本发明公开了一种祛湿减肥保健醋饮料及其制备方法,由以下原料制备而成:纯粮酿造食醋、桑葚原汁、桂圆原汁、赤小豆、薏仁、茯苓、白术、罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、防腐剂,所述纯粮酿造食醋、桑葚原汁、桂圆原汁、赤小豆、薏仁、茯苓、白术、罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、防腐剂的配比为800‑1200ml:80‑150ml:10‑30ml:80‑150g:40‑60g:10‑15g:10‑15g:0.5‑1g:15‑25g:0.5‑1ml:30‑60ml:0.02‑0.05g:1000‑1500ml:0.5‑1g。本发明具有较强的祛湿、减肥功效,并且保健功能丰富,保健效果佳。

本发明属于醋饮料技术领域,具体涉及一种祛湿减肥保健醋饮料及其制备方法。
背景技术
醋是用各种酵后产生的酸味调味剂。酿醋主要使用大米或高梁为原料,适当的发酵可使含碳水化合物(糖、淀粉)的液体转化成酒精和二氧化碳,酒精再受某种细菌的作用与空气中氧结合即生成醋酸和水,所以,酿醋的过程就是使酒精进一步氧化成醋酸的过程。醋具有预防高脂血症、预防动脉硬化、消除疲劳、降低血压、生津开胃、促进人体能量代谢、帮助消化、美容、延缓衰老以及抗菌、杀菌等作用。
保健醋是指一些包装精美、瓶体颀长、五颜六色以果汁和陈醋为原料发酵制成的醋饮料,除此以外,还有用糯米、首乌、珍珠粉、花粉等制成的养颜醋、美人醋、贵妃醋等。由于添加了不同的果蔬,保健醋的营养作用也不尽相同,苹果醋可补心益气、生津止咳、健胃和脾,番茄醋则能清热解毒、平肝、解暑、止渴,芦荟醋有抑制心律、扩张血管、增长红血球以及抗癌等效果。
湿在中医里又叫“阴邪”,而脾为至阴之脏,喜燥恶湿,所以脾气在七八月的时候最旺盛。如果长夏湿气过盛,就容易损伤脾脏。同时,脾主运化水液,它的特点是阳气易衰,阴气易盛,湿邪侵犯人体后最易伤害脾阳,而脾阳的虚弱也进一步助长了湿邪的侵入。体内有湿是现代人的通病,而湿邪又是造成现代各种慢性、顽固性疾病的根本。肥胖是人体内脂肪积聚过多所致的现象,肥胖不仅影响形体美,而且给生活带来不便,肥胖还易引发冠心病、高血压和肝胆病变,易患内分泌和代谢性疾病,易引起多种并发症,加速衰老和死亡。最健康的减肥方式是通过运动使脂肪燃烧,但若体内聚集有湿气,则会阻止脂肪,因此减肥的同时还应祛湿。
食醋具有减肥、杀菌、防腐、降血压、降胆固醇、软化血管、消除疲劳、助消化、提神醒脑、延缓衰老等作用。现代医学研究证实,食醋能加速体内糖的代谢和脂肪的分解,从而达到减肥的目的,因此,食醋成为了肥胖人士或预防肥胖症发生的爱美人士的首选食品之一。尽管食醋具有一定的减肥作用,但其减肥功效有限,并且不具备祛湿的功效。

本发明的目的在于:针对上述现有保健醋减肥功效差,并且不具备祛湿功效的问题,本发明提供一种祛湿减肥保健醋饮料及其制备方法。
本发明采用的技术方案如下:
一种祛湿减肥保健醋饮料,由以下原料制备而成:纯粮酿造食醋、桑葚原汁、桂圆原汁、赤小豆、薏仁、茯苓、白术、罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、防腐剂,所述纯粮酿造食醋、桑葚原汁、桂圆原汁、赤小豆、薏仁、茯苓、白术、罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、防腐剂的配比为800-1200ml:80-150ml:10-30ml:80-150g:40-60g:10-15g:10-15g:0.5-1g:15-25g:0.5-1ml:30-60ml:0.02-0.05g:1000-1500ml:0.5-1g。
进一步地,纯粮酿造食醋、桑葚原汁、桂圆原汁、赤小豆、薏仁、茯苓、白术、罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、防腐剂的配比为1000ml:100ml:10ml:100g:50g:10g:10g:1g:20g:0.5ml:50ml:0.03g:1200ml:0.5g。
纯粮酿造食醋本身具有预防高脂血症、预防动脉硬化、消除疲劳、降低血压、生津开胃、促进人体能量代谢、帮助消化、美容、延缓衰老以及抗菌、杀菌等功效,桑椹原汁中含有丰富的葡萄糖、果糖、蛋白质、脂类、醇类、挥发油、芦丁、胡萝卜素、多种氨基酸、维生素以及锌、锰等多种微量元素。桑椹含有乌发素,能使头发变的黑而亮泽;桑椹有改善皮肤血液供应,营养肌肤,使皮肤白嫩及乌发等作用,并能延缓衰老;桑椹具有免疫促进作用,可以防癌抗癌;桑椹主入肝肾,善滋阴养血、生津润燥,适于肝肾阴血不足及津亏消渴,肠燥等症;常食桑椹可以明目,缓解眼睛疲劳干涩的症状。桂圆性温味甘,益心脾,有补血安神、健脑益智、补养心脾的功效,可用于心脾虚损、气血不足所致的失眠、健忘、惊悸、眩晕等症。本发明在纯粮酿造食醋中添加桑椹原汁和桂圆原汁,保健功能丰富,保健效果佳。
赤小豆含有蛋白质、脂肪、碳水化合物、粗纤维、钙、磷、铁、维生素B1、维生素B2、皂苷等,性平,味甘、酸,能利湿消肿、清热退黄、解毒排脓。赤小豆具有利尿作用,对心脏病和肾病、水肿患者均有益,赤小豆还具有良好的润肠通便、降血压、降血脂、调节血糖、预防结石、健美减肥的作用。薏仁含氨基酸、薏苡素、薏苡酯、三萜化合物、蛋白质、脂肪、碳水化合物、维生素B1等,性味甘淡微寒,有利水消肿、健脾去湿、舒筋除痹、清热排脓等功效,茯苓味甘、淡,性平,归心、肺、脾、肾经,具有利水渗湿、健脾、宁心的功效,白术味苦,甘,性温,归脾、胃经,具有除湿益燥、和中益气、利尿、止汗等功效。本发明添加了四种具有祛湿功效的赤小豆、薏仁、茯苓、白术,使得制备的保健醋饮料具有较强的祛湿功效,并且桑椹中的脂肪酸具有分解脂肪的作用,可与食醋协同作用,加速体内糖的代谢和脂肪的分解,增强纯粮酿造食醋的减肥功效,赤小豆、薏仁可解毒排脓、消水肿,有利于进一步增强减肥功效。此外,本祛湿减肥保健醋饮料还具有增强机体免疫力、抗肿瘤、抗菌消炎、排毒、健脾、扶阳、抗癌等功效,保健功能更丰富。
本发明通过添加罗汉果苷、木糖醇和纽甜进行甜度调节,罗汉果苷的甜度为蔗糖的300倍,其热量为零,木糖醇是人体糖类代谢的正常中间体,甜度相当于蔗糖,热量相当于葡萄糖,纽甜的甜度比蔗糖高7000~13000倍,比阿斯巴甜高30~60倍,热量几乎为零。通过三种甜味剂的添加,保证了本祛湿减肥保健醋饮料的甜度和口感。本发明还添加了酱酒,即酱香型白酒,具有酱香突出且香而不艳,低而不淡、酒体醇厚、幽雅细腻、回味悠长、空杯留香持久等特点,酱酒会与醋中的有机酸进行酯化反应,生成酯类物质,即沉香物质,使得本祛湿减肥保健醋饮料香气丰满、浓郁且持久,可有效避免赤小豆、薏仁等中药材添加影响该保健醋饮料的风味。酱酒优选茅台酱酒,茅台酱酒本身含有较多的沉香物质,并且氨基酸种类丰富,富含维生素和微量元素,香味持久。
值得一提的是,由于桑葚含淀粉多,即糖量高,糖尿病人不宜食用含有糖分的食物,所以应忌食桑葚及含桑椹的饮料,而本发明一方面桑椹原汁的含量较低,另一方面,赤小豆具有调节血糖的作用,薏仁、白术和罗汉果苷具有降血糖作用,木糖醇可维持血糖正常水平,纽甜则不会引起血糖波动,因此,糖尿病人可放心饮用。
本发明还添加了蜂蜜和富锶水,蜂蜜可促进代谢、改善便秘、平衡血糖,蜂蜜中的葡萄糖和果糖不需要经过人体消化,能够直接被人体肠壁细胞吸收利用,因此,不会加重胃肠负担,蜂蜜中还含有多种维生素、有机酸、矿物质和酶等,可进一步丰富本祛湿减肥保健醋饮料的保健功能。锶是人体内必需的一种微量元素,人体一旦缺乏锶,将会引起体内代谢紊乱,同时会出现肢体乏力、出虚汗、龋齿、骨骼发育迟缓,还会引起骨质疏松、增大心肺动脉的患病率等严重后果。锶是一种弱碱性微量元素,人体适量补充锶,可增加体内的碱性元素,中和酸性体质,从而改善人体的亚健康状态,锶还具有抗氧化防衰老的作用,还可以减少肝伤,具有解酒、醒酒的作用,通过添加富锶水,使得在饮用本祛湿减肥保健醋饮料的同时为人体补充锶元素,调整人体酸碱平衡。

(2)蒸料:将质量比为1:1的高粱和大米混合后加水浸泡12-24h,然后将浸泡好的高粱和大米在100-110℃下蒸煮4-6h;
(3)酒精发酵:将步骤(2)蒸好的原料冷却至35-40℃,加入质量为高粱、大米总质量1-2倍的水搅拌均匀,得到混合物,然后加入质量为混合物质量5-8%的曲粉,混合均匀后在28-35℃下发酵3-5天,得到酒醅;
(4)醋酸发酵:将麦麸、大糠和酒醅按照3:1-2:4-6的质量比放入酿造缸内混合均匀,然后加入质量分数为0.008-0.01%的醋酸菌,搅拌均匀,密封酿造,酿造期间,温度控制在38-40℃,每隔1-1.5天翻料一次,10-15天后即得醋醅;
(5)淋醋、陈酿、灭菌即得纯粮酿造食醋,酸度值为4-6度。
进一步地,所述步骤(1)中,中草药材包括白叩、砂仁、杜仲、五味子、当归、党参、三七、薄荷、枸杞、黄精、白芷、沙参、茯苓、陈皮、肉桂、桂圆肉、川穹、五加皮、山楂、乌梅、南星、半夏、杏仁、姜黄、黄芪、栀子、甘草、麦芽、独活、藿香、紫苏、柴胡、公丁香和白芍中的一种或多种。
本发明在酿造食醋时,首先采用多种中草药材制备成药曲,然后利用药曲进行酒精发酵,所制得的纯粮酿造食醋本身含有中草药材的有效成分,进一步增强了本发明的祛湿、减肥功效,同时也使本发明的保健功能更丰富。
一种祛湿减肥保健醋饮料的制备方法,包括以下步骤:
(1)将赤小豆和薏仁生炒或烘熟后与茯苓、白术一起粉碎至颗粒,然后加水熬煮1-2h,过滤,取中药提取液待用;
(2)取新鲜桑葚、桂圆洗净,桂圆去皮去核,然后破碎榨汁、澄清,取上清液得桑葚原汁、桂圆原汁;
(3)将步骤(1)和步骤(2)制得的中药提取液、桑葚原汁和桂圆原汁加入纯粮酿造食醋中浸泡2-5h,获得混合液;
(4)向步骤(3)中的混合液中加入罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、苯甲酸钠或者山梨酸钾,搅拌后过滤,经灌装、高温灭菌、冷却即得祛湿减肥保健醋饮料,酸度值为1.5-3。

现有保健醋饮料制备过程中,例如苹果醋、荔枝醋等,通常是先对果汁进行发酵,获得果醋,然后再对果醋进行调味,但是对果汁进行发酵会使水果中的营养成分在发酵过程中被破坏,还会在发酵时产生醛类、杂油醇、和高级醇等有害物质,而本发明直接将桑椹原汁、中药提取液加入纯粮酿造食醋中浸泡,使其中的营养物质溶出,完整的保留了桑椹、赤小豆、薏仁、茯苓、白术中的天然营养成分,有利于人体吸收。此外,现有技术中,取汁后的残渣一般都会倒掉,而本发明取汁后的果渣和中药残渣经纯粮酿造食醋浸泡后加工成粉末,并封装为富含纤维素、生物酶的胶囊,资源可得到有效利用,经济效益高。
综上所述,由于采用了上述技术方案,本发明的有益效果是:
1.本发明通过在纯粮酿造食醋中添加桑椹原汁、桂圆原汁、赤小豆、薏仁、茯苓、白术,使得制备的保健醋饮料具有较强的祛湿、减肥功效,同时还具有增强机体免疫力、抗肿瘤、抗菌消炎、排毒、健脾、扶阳、抗癌等功效,保健功能丰富,保健效果佳;
2.本发明通过添加罗汉果苷、木糖醇和纽甜进行甜度调节,并添加酱酒进行风味调节,使得本祛湿减肥保健醋饮料口感佳、香气丰满、浓郁且持久,风味独特,可有效避免中药材添加影响该保健醋饮料的风味;
3.本发明还可适用于糖尿病人饮用,适用范围广;
4.本发明由于添加有富锶水,可为人体补充锶,调整人体酸碱平衡,改善人体亚健康状态;
5.本发明在纯粮酿造食醋的酿造过程中,采用中草药材制备药曲并发酵,使得纯粮酿造食醋本身含有中草药成分,进一步增强了本发明的祛湿、减肥功效,同时也使本发明的保健功能更丰富,并且,中草药成分不会影响本发明的风味;
6.本发明直接将桑椹原汁、中药提取液加入纯粮酿造食醋中浸泡,使其中的营养物质溶出,完整的保留了桑椹、中药中的天然营养成分,有利于人体吸收;

实施例1
纯粮酿造食醋的酿造方法为:
(1)制备药曲:将麦麸、薏米、赤小豆和中草药材混合,中草药材按质量分数计,包括20%白叩、15%砂仁、15%杜仲、12%五味子、10%当归、10%党参、5%陈皮、5%肉桂、3%山楂、3%乌梅和2%甘草,加水搅拌均匀后浸泡1.5h;取浸泡后的原料在100℃下蒸煮5h,冷却至室温,获得蒸煮原料;将蒸煮原料放入粉碎机内粉碎至粉状,然后制成砖状曲坯,送入培曲室内于28-30℃下培养5天后,得到药曲;药曲经磨粉、过筛,得到曲粉;其中,麦麸、薏米、赤小豆和中草药材的质量比为8:2:3:8;
(2)蒸料:将质量比为1:1的高粱和大米混合后加水浸泡18h,然后将浸泡好的高粱和大米在110℃下蒸煮5h;
(3)酒精发酵:将步骤(2)蒸好的原料冷却至35-40℃,加入质量为高粱、大米总质量1.5倍的水搅拌均匀,得到混合物,然后加入质量为混合物质量6%的曲粉,混合均匀后在30-35℃下发酵3天,得到酒醅;
(4)醋酸发酵:将麦麸、大糠和酒醅按照3:2:4的质量比放入酿造缸内混合均匀,然后加入质量分数为0.01%的醋酸菌,搅拌均匀,密封酿造,酿造期间,温度控制在38-40℃,每隔1.5天翻料一次,15天后即得醋醅;
(5)淋醋、陈酿、灭菌即得纯粮酿造食醋,酸度值为4.5度。
实施例2
纯粮酿造食醋的酿造方法为:
(1)制备药曲:将麦麸、薏米、赤小豆和中草药材混合,中草药材按质量分数计,包括20%当归、20%党参、15%三七、15%川穹、10%枸杞、6%黄精、4%桂圆肉、3%五加皮、2%乌梅、2%杏仁、1%姜黄、1%栀子、1%薄荷,加水搅拌均匀后浸泡2h;取浸泡后的原料在110℃下蒸煮3.5h,冷却至室温,获得蒸煮原料;将蒸煮原料放入粉碎机内粉碎至粉状,然后制成砖状曲坯,送入培曲室内于28-30℃下培养5天后,得到药曲;药曲经磨粉、过筛,得到曲粉;其中,麦麸、薏米、赤小豆和中草药材的质量比为12:3:2:10;
(2)蒸料:将质量比为1:1的高粱和大米混合后加水浸泡24h,然后将浸泡好的高粱和大米在105℃下蒸煮6h;
(3)酒精发酵:将步骤(2)蒸好的原料冷却至35-40℃,加入质量为高粱、大米总质量2倍的水搅拌均匀,得到混合物,然后加入质量为混合物质量8%的曲粉,混合均匀后在30-35℃下发酵5天,得到酒醅;
(4)醋酸发酵:将麦麸、大糠和酒醅按照3:2:6的质量比放入酿造缸内混合均匀,然后加入质量分数为0.01%的醋酸菌,搅拌均匀,密封酿造,酿造期间,温度控制在38-40℃,每隔1天翻料一次,12天后即得醋醅;
(5)淋醋、陈酿、灭菌即得纯粮酿造食醋,酸度值为5度。
实施例3
一种祛湿减肥保健醋饮料,由以下原料制备而成:由实施例1制备的纯粮酿造食醋1000ml、桑葚原汁100ml、桂圆原汁10ml、赤小豆100g、薏仁50g、茯苓10g、白术10g、罗汉果苷1g、木糖醇20g、茅台酱酒0.5ml、蜂蜜50ml、纽甜0.03g、富锶水1200ml、苯甲酸钠0.5g。
一种祛湿减肥保健醋饮料的制备方法,包括以下步骤:
(1)将赤小豆和薏仁生炒或烘熟后与茯苓、白术一起粉碎至颗粒,然后加水1000ml熬煮1.5h,过滤,取中药提取液待用;
(2)取新鲜桑葚、桂圆洗净,桂圆去皮去核,然后破碎榨汁、澄清,取上清液得桑葚原汁、桂圆原汁;

一种祛湿减肥保健醋饮料,由以下原料制备而成:由实施例1制备的纯粮酿造食醋1200ml、桑葚原汁120ml、桂圆原汁20ml、赤小豆120g、薏仁60g、茯苓12g、白术12g、罗汉果苷0.5g、木糖醇22g、茅台酱酒0.8ml、蜂蜜60ml、纽甜0.05g、富锶水1300ml、苯甲酸钠0.5g。

(1)将赤小豆和薏仁生炒或烘熟后与茯苓、白术一起粉碎至颗粒,然后加水1200ml熬煮2h,过滤,取中药提取液待用;

一种祛湿减肥保健醋饮料,由以下原料制备而成:由实施例2制备的纯粮酿造食醋900ml、桑葚原汁95ml、桂圆原汁30ml、赤小豆90g、薏仁45g、茯苓12g、白术12g、罗汉果苷0.8g、木糖醇18g、茅台酱酒0.6ml、蜂蜜40ml、纽甜0.02g、富锶水1000ml、山梨酸钾0.5g。
一种祛湿减肥保健醋饮料的制备方法,包括以下步骤:
(1)将赤小豆和薏仁生炒或烘熟后与茯苓、白术一起粉碎至颗粒,然后加水800ml熬煮1.5h,过滤,取中药提取液待用;
(2)取新鲜桑葚、桂圆洗净,桂圆去皮去核,然后破碎榨汁、澄清,取上清液得桑葚原汁、桂圆原汁;

本发明营养丰富,经指定食品检测机构检测,含有17种氨基酸、多种维生素和微量元素,对人体无毒副作用,见表1、表2。

1.一种祛湿减肥保健醋饮料,其特征在于,由以下原料制备而成:纯粮酿造食醋、桑葚原汁、桂圆原汁、赤小豆、薏仁、茯苓、白术、罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、防腐剂,所述纯粮酿造食醋、桑葚原汁、桂圆原汁、赤小豆、薏仁、茯苓、白术、罗汉果苷、木糖醇、酱酒、蜂蜜、纽甜、富锶水、防腐剂的配比为800-1200ml:80-150m l:10-30ml:80-150g:40-60g:10-15g:10-15g:0.5-1g:15-25g:0.5-1ml:30-60ml:0.02-0.05g:1000-1500ml:0.5-1g。
