薏米、赤小豆和中草药材混合,加水搅拌均匀后浸泡1-2h;取浸泡后的原料在100-110℃下蒸煮3-5h,冷却至室温,获得蒸煮原料;将蒸煮原料放入粉碎机内粉碎至粉状,然后制成砖状曲坯,送入培曲室内于28-30℃下培养3-5天后,得到药曲;药曲经磨粉、过筛,得到曲粉;其中,麦麸、薏米、赤小豆和中草药材的质量比为8-12:2-3:2-3:8-15;
(2)蒸料:将质量比为1:1的高粱和大米混合后加水浸泡12-24h,然后将浸泡好的高粱和大米在100-110℃下蒸煮4-6h;
(3)酒精发酵:将步骤(2)蒸好的原料冷却至35-40℃,加入质量为高粱、大米总质量1-2倍的水搅拌均匀,得到混合物,然后加入质量为混合物质量5-8%的曲粉,混合均匀后在28-35℃下发酵3-5天,得到酒醅;
(4)醋酸发酵:将麦麸、大糠和酒醅按照3:1-2:4-6的质量比放入酿造缸内混合均匀,然后加入质量分数为0.008-0.01%的醋酸菌,搅拌均匀,密封酿造,酿造期间,温度控制在38-40℃,每隔1-1.5天翻料一次,10-15天后即得醋醅;
(5)淋醋、陈酿、灭菌即得纯粮酿造食醋,酸度值为4-6度。
进一步地,步骤(1)中,中草药材包括白叩、砂仁、杜仲、五味子、当归、党参、三七、薄荷、枸杞、黄精、白芷、沙参、茯苓、陈皮、肉桂、桂圆肉、川穹、五加皮、山楂、乌梅、南星、半夏、杏仁、姜黄、黄芪、栀子、甘草、麦芽、独活、藿香、紫苏、柴胡、公丁香和白芍中的一种或多种。
现有醋饮料为增强保健功能,通常会在醋饮料中直接添加多种中草药材,这些中草药材气味重,会严重影响醋饮料的口感,而本发明在酿造食醋时,首先采用多种中草药材制备成药曲,然后利用药曲进行酒精发酵,所制得的纯粮酿造食醋含有中草药材的有效成分,同时不会存在药味,最后再通过后续添加酱酒形成香气浓郁、风味独特的保健醋饮料,其保健功能也更加丰富。
一种桑葚果蔬保健醋饮料的制备方法,包括以下步骤:
(1)取新鲜桑葚和枸杞分别洗净后破碎榨汁、澄清,取上清液得桑葚原汁和枸杞液;将果蔬洗净后,去皮去核,破碎榨汁、澄清,取上清液得果蔬添加剂;
(2)将桑葚原汁、果蔬添加剂和枸杞液加入纯粮酿造食醋中浸泡2-5h,获得混合液;
(3)向步骤(2)的混合液中加入罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、苯甲酸钠或者山梨酸钾,搅拌均匀后过滤,经灌装、高温灭菌、冷却即得桑葚果蔬保健醋饮料,酸度值为1.5-3。
进一步地,步骤(1)中,取汁后的残渣经纯粮酿造食醋浸泡后加工成粉末,并封装为胶囊。
现有果醋饮料制备过程中,通常是先对果汁进行发酵,获得果醋,然后再对果醋进行调味,但是对果汁进行发酵会使水果中的营养成分在发酵过程中被破坏,还会在发酵时产生醛类、杂油醇、和高级醇等有害物质,而本发明直接将桑葚原汁、枸杞液和果蔬添加剂加入纯粮酿造食醋中浸泡,使其中的营养物质溶出,完整的保留了桑葚、果蔬、枸杞中的天然营养成分,有利于人体吸收。此外,现有技术中,取汁后的残渣一般都会倒掉,而本发明取汁后的残渣经纯粮酿造食醋浸泡后加工成粉末,并封装为富含纤维素、生物酶的胶囊,资源可得到有效利用,经济效益高。
综上所述,由于采用了上述技术方案,本发明的有益效果是:
1.本发明通过添加罗汉果苷、木糖醇和纽甜进行甜度调节,并添加酱酒进行风味调节,使得本桑葚果蔬保健醋饮料口感佳、香气丰满、浓郁且持久,风味独特,解决了现有桑葚醋风味、口感差的问题,可作为醋饮料直接饮用;
2.本发明除了具有桑葚的保健效果外,还具有果蔬、枸杞和蜂蜜的保健效果,保健功能丰富,保健效果佳;
3.本发明还可适用于糖尿病人饮用,适用范围广;
4.本发明由于添加有富锶水,可为人体补充锶,调整人体酸碱平衡,改善人体亚健康状态;
5.本发明在纯粮酿造食醋的酿造过程中,采用中草药材制备药曲并发酵,使得本桑葚果蔬保健醋饮料还含有中草药成分,保健效果更佳,并且,中草药成分不会影响本发明的风味;
6.本发明直接将桑葚原汁、枸杞液和果蔬添加剂加入纯粮酿造食醋中浸泡,使其中的营养物质溶出,完整的保留了桑葚、果蔬、枸杞中的天然营养成分,有利于人体吸收;

实施例1
纯粮酿造食醋的酿造方法为:
(1)制备药曲:将麦麸、薏米、赤小豆和中草药材混合,中草药材按质量分数计,包括20%白叩、15%砂仁、15%杜仲、12%五味子、10%当归、10%党参、5%陈皮、5%肉桂、3%山楂、3%乌梅和2%甘草,加水搅拌均匀后浸泡1.5h;取浸泡后的原料在100℃下蒸煮5h,冷却至室温,获得蒸煮原料;将蒸煮原料放入粉碎机内粉碎至粉状,然后制成砖状曲坯,送入培曲室内于28-30℃下培养5天后,得到药曲;药曲经磨粉、过筛,得到曲粉;其中,麦麸、薏米、赤小豆和中草药材的质量比为8:2:3:8;
(2)蒸料:将质量比为1:1的高粱和大米混合后加水浸泡18h,然后将浸泡好的高粱和大米在110℃下蒸煮5h;
(3)酒精发酵:将步骤(2)蒸好的原料冷却至35-40℃,加入质量为高粱、大米总质量1.5倍的水搅拌均匀,得到混合物,然后加入质量为混合物质量6%的曲粉,混合均匀后在30-35℃下发酵3天,得到酒醅;
(4)醋酸发酵:将麦麸、大糠和酒醅按照3:2:4的质量比放入酿造缸内混合均匀,然后加入质量分数为0.01%的醋酸菌,搅拌均匀,密封酿造,酿造期间,温度控制在38-40℃,每隔1.5天翻料一次,15天后即得醋醅;
(5)淋醋、陈酿、灭菌即得纯粮酿造食醋,酸度值为4.5度。
实施例2
纯粮酿造食醋的酿造方法为:
(1)制备药曲:将麦麸、薏米、赤小豆和中草药材混合,中草药材按质量分数计,包括20%当归、20%党参、15%三七、15%川穹、10%枸杞、6%黄精、4%桂圆肉、3%五加皮、2%乌梅、2%杏仁、1%姜黄、1%栀子、1%薄荷,加水搅拌均匀后浸泡2h;取浸泡后的原料在110℃下蒸煮3.5h,冷却至室温,获得蒸煮原料;将蒸煮原料放入粉碎机内粉碎至粉状,然后制成砖状曲坯,送入培曲室内于28-30℃下培养5天后,得到药曲;药曲经磨粉、过筛,得到曲粉;其中,麦麸、薏米、赤小豆和中草药材的质量比为12:3:2:10;
(2)蒸料:将质量比为1:1的高粱和大米混合后加水浸泡24h,然后将浸泡好的高粱和大米在105℃下蒸煮6h;
(3)酒精发酵:将步骤(2)蒸好的原料冷却至35-40℃,加入质量为高粱、大米总质量2倍的水搅拌均匀,得到混合物,然后加入质量为混合物质量8%的曲粉,混合均匀后在30-35℃下发酵5天,得到酒醅;
(4)醋酸发酵:将麦麸、大糠和酒醅按照3:2:6的质量比放入酿造缸内混合均匀,然后加入质量分数为0.01%的醋酸菌,搅拌均匀,密封酿造,酿造期间,温度控制在38-40℃,每隔1天翻料一次,12天后即得醋醅;
(5)淋醋、陈酿、灭菌即得纯粮酿造食醋,酸度值为5度。
实施例3
一种桑葚果蔬保健醋饮料,由以下原料制备而成:由实施例1制备的纯粮酿造食醋1000ml、桑葚原汁130ml、枸杞液10ml、罗汉果苷1g、木糖醇20g、茅台酱酒0.5ml、蜂蜜50ml、纽甜0.03g、富锶水1200ml、苯甲酸钠0.5g。
一种桑葚果蔬保健醋饮料的制备方法,包括以下步骤:
(1)取新鲜桑葚和枸杞分别洗净后破碎榨汁、澄清,取上清液得桑葚原汁和枸杞液;
(2)将桑葚原汁和枸杞液加入纯粮酿造食醋中浸泡4h,获得混合液;

本实施例与实施例12的不同之处仅在于:纯粮酿造食醋1200ml、桑葚原汁150ml、胡萝卜汁120ml、芹菜汁60ml、青瓜汁70ml、枸杞液15ml、罗汉果苷1g、木糖醇23g、茅台酱酒1ml、蜂蜜60ml、纽甜0.05g、富锶水1500ml、山梨酸钾0.8g。
由本实施例制备的桑葚果蔬保健醋饮料口感佳、香气浓郁,具有开胃健脾、提高免疫能力、润肠排毒、延年益寿、降低三高、排便通肠、抗癌、促进新陈代谢等功效,保健功能丰富,保健效果佳。
实施例14
本实施例与实施例12的不同之处仅在于:纯粮酿造食醋800ml、桑葚原汁50ml、胡萝卜汁80ml、芹菜汁60ml、青瓜汁60ml、枸杞液8ml、罗汉果苷0.5g、木糖醇15g、茅台酱酒0.4ml、蜂蜜45ml、纽甜0.02g、富锶水1000ml、山梨酸钾0.5g。
由本实施例制备的桑葚果蔬保健醋饮料口感佳、香气浓郁,具有开胃健脾、提高免疫能力、润肠排毒、延年益寿、降低三高、排便通肠、抗癌、促进新陈代谢等功效,保健功能丰富,保健效果佳。
本发明营养丰富,经指定食品检测机构检测,本发明含有17种氨基酸、多种维生素和微量元素,对人体无毒副作用,见表1、表2。

Claims (10)
1.一种桑葚果蔬保健醋饮料,其特征在于,由以下原料制备而成:纯粮酿造食醋、桑葚原汁、果蔬添加剂、枸杞液、罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、防腐剂,所述纯粮酿造食醋、桑葚原汁、果蔬添加剂、枸杞液、罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、防腐剂的配比为800-1200ml:50-150ml:0-250ml:8-15ml:0.5-1g:15-25g:0.3-1ml:45-60ml:0.02-0.05g:1000-1500ml:0.5-1g。
2.根据权利要求1所述的一种桑葚果蔬保健醋饮料,其特征在于,所述果蔬添加剂包括柠檬原汁、桂圆原汁、胡萝卜汁、芹菜汁和青瓜汁中的一种或多种。
3.根据权利要求1或2所述的一种桑葚果蔬保健醋饮料,其特征在于,所述果蔬添加剂为100-150ml柠檬原汁。
4.根据权利要求2所述的一种桑葚果蔬保健醋饮料,其特征在于,所述果蔬添加剂为100-150ml桂圆原汁。
5.根据权利要求4所述的一种桑葚果蔬保健醋饮料,其特征在于,所述桂圆原汁中添加有1-2g玫瑰液。
6.根据权利要求1或2所述的一种桑葚果蔬保健醋饮料,其特征在于,所述果蔬添加剂为80-120ml胡萝卜汁、40-60ml芹菜汁和80-120ml青瓜汁的混合汁液。
7.根据权利要求1所述的一种桑葚果蔬保健醋饮料,其特征在于,所述纯粮酿造食醋的酿造方法为:
(1)制备药曲:将麦麸、薏米、赤小豆和中草药材混合,加水搅拌均匀后浸泡1-2h;取浸泡后的原料在100-110℃下蒸煮3-5h,冷却至室温,获得蒸煮原料;将蒸煮原料放入粉碎机内粉碎至粉状,然后制成砖状曲坯,送入培曲室内于28-30℃下培养3-5天后,得到药曲;药曲经磨粉、过筛,得到曲粉;其中,麦麸、薏米、赤小豆和中草药材的质量比为8-12:2-3:2-3:8-15;
(2)蒸料:将质量比为1:1的高粱和大米混合后加水浸泡12-24h,然后将浸泡好的高粱和大米在100-110℃下蒸煮4-6h;
(3)酒精发酵:将步骤(2)蒸好的原料冷却至35-40℃,加入质量为高粱、大米总质量1-2倍的水搅拌均匀,得到混合物,然后加入质量为混合物质量5-8%的曲粉,混合均匀后在28-35℃下发酵3-5天,得到酒醅;
(4)醋酸发酵:将麦麸、大糠和酒醅按照3:1-2:4-6的质量比放入酿造缸内混合均匀,然后加入质量分数为0.008-0.01%的醋酸菌,搅拌均匀,密封酿造,酿造期间,温度控制在38-40℃,每隔1-1.5天翻料一次,10-15天后即得醋醅;
(5)淋醋、陈酿、灭菌即得纯粮酿造食醋,酸度值为4-6度。
8.根据权利要求7所述的一种桑葚果蔬保健醋饮料,其特征在于,所述步骤(1)中,中草药材包括白叩、砂仁、杜仲、五味子、当归、党参、三七、薄荷、枸杞、黄精、白芷、沙参、茯苓、陈皮、肉桂、桂圆肉、川穹、五加皮、山楂、乌梅、南星、半夏、杏仁、姜黄、黄芪、栀子、甘草、麦芽、独活、藿香、紫苏、柴胡、公丁香和白芍中的一种或多种。
9.权利要求1-8所述一种桑葚果蔬保健醋饮料的制备方法,其特征在于,包括以下步骤:
(1)取新鲜桑葚和枸杞分别洗净后破碎榨汁、澄清,取上清液得桑葚原汁和枸杞液;将果蔬洗净后,去皮去核,破碎榨汁、澄清,取上清液得果蔬添加剂;
(2)将桑葚原汁、果蔬添加剂和枸杞液加入纯粮酿造食醋中浸泡2-5h,获得混合液;
(3)向步骤(2)的混合液中加入罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、苯甲酸钠或者山梨酸钾,搅拌均匀后过滤,经灌装、高温灭菌、冷却即得桑葚果蔬保健醋饮料,酸度值为1.5-3。
10.根据权利要求9所述一种桑葚果蔬保健醋饮料的制备方法,其特征在于,所述步骤(1)中,取汁后的残渣经纯粮酿造食醋浸泡后加工成粉末,并封装为胶囊。
