背景技术
铁皮石斛(学名:Dendrobium officinale Kimura et Migo)为兰科石斛属下的一个种,又名仙斛兰韵、不死草、还魂草、紫萦仙株、吊兰、林兰、禁生、金钗花等。茎直立,肉质状肥厚,稍扁的圆柱形,长10~60厘米,粗达1.3厘米。
石斛是我国古文献中最早记载的兰科植物之一,两千多年以前的《神农本草经》中就有记载。千年以来它一直和灵芝、人参、冬虫夏草等一样被列为上品中药。其性味甘淡微咸,寒,归胃、肾,肺经。益胃生津,滋阴清热。用于阴伤津亏,口干烦渴,食少干呕,病后虚热,目暗不明。
石斛中含有多种矿物质:钾,钙,镁,铁,锰,锶,钛,等,而这些是人体需要的微量元素。石斛的主要活性成分为石斛多糖和石斛生物碱,还含有,菲类,酯类化合物。这些物质有不同程度的抗突变,抗肿瘤活性,如毛兰素。还有活血化瘀,抗血栓的作用的成分,如滨蒿内酯等。
目前市场上的石斛食用保健品还不多,且多为石斛茶等产品,营养成分单一,保健性不够好;饮用时还需要冲泡,不够方便;且口感较差。
有鉴于此,特提出本发明。

本发明的第一目的在于提供一种石斛保健饮料,所述的保健饮料具有营养成分丰富,各原料配伍合理,增效作用显著,口感涩后回甜,清香爽口,饮用方便等优点。

铁皮石斛是我国传统常用的名贵中药材。早在《神农本草经》和《本草纲目》上列为上品药材,历代本草及当今《中华人民共和国药典》中均有收载。铁皮石斛以茎入药,含有石斛碱、石解胺、石斛次碱、石斛宁等多种生物碱;味甘淡、性微寒;有滋阴养胃、清热生津功效,主要对消化系统、呼吸系统、心血管和眼科等疾病有明显的治疗作用。现代医学说明,石斛可促进血液循环,增强心脏功能;促进肠胃蠕动,增强消化功能;能显著提高人体内的SOP(超氧歧化酶)水平,降低LPO(过氧化脂质),起到显著的抗衰老作用。
葛根是豆科植物野葛的根茎,其性凉,味甘辛,具有发表解肌,升阳透疹,解热生津等功效。《本草纲目》载:“葛根,益阳生津,脾虚作渴者,非此不除”。主要成分为异黄酮类化合物,对治疗高血压脑病、冠心病,降血糖等病症有明显的疗效。此外,通过葛根深蒂固异黄酮对组织中的脂质过氧化产物LPO含量和超氧化物坡化酶SOD活性研究表明,葛根异黄酮类化合物有抗自由基作用。
滇橄榄是大戟科叶下珠属落叶灌木或小乔木,其果实微苦、甘、酸涩,具有润肺、生津、解毒、解除疲劳等作用。滇橄榄风味独特,先酸涩,后甘甜爽口,营养丰富,含有12种维生素、多种氨基酸、有机酸、蛋白质、糖类等。最新研究表明,滇橄榄果中含有大量的超氧化歧化酶(SOD),具有抗衰老、抗癌等功效。
本申请将铁皮石斛和葛根经过合理配伍,具有明显的增效作用,保健效果大为增强,而滇橄榄的加入,不仅丰富了营养物质的种类,而且改善了本申请提供的饮料的口感。
优选的,如上所述的石斛保健饮料,按照重量份数计,所述石斛保健饮料的原料组份还包括金银花0.1~0.3份。
金银花又名忍冬,名出目《本草纲目》,由于忍冬花初开为白色,后转为黄色,因此得名金银花,药材金银花为忍冬科忍冬属植物忍冬及同属植物干燥花蕾或带初开的花。《本草纲目》中详细论述了金银花具有久服轻身,延年益寿的功效,二十世纪八十年代,国家卫生部对金银花先后进行了化学分析,结果表明:金银花含有多种人体必须的微量元素和化学成分,同时含有多种对人体有利的活性毒物质,具有抗衰老,防癌变,轻身健体的良好功效。金银花微苦,但是入口清香,可提升饮料的爽口感。
优选的,如上所述的石斛保健饮料,按照重量份数计,所述石斛保健饮料的原料组份还包括甜叶菊0.1~0.2份。
甜叶菊具有调节血压、软化血管、降低血脂、降血糖、尿糖、抑菌止血、镇痛、减肥养颜、养阴生津、帮助消化,促进胰腺、脾胃功能和清热解毒的功能,经常饮用甜菊茶可消除疲劳,降低血糖浓度。甜叶菊的叶子中含有菊糖苷是一种低热量、高甜度的天然甜味剂,其甜度为砂糖甜度的200至300倍,可调和金银花的苦味及葛根的酸味。
优选的,如上所述的石斛保健饮料,按照重量份数计,所述石斛保健饮料还包括木糖醇1~3份。
为了进一步改善饮料的口感,本申请还优选添加了木糖醇。
优选的,如上所述的石斛保健饮料,所述铁皮石斛鲜条、葛根和去核滇橄榄为鲜品,所述金银花和甜叶菊为干品。
如上所述的石斛保健饮料的制备方法,包括:
将既定重量份数的原料组份经粉碎和/或浸泡后进行过滤以及调配,将调配后滤液灭菌后即得所述石斛保健饮料。
优选的,如上所述的石斛保健饮料的制备方法,所述过滤方法为用板框过滤器过滤和/或膜过滤。
板框过滤器是一种过滤设备。板框过滤器为不锈钢多层板框式压滤机,适用于浓度50%以下粘度较低,含渣量较少的液体作密闭过滤以达到提纯,灭菌、澄清等精滤、半精滤的要求,直接选用微孔滤膜,可不经微孔膜过滤器直接达到无菌过滤之目的。
膜过滤是一种与膜孔径大小相关的筛分过程,以膜两侧的压力差为驱动力,以膜为过滤介质,在一定的压力下,当原液流过膜表面时,膜表面密布的许多细小的微孔只允许水及小分子物质通过而成为透过液,而原液中体积大于膜表面微孔径的物质则被截留在膜的进液侧,成为浓缩液,因而实现对原液的分离和浓缩的目的。
优选的,如上所述的石斛保健饮料的制备方法,所述浸泡所用水的温度为60~70℃,浸泡时间为3~4h。
用60~70℃的热水浸泡,可充分释出金银花与甜叶菊中有效成分,也不会因温度过高而破坏其有效成分的生物活性。
优选的,如上所述的石斛保健饮料的制备方法,所述灭菌方法为巴氏灭菌法。
滤液中含有大量生物活性物质,巴氏灭菌法既能达到消毒目的又不损害食品品质的方法,不破坏饮料的口感与风味。
与现有技术相比,本发明的有益效果为:
1)、铁皮石斛和葛根经过合理配伍,具有明显的增效作用,保健效果大为增强。
2)、通过添加特定组份的滇橄榄、金银花、甜叶菊及木糖醇,大大改善了饮料的口感,使得本申请提供的石斛保健饮料口感丰满而醇厚、新鲜而细腻,顺滑绵延,余味清爽。

下面将结合实施例对本发明的实施方案进行详细描述,但是本领域技术人员将会理解,下列实施例仅用于说明本发明,而不应视为限制本发明的范围。实施例中未注明具体条件者,按照常规条件或制造商建议的条件进行。所用试剂或仪器未注明生产厂商者,均为可以通过市售购买获得的常规产品。
实施例1
一种石斛保健饮料,按照重量份数计,所述石斛保健饮料主要由以下原料组份制备而成:
铁皮石斛鲜条2份,葛根1份,去核滇橄榄0.5份,水110份。
其制备方法为:将铁皮石斛鲜条和葛根鲜品、去核滇橄榄鲜果按比例称取,加水后粉碎,充分搅拌用板框过滤器过滤,将滤液用巴氏灭菌法灭菌后既得成品。
实施例2
一种石斛保健饮料,按照重量份数计,所述石斛保健饮料主要由以下原料组份制备而成:
铁皮石斛鲜条5份,葛根3份,去核滇橄榄1份,金银花0.3份,水90份。
其制备方法为:
将铁皮石斛鲜条和葛根鲜品、去核滇橄榄鲜果按比例称取,加75份的水后粉碎,充分搅拌用板框过滤器过滤,得到第一滤液;
将金银花用10份60℃的水浸泡4h,过滤得到第二滤液;
合并第一滤液与第二滤液,并加入余量的水;将所得溶液进行膜过滤,将滤液用巴氏灭菌法灭菌后既得成品。
实施例3
一种石斛保健饮料,按照重量份数计,所述石斛保健饮料主要由以下原料组份制备而成:
铁皮石斛鲜条4份,葛根鲜品2.5份,去核滇橄榄鲜品0.7份,金银花干品0.1份,甜叶菊干品0.2份,水95份。
其制备方法为:
将铁皮石斛鲜条和葛根鲜品、去核滇橄榄鲜果按比例称取,加80份的水后粉碎,充分搅拌用板框过滤器过滤,得到第一滤液;
将金银花和甜叶菊混合,用8份70℃的水浸泡3h,过滤得到第二滤液;
合并第一滤液与第二滤液,并加入余量的水;将所得溶液进行膜过滤,将滤液用巴氏灭菌法灭菌后既得成品。
实施例4
一种石斛保健饮料,按照重量份数计,所述石斛保健饮料主要由以下原料组份制备而成:
铁皮石斛鲜条3份,葛根鲜品1.5份,去核滇橄榄鲜品0.8份,金银花干品0.1份,甜叶菊干品0.1份,木糖醇1份,水105份。
其制备方法为:
将铁皮石斛鲜条和葛根鲜品、去核滇橄榄鲜果按比例称取,加85份的水后粉碎,充分搅拌用板框过滤器过滤,得到第一滤液;
将金银花和甜叶菊混合,用5份70℃的水浸泡3h,过滤得到第二滤液;
合并第一滤液与第二滤液,加入木糖醇调味,并加入余量的水;将所得溶液进行膜过滤,将滤液用巴氏灭菌法灭菌后既得成品。
实施例5
一种石斛保健饮料,按照重量份数计,所述石斛保健饮料主要由以下原料组份制备而成:
铁皮石斛鲜条3.5份,葛根鲜品2份,去核滇橄榄鲜品0.75份,金银花干品0.2份,甜叶菊干品0.15份,木糖醇3份,水110份。
其制备方法为:
将铁皮石斛鲜条和葛根鲜品、去核滇橄榄鲜果按比例称取,加75份的水后粉碎,充分搅拌用板框过滤器过滤,得到第一滤液;
将金银花和甜叶菊混合,用10份70℃的水浸泡3h,过滤得到第二滤液;
合并第一滤液与第二滤液,加入木糖醇调味,并加入余量的水;将所得溶液进行膜过滤,将滤液用巴氏灭菌法灭菌后既得成品。
实施例6
一种石斛保健饮料,按照重量份数计,所述石斛保健饮料主要由以下原料组份制备而成:
铁皮石斛鲜条3.5份,葛根鲜品2份,去核滇橄榄鲜品0.75份,金银花干品0.2份,甜叶菊干品0.15份,木糖醇2份,水100份。
其制备方法为:
将铁皮石斛鲜条和葛根鲜品、去核滇橄榄鲜果按比例称取,加80份的水后粉碎,充分搅拌用板框过滤器过滤,得到第一滤液;
将金银花和甜叶菊混合,用10份65℃的水浸泡4h,过滤得到第二滤液;
合并第一滤液与第二滤液,加入木糖醇调味,并加入余量的水;将所得溶液进行膜过滤,将滤液用巴氏灭菌法灭菌后既得成品。
实验例1
对实施例1~6中的石斛保健饮料进行感官评价,并将申请号为CN201410794629.8,公开日为2015.04.22的专利申请中的实施例3中提供的石斛养生茶作为对比例1进行对比,评价结果测试结果如表2所示。
感官评价方法:评定小组由20位成员组成,他们根据表1的评分标准对复合饮料的色泽、香气、口感和质地进行独立打分,以累计总分的平均值作为产品的感官评分。
感官评分标准:请参考表1。

实验证明,采用本发明提供的方法生产的石斛保健饮料,其口感和纯度(主要指色泽,质地,气味)都要高于石斛养生茶,
既定配比的滇橄榄、金银花、甜叶菊及木糖醇均有显著提升口感及纯度的效果。滇橄榄增加了酸味,金银花微苦但更爽快,甜叶菊及木糖醇则增加了本申请提供的饮料的甜度。
其中,实施例6所提供的石斛保健饮料方案为最佳实施例。
进一步的,以实施例6作为实验例,同时以实施例6中记载的方案为基准设计对比例2及对比例3:
对比例2:将铁皮石斛鲜条调整为1份,葛根鲜品为4.5份,其他条件不变;
对比例3:将铁皮石斛鲜条调整为5份,葛根鲜品为0.5份,其他条件不变。
将实验例及对比例1~3进行实验如下操作:对存在精神不振、睡眠质量欠佳、身体机能下降、口干烦渴现象的100个人进行分组调查,第一组的25人服用本发明实验例(实施例6)的石斛保健饮料,第二组的25人服用本发明对比例1的石斛养生茶,第三组的25人服用本发明对比例2的石斛保健饮料,第四组的25人服用本发明对比例3的石斛保健饮料,6个月之后进行反馈,将反馈结果整理如下:

从表3可以看出,本发明的石斛保健饮料具有优秀的保健效果,且其效果与铁皮石斛及葛根的配伍关系有重要的关联,但是现有技术中的常规石斛茶单用效果并不显著。
尽管已用具体实施例来说明和描述了本发明,然而应意识到,在不背离本发明的精神和范围的情况下可以作出许多其它的更改和修改。因此,这意味着在所附权利要求中包括属于本发明范围内的所有这些变化和修改。
Claims (4)
1.一种石斛保健饮料,其特征在于,按照重量份数计,所述石斛保健饮料主要由以下原料组份制备而成:
铁皮石斛鲜条3~4份,葛根1.5~2.5份,去核滇橄榄0.7~0.8份,金银花0.1~0.3份,甜叶菊0.1~0.2份,木糖醇1~3份,水95~105份;
所述石斛保健饮料的制备方法包括:
将既定重量份数的原料组份经粉碎和/或浸泡后进行过滤以及调配,将调配后滤液灭菌后即得所述石斛保健饮料;
所述浸泡所用水的温度为60~70℃,浸泡时间为3~4h。
2.如权利要求1所述的石斛保健饮料,其特征在于:
所述铁皮石斛鲜条、葛根和去核滇橄榄为鲜品,所述金银花和甜叶菊为干品。
3.如权利要求1所述的石斛保健饮料,其特征在于,所述过滤方法为用板框过滤器过滤和/或膜过滤。
4.如权利要求1所述的石斛保健饮料,其特征在于,所述灭菌方法为巴氏灭菌法。
