本发明涉及一种营养面条,该营养面条由包括如下重量份数的原料制备得到:小麦粉80‑100份、南瓜粉4‑7份、绿豆粉4‑7份、黄豆粉4‑7份、红豆粉4‑7份、马铃薯粉4‑7份、番茄粉4‑7份、胡萝卜粉4‑7份、柠檬粉0.1‑0.3份、水30‑45份、食盐2‑3份、硬脂酰乳酸钙钠0.08‑0.1份。本发明配方营养科学,口感爽滑圆润、筋道,具有一定的降压、增强人体免疫力的功效。

本发明属于食品加工领域,尤其涉及一种营养面条。
背景技术
一直以来,我国粮食的消耗主要是以面食类为主,其中面条是人们喜爱的传统美食。随着人们生活水平和饮食质量的提高,人们对于养生的概念越来越深入,单纯的以小麦为主要营养物质的面条已经不能满足人们对于养生的追求。
发明内容
有鉴于此,本发明提出一种营养面条及其制备方法。
本发明采用的技术方案如下:
一种营养面条,该营养面条由包括如下重量份数的原料制备得到:
小麦粉80-100份、南瓜粉4-7份、绿豆粉4-7份、黄豆粉4-7份、红豆粉4-7份、马铃薯粉4-7份、番茄粉4-7份、胡萝卜粉4-7份、柠檬粉0.1-0.3份、水30-45份、食盐2-3份、硬脂酰乳酸钙钠0.08-0.1份。
优选的,该营养面条由包括如下重量份数的原料制备得到:
小麦粉80份、南瓜粉7份、绿豆粉7份、黄豆粉7份、红豆粉7份、马铃薯粉5份、番茄粉5份、胡萝卜粉5份、柠檬粉0.2份、水35份、食盐3份、硬脂酰乳酸钙钠0.08份。
本发明还提供了该营养面条的制备方法,包括如下步骤:
(1)按比例将硬脂酰乳酸钙钠、柠檬粉、食盐与水混合均匀制得和面剂;
(2)按比例将小麦粉、南瓜粉、绿豆粉、黄豆粉、红豆粉、马铃薯粉、番茄粉、胡萝卜粉、步骤(1)中得到的和面剂均放入和面机中和面10-20min制得面坯;
(3)将步骤(2)制得的面坯静置饧面,饧面时间为25-35min;
(4)静置后的面团经反复压延后切条;
(5)切好的面条烘干至含水量为9-11%;
(6)将烘干后的面条切断、称重、包装即得营养面条成品。
优选的,所述步骤(2)中和面机为真空和面机,真空度为-0.6MPa,转速为70-80r/min。
优选的,所述步骤(2)中和面时间为15min。
相对于现有技术,本发明所具有的有益效果:
本发明配方营养科学,比单纯的面粉面条其营养成分明显改善,营养价值大幅度提高,特别是对人体健康有明显作用的膳食纤维、蛋白质、氨基酸、维生素等。口感爽滑圆润、筋道,具有一定的增强人体免疫力的功效。
本发明中添加了硬脂酰乳酸钙钠,能够起到增筋、乳化、防老化、保鲜以及防止面条之间粘连等作用。
本发明中采用真空和面机进行和面,可显著改善面团质量,促进蛋白质网络结构的形成,除此之外,面团不仅表面光滑而且内部均匀细腻,并且和制的面团面筋值提高,弹性好。

下面结合具体实施例对本发明做详细说明。
实施例1
一种营养面条,该营养面条由包括如下重量份数的原料制备得到:
小麦粉80份、南瓜粉7份、绿豆粉7份、黄豆粉7份、红豆粉7份、马铃薯粉5份、番茄粉5份、胡萝卜粉5份、柠檬粉0.2份、水35份、食盐3份、硬脂酰乳酸钙钠0.08份。
该营养面条的制备方法,包括如下步骤:
(1)按比例将硬脂酰乳酸钙钠、柠檬粉、食盐与水混合均匀制得和面剂;
(2)按比例将小麦粉、南瓜粉、绿豆粉、黄豆粉、红豆粉、马铃薯粉、番茄粉、胡萝卜粉、步骤(1)中得到的和面剂均放入和面机中和面20min制得面坯;
(3)将步骤(2)制得的面坯静置饧面,饧面时间为35min;
(4)静置后的面团经反复压延后切条;
(5)切好的面条烘干至含水量为11%;
(6)将烘干后的面条切断、称重、包装即得营养面条成品。
所述步骤(2)中和面机为真空和面机,真空度为-0.6MPa,转速为80r/min。

1.一种营养面条,其特征在于:该营养面条由包括如下重量份数的原料制备得到:
小麦粉80-100份、南瓜粉4-7份、绿豆粉4-7份、黄豆粉4-7份、红豆粉4-7份、马铃薯粉4-7份、番茄粉4-7份、胡萝卜粉4-7份、柠檬粉0.1-0.3份、水30-45份、食盐2-3份、硬脂酰乳酸钙钠0.08-0.1份。
2.权利要求1所述营养面条的制备方法,其特征在于:包括如下步骤:
(1)按比例将硬脂酰乳酸钙钠、柠檬粉、食盐与水混合均匀制得和面剂;
(2)按比例将小麦粉、南瓜粉、绿豆粉、黄豆粉、红豆粉、马铃薯粉、番茄粉、胡萝卜粉、步骤(1)中得到的和面剂均放入和面机中和面10-20min制得面坯;
(3)将步骤(2)制得的面坯静置饧面,饧面时间为25-35min;
(4)静置后的面团经反复压延后切条;
(5)切好的面条烘干至含水量为9-11%;
(6)将烘干后的面条切断、称重、包装即得营养面条成品。
