中草药养生醋的制备工艺,采用多种中草药成分制备酒曲,然后采用多种中草药制备黄酒,再加入以中草药粮食辅料发酵成醋,最后添加抗氧化防腐抗菌增香的中草药进行后发酵。本发明采用多种中草药成分制备酒曲,然后采用多种中草药制备黄酒,最后以中草药做辅料发酵醋,中草药添加物后发酵可达到防腐抗氧化性能,并可增加香气,含有低聚异麦芽糖使口味微甜,而且双向调节血糖,促进肠道有益菌生长,实现了不添加防腐剂而长期不变质的药食同源醋,具有提高免疫力作用,双向调节血糖,降低血压,降低血液粘稠度,健脾补肾、滋阴润肺,强身健体,抗疲劳,增强人体免疫力的养生功效,适合亚健康人群长期饮用,特别适合消渴症,脾虚便溏者长期食用。

背景技术
世界卫生组织将机体无器质性病变,但是有一些功能改变的状态称为“第三状态”,我国称为“亚健康状态”。亚健康大多由于都市生活的不良饮食、生活习惯、环境污染,导致体内酵素大量缺失,体内毒素沉积,从而影响到肌体健康,为了改善人体机能,近年来保健产品不断推出,但是保健产品价格昂贵,是药三分毒,中医历来强调“药疗不如食疗养生”,以食物为药物具有以下几大突出的优点: 一、食疗养生不会产生任何毒副作用,而药物治病则不然,长期使用往往会产生各种副作用和依赖性,而且还可能对人体的某些健康造成影响; 二、这些食物都是我们日常生活中的平凡之物,价格低廉,有的甚至不花分文,让我们在日常用餐中便可达到治病的目的,这又是昂贵的医药费所无法比拟的; 三、食物为药还具有无痛苦的优点,让人们在享受美食的过程中祛除病痛,避免了打针、吃药,甚至手术之苦。传统的食醋都是以淀粉质粮食原料如大米、高粱、小米等为主料经发酵酿制而成,传统的食醋已经成为人们日常烹饪必备品,如何能实现食醋的药用保健功能成为当今养生保健行业的研究发展方向。

一种中草药养生醋的制备工艺,采用多种中草药成分制备酒曲,然后采用多种中草药制备黄酒,最后以中草药做辅料发酵醋,具体方法步骤如下:
(1)制备酒曲以早籼米粉,辣米草为主料加入陈皮,花椒,甘草和苍术,其中各组分使用的质量份比为:早籼米粉60~80份;辣米草15~30份;陈皮1~3份;花椒0~2份;甘草4~6份;苍术0~2份,然后用自然界中多种根霉,毛霉菌和酵母菌加盖蓬蒿低温繁殖,制成的酒药使用优质小麦和豌豆为主料加入苍术,甘草,大曲草,五味子,砂仁,杜仲,藿香,半夏和丹参中药高温制成大曲,其中各组分使用的质量份比为:小麦60~80份;豌豆10~15份;苍术0~2份;甘草4~6份;大曲草0~2份;五味子4~6份;砂仁0~2份;杜仲0~2份;藿香0~2份;半夏0~2份;丹参0~2份;
(2)制备黄酒:将制备好的大曲加入已经糊化的茯苓、葛根、淮山药、赤小豆、黄米、白凤豆、刀豆、三七、熟地、黄芪、山奈、黑桑葚、山楂、酸枣、黑芝麻、大枣、肉苁蓉、锁阳、枸杞和人参,然后发酵15天,制成中草药黄酒,其中各组分使用的质量份比为:茯苓4~6份;葛根4~6份;淮山药20~25份;赤小豆4~6份;黄米25~35份;白凤豆2~4份;刀豆2~4份;三七1~3份;熟地0~2份;黄芪0~2份;山奈0~2份;黑桑葚2~4份;山楂2~4份;酸枣2~4份;黑芝麻0~2份;大枣4~6份;肉苁蓉1~3份;锁阳1~3份;枸杞0~2份;人参0~2份;
(3)制醋:将制备好的中草药黄酒拌入麦麸,甘草,玉米芯和稻壳辅料,辅料各组分使用的质量份比为:麦麸15~25份;甘草15~25份;玉米芯25~35份;稻壳25~35份;在大缸内深层醋酸发酵20余天后,得到药醋粗产品,然后加入紫苏叶,牛膝草,大蒜洋葱,花椒,桂皮,丁香辣椒,多香果和月桂叶具有抗氧化防腐抗菌增香的中草药添加物,中草药添加物每个组分加入的质量均为药醋粗产品的1%,酯化反应45天,然后淋出得到中草药醋。
