Abstract

本发明公开了一种中老年配方保健米粉及其制备方法,以巨胚米胚芽10-12%,小麦胚芽8-10%,富硒巨胚糯糙米15-18%,黑米种皮5-8%,红米种皮5-8%,海带5-7%,紫菜4-6%,黑芝麻5-8%,莲子8-10%,葵花籽8-10%,脱脂奶粉8-12%、低聚异麦芽糖4-6%为原料,经膨化、粉碎、过筛、调配、包装等工艺制得适合中老年人及糖尿病人食用的中老年配方保健米粉。该保健米粉富含γ-氨基丁酸、硒、钙、大米肽、谷胱甘肽、黄酮类化合物、生物碱、氨基酸、微量元素、维生素、胡萝卜素、花青素和强心甙等功能成分,长期食用可提高免疫力、预防老年痴呆、癌症、高血压等心血管疾病。

技术领域
本发明属于农产品加工领域,具体涉及一种中老年配方保健米粉及其制备方法。
背景技术
老年疾病如心脑血管病以及老年痴呆、癌症等成为困扰中老年人的主要疾病。虽然药物可以对这些疾病进行一定程度的控制和医治,但是服药的麻烦及其带来的副作用使得很多人不愿服用。医食同源,食用具有保健和预防疾病作用的功能性食品对预防和治疗一些老年病效果显著,但是目前市场上可供中老年人群选择且能有效起到预防和治疗作用的食品较少。
本发明选用一些富含特殊保健功能成分的食品原料,通过科学配比和加工,生产适合中老年人的保健配方食品。巨胚米胚芽的营养非常丰富,富含γ-氨基丁酸、维生素、蛋白质、氨基酸、丰富的微量元素和矿物质,γ-氨基丁酸可有效预防老年痴呆、高血压和动脉硬化,而经过浸泡和催芽处理后巨胚米胚芽的γ-氨基丁酸等营养成分会显著增加。小麦胚芽含丰富的维他命E、B1及蛋白质,具有增强脑细胞活力、延缓衰老的功能,小麦胚芽还含有小麦黄酮和谷胱甘肽,对心血管疾病和抑制癌症有显著的效果。富硒巨胚糯糙米除富含γ-氨基丁酸外,还富含抗癌元素硒。黑米和红米种皮则富含花青素、胡萝卜素、强心甙、黄酮类化合物、植物甾醇等活性成份,具有提高机体抗氧化能力、抑制癌细胞及免疫赋活作用。海带、紫菜和黑芝麻富含钙,而莲子含有丰富的蛋白质、脂肪、碳水化合物及含量非常丰富的钙、磷和钾,具有养心安神、健脑、增强记忆、预防老年性痴呆的作用。葵花籽含有镁,是降低和保持血压的重要物质。低聚异麦芽糖可增加米粉的口感,且其不易被消化吸收,糖尿病人食用异麦芽低聚糖不影响血糖,同时能有效的促进人体内有益细菌——双歧杆菌的生长繁殖,具一定的保健功能。将这些对老年疾病有预防和治疗作用的食物经科学配比和加工,生产出富含各种功能性成分的保健型中老年配方营养米粉,不仅适合高血压和糖尿病的中老年人食用,且对预防中老年疾病、促进中老年人的健康有一定效果。
发明内容
本发明的目的在于提供一种中老年配方保健米粉及其制备方法,以巨胚稻胚芽、小麦胚芽、富硒巨胚糯糙米、黑米种皮、红米种皮等为原料,制得的中老年配方保健米粉适合中老年人及糖尿病人长期食用。
为实现上述目的,本发明采用如下技术方案:
一种中老年配方保健米粉,其原料组成为:巨胚米胚芽、小麦胚芽、富硒巨胚糯糙米、黑米种皮、红米种皮、海带、紫菜、黑芝麻、莲子、葵花籽、脱脂奶粉和低聚异麦芽糖。
各组份的重量百分比为:巨胚米胚芽10-12%,小麦胚芽8-10%,富硒巨胚糯糙米15-18%,黑米种皮5-8%,红米种皮5-8%,海带5-7%,紫菜4-6%,黑芝麻5-8%,莲子8-10%,葵花籽8-10%,脱脂奶粉8-12%,低聚异麦芽糖4-6%;各组份重量百分比之和为100%。
各组份的重量百分比为:巨胚米胚芽11%,小麦胚芽9%,富硒巨胚糯糙米17%,黑米种皮6%,红米种皮6%,海带6%,紫菜5%,黑芝麻7%,莲子9%,葵花籽9%,脱脂奶粉10%,低聚异麦芽糖5%。
所述巨胚米胚芽是将巨胚稻糙米经清水浸泡8小时后,28℃温度下催芽22小时,脱胚并微波干燥得到。
所述黑米种皮和红米种皮分别为黑米糙米和红米经过碾磨后产生的麸皮。
一种中老年配方保健米粉的制备方法包括以下步骤:
1)将富硒巨胚糯糙米、黑芝麻、莲子、葵花籽分别膨化;
2)将膨化后的富硒巨胚糯糙米、黑芝麻、莲子、葵花籽及巨胚米胚芽、小麦胚芽、黑米种皮、红米种皮、海带、紫菜经高速粉碎,过100目筛;
3)将粉碎后的各组份与脱脂奶粉、低聚异麦芽糖混合调配,得中老年配方保健米粉;
4)将保健米粉采用真空小袋包装,两次热压密封,即为成品。
本发明的有益效果在于:
(1)      本发明的中老年配方保健米粉属中老年营养保健食品,富含γ-氨基丁酸,维他命E、B1及蛋白质,黄酮和谷胱甘肽。γ-氨基丁酸可有效预防老年痴呆、高血压和动脉硬化;维他命E、B1及蛋白质具有增强脑细胞活力、延缓衰老的功能;黄酮和谷胱甘肽对心血管疾病和抑制癌症有显著的效果。此外,中老年配方保健米粉中还富含有抗癌作用的硒;富含花青素、胡萝卜素、强心甙、植物甾醇等活性成份,具有提高机体抗氧化能力、抑制癌细胞及免疫赋活作用;富含钙、镁、磷和钾,具有养心安神、健脑、增强记忆、预防老年性痴呆、降低和保持血压的作用。
(2)      中老年配方保健米粉中添加低聚异麦芽糖可增加米粉的口感,且其不易被消化吸收,糖尿病人食用异麦芽低聚糖不影响血糖,同时能有效的促进人体内有益细菌——双歧杆菌的生长繁殖,具一定的保健功能。将这些对老年疾病有预防和治疗作用的食物经科学配比和加工,生产出的富含各种功能性成分的中老年配方保健米粉,不仅适合患高血压和糖尿病的中老年人食用,且对预防中老年疾病,促进中老年人的健康意义重大。
(3)      本发明的制备方法简单,效率高、效益好,生产的中老年配方保健米粉对补充老年人的营养,保持身体健康和预防疾病大有益处。
具体实施方式
一种中老年配方保健米粉,其原料组份及各组份的重量百分比为:巨胚米胚芽10-12%,小麦胚芽8-10%,富硒巨胚糯糙米15-18%,黑米种皮5-8%,红米种皮5-8%,海带5-7%,紫菜4-6%,黑芝麻5-8%,莲子8-10%,葵花籽8-10%,脱脂奶粉8-12%,低聚异麦芽糖4-6%;各组份重量百分比之和为100%。
其制备方法包括以下步骤:

5)将保健米粉采用真空小袋包装,两次热压密封,即为成品。
所述富硒巨胚糯糙米由福建农林大学作物遗传育种研究所选育,购于福建农林大学。
实施例1
一种中老年配方保健米粉,其原料组份及各组份的重量百分比为:巨胚米胚芽11%,小麦胚芽9%,富硒巨胚糯糙米17%,黑米种皮6%,红米种皮6%,海带6%,紫菜5%,黑芝麻7%,莲子9%,葵花籽9%,脱脂奶粉10%,低聚异麦芽糖5%。
其制备方法包括以下步骤:
1)将巨胚稻糙米经清水浸泡8小时后,28℃温度下催芽22小时,脱胚并微波干燥,得巨胚米胚芽;收集黑米糙米和红米经过碾磨后产生的麸皮,得黑米种皮;
2)将富硒巨胚糯糙米、黑芝麻、莲子、葵花籽分别膨化;
3)将膨化后的富硒巨胚糯糙米、黑芝麻、莲子、葵花籽及巨胚米胚芽、小麦胚芽、黑米种皮、红米种皮、海带、紫菜经高速粉碎,过100目筛;

1)将巨胚稻糙米经清水浸泡8小时后,28℃温度下催芽22小时,脱胚并微波干燥,得巨胚米胚芽;收集黑米糙米和红米经过碾磨后产生的麸皮,得黑米种皮;
2)将富硒巨胚糯糙米、黑芝麻、莲子、葵花籽分别膨化;
3)将膨化后的富硒巨胚糯糙米、黑芝麻、莲子、葵花籽及巨胚米胚芽、小麦胚芽、黑米种皮、红米种皮、海带、紫菜经高速粉碎,过100目筛;

其制备方法包括以下步骤:
1)将巨胚稻糙米经清水浸泡8小时后,28℃温度下催芽22小时,脱胚并微波干燥,得巨胚米胚芽;收集黑米糙米和红米经过碾磨后产生的麸皮,得黑米种皮;
2)将富硒巨胚糯糙米、黑芝麻、莲子、葵花籽分别膨化;
3)将膨化后的富硒巨胚糯糙米、黑芝麻、莲子、葵花籽及巨胚米胚芽、小麦胚芽、黑米种皮、红米种皮、海带、紫菜经高速粉碎,过100目筛;
4)将粉碎后的各组份与脱脂奶粉、低聚异麦芽糖混合调配,得中老年配方保健米粉;
5)将保健米粉采用真空小袋包装,两次热压密封,即为成品。
本发明的中老年配方保健米粉富含γ-氨基丁酸、硒、钙、大米肽、谷胱甘肽、黄酮类化合物、生物碱、氨基酸、微量元素、维生素、胡萝卜素、花青素和强心甙等功能成分,不仅适合患高血压和糖尿病的中老年人长期食用,还可起到提高免疫力、预防老年痴呆、癌症、高血压等心血管疾病的作用。

1. 一种中老年配方保健米粉,其特征在于:所述保健米粉中的原料组成为:巨胚米胚芽、小麦胚芽、富硒巨胚糯糙米、黑米种皮、红米种皮、海带、紫菜、黑芝麻、莲子、葵花籽、脱脂奶粉和低聚异麦芽糖;
所述巨胚米胚芽是将巨胚稻糙米经清水浸泡8小时后,28℃温度下催芽22小时,脱胚并微波干燥得到;
所述黑米种皮和红米种皮分别为黑米糙米和红米经过碾磨后产生的麸皮;
各组份的重量百分比为:巨胚米胚芽10-12%,小麦胚芽8-10%,富硒巨胚糯糙米15-18%,黑米种皮5-8%,红米种皮5-8%,海带5-7%,紫菜4-6%,黑芝麻5-8%,莲子8-10%,葵花籽8-10%,脱脂奶粉8-12%,低聚异麦芽糖4-6%;各组份重量百分比之和为100%;
所述中老年配方保健米粉的制备方法包括以下步骤:
1)将富硒巨胚糯糙米、黑芝麻、莲子、葵花籽分别膨化;
2)将膨化后的富硒巨胚糯糙米、黑芝麻、莲子、葵花籽及巨胚米胚芽、小麦胚芽、黑米种皮、红米种皮、海带、紫菜经高速粉碎,过100目筛;
