本发明公开了一种紫薯保健米粉,其原料各组份的重量百分比为:紫薯20~25%、土豆10~15%、黑芝麻5~10%,花生8~12%、葵花籽7~15%,巨胚米胚芽8~15%,小麦胚芽5~8%,富硒巨胚糯糙米10~15%,脱脂奶粉8~12%,低聚异麦芽糖3~5%,各组份重量百分比之和为100%,经过清洗、膨化、研磨、调配、装袋等工艺步骤制得。本发明原料各组份重量配比搭配科学合理,制得的米粉营养价值非常丰富,具有养身保健的功效,对降低血压、健脑、增强记忆、预防痴呆、坏血病、贫血、心脑血管疾病和防癌等有积极的作用,对预防疾病、促进健康有大有益处。

本发明属于食品加工技术领域,具体涉及一种紫薯保健米粉。
背景技术
紫薯营养丰富具特殊保健功能,其富含蛋白质、淀粉、果胶、纤维素、氨基酸、维生素及多种矿物质,同时还富含硒元素和花青素,其中的蛋白质氨基酸都是极易被人体消化和吸收,富含的维生素A可以改善视力和皮肤的粘膜上皮细胞,维生素C 可使胶元蛋白正常合成, 防治坏血病的发生, 花青素是天然强效自由基清除剂。在日本国家蔬菜癌症研究中心公布的抗癌蔬菜中,紫薯名列榜首。另外,紫薯还可去皮烘干粉碎后加工成粉,色泽美观,营养丰富,是极好的食品加工原料,可作为各种糕点的主料或配料。紫薯从茎尖嫩叶到薯块,均具有一定保健功能,是当前无公害、绿色、有机食品中的食品。
随着社会的迅速进步和发展,人们对饮食营养保健的追求也越来越高。目前市场上对紫薯开发利用的食品较少,所以为充分开发利用紫薯的营养物质及其特有的保健作用,本发明提供一种紫薯保健米粉。

为了克服上述背景技术中存在的不足,本发明提供了一种营养丰富的紫薯保健米粉。
为实现上述目的本发明采用的技术方案如下:
一种紫薯保健米粉,其原料组成为:紫薯、土豆、黑芝麻、花生、葵花籽、巨胚米胚芽、小麦胚芽、富硒巨胚糯糙米、脱脂奶粉和低聚异麦芽糖。
进一步地,所述的紫薯保健米粉的各组份的重量百分比为:紫薯20~25%、土豆10~15%、黑芝麻5~10%,花生8~12%、葵花籽7~15%,巨胚米胚芽8~15%,小麦胚芽5~8%,富硒巨胚糯糙米10~15%,脱脂奶粉8~12%,低聚异麦芽糖3~5%;各组份重量百分比之和为100%。
进一步地,所述的紫薯保健米粉的各组份的重量百分比为:紫薯25%、土豆10%、黑芝麻8%,花生8%、葵花籽8%,巨胚米胚芽10%,小麦胚芽8%,富硒巨胚糯糙米10%,脱脂奶粉10%,低聚异麦芽糖3%。
进一步地,所述巨胚米胚芽是将巨胚稻糙米经清水浸泡12小时后,29℃温度下催芽24小时,脱胚并微波干燥得到。
所述紫薯保健米粉的制备方法包括以下步骤:
1)将紫薯和土豆进行清洗、切片、蒸煮、晒干处理;
2)将花生、黑芝麻、富硒巨胚糯糙米、葵花籽分别进行膨化处理;
3)将步骤1)和步骤2)处理后的原料及巨胚米胚芽、小麦胚芽经粉碎研磨,过90目筛;
4)将粉碎研磨后的各原料组份与脱脂奶粉、低聚异麦芽糖混合调配,制得紫薯保健米粉;
5)将紫薯保健米粉采用聚乙烯真空袋包装,两次热压密封,即为成品。
所述紫薯营养丰富具特殊保健功能,其富含蛋白质、淀粉、果胶、纤维素、氨基酸、维生素及多种矿物质,同时还富含硒元素和花青素,其中的蛋白质氨基酸都是极易被人体消化和吸收,富含的维生素A可以改善视力和皮肤的粘膜上皮细胞,维生素C 可使胶原蛋白正常合成, 防治坏血病的发生, 花青素可作为天然强效自由基清除剂。
所述土豆含有丰富的维生素B1、B2、B6和泛酸等B族维生素及大量的优质膳食纤维素,有助促进胃肠蠕动,疏通肠道,还含有微量元素、氨基酸、蛋白质、脂肪和优质淀粉等营养元素,调整膳食,具有降血压抗衰老的功效。
所述黑芝麻含有的多种人体必需氨基酸,在维生素E和维生素B1的作用参与下,能加速人体的代谢功能;含有的铁和维生素E是预防贫血、活化脑细胞、消除血管胆固醇的重要成分;含有的脂肪大多为不饱和脂肪酸,有延年益寿的作用。
所述花生中含有大量的亚油酸可使人体内胆固醇分解为胆汁酸排出体外,避免胆固醇在体内沉积,减少因胆固醇在人体中超过正常值而引发多种心脑血管疾病的发生率;花生中锌元素的含量高,能促进大脑发育,增强大脑的记忆功能,可激活中老年人脑细胞,有效地延缓人体过早衰老,具有抗老化作用。
所述巨胚米胚芽的营养非常丰富,富含γ-氨基丁酸、维生素、蛋白质、氨基酸、丰富的微量元素和矿物质,γ-氨基丁酸可有效预防老年痴呆、高血压和动脉硬化,而经过浸泡和催芽处理后的巨胚米胚芽其γ-氨基丁酸等营养成分会显著增加。
所述富硒巨胚糯糙米富含γ-氨基丁酸、抗癌元素硒。
所述葵花籽含有镁,是降低和保持血压的重要物质。

1)将紫薯和土豆进行清洗、切片、蒸煮、晒干处理;
2)将花生、黑芝麻、富硒巨胚糯糙米、葵花籽分别进行膨化处理;
3)将步骤1)和步骤2)处理后的原料及巨胚米胚芽、小麦胚芽经粉碎研磨,过90目筛;
4)将粉碎研磨后的各原料组份与脱脂奶粉、低聚异麦芽糖混合调配,制得紫薯保健米粉;
5)将紫薯保健米粉采用聚乙烯真空袋包装,两次热压密封,即为成品。
