甘蔗汁就是用甘蔗榨出来的汁,是一种味道甜美的饮料。不少人都喜欢在夏天喝甘蔗汁,因为甘蔗汁能帮人消暑解渴,中医认为,甘蔗汁性甘寒,适宜热病伤津,心烦口渴,身热尿赤,肺燥咳嗽。喝上一杯甘蔗汁既能消暑解渴、去除内脏燥热、促使排尿、清洁牙齿、消除口臭。甘蔗汁含有多种营养成分,是清凉的补剂,对治疗低血糖、便秘、恶心呕吐、发热干渴等效果也很好。巨胚米胚芽富含维生素、蛋白质、氨基酸、丰富的微量元素和矿物质,特别是富含γ-氨基丁酸,具有极其重要的生理功能,它能促进脑的活化性,健脑益智,抗癫痫,促进睡眠,美容润肤,延缓脑衰老机能,具有良好的降血压功效,抑制脂肪肝及肥胖症,活化肝功能。黑米种皮富含花青素、胡萝卜素和强心甙等功能成分,具有清除自由基、改善缺铁性贫血、抗应激反应、降低血压、抑制癌细胞生长以及免疫调节等多种生理功能,还具有改善心肌营养,降低心肌耗氧量等功效,对人体健康非常有益。目前市场上尚没有以巨胚米胚芽、黑米种皮和甘蔗清汁配制成的保健功能型甘蔗汁饮料出售。

本发明公开了一种功能型甘蔗汁饮料及其制备方法,以巨胚米胚芽、黑米种皮和新鲜甘蔗汁为原料生产高营养功能型的甘蔗汁饮料。本发明生产的功能型甘蔗汁饮料富含维生素、蛋白质、氨基酸,特别是富含γ-氨基丁酸、花青素、胡萝卜素和强心甙等功能成分,经常饮用对人体健康非常有益。
本发明首先提供了一种功能型甘蔗汁饮料,该饮料原料各组份的重量百分比为:甘蔗清汁60-70%、巨胚米胚芽提取液15-20%、黑米种皮提取液15-20%、柠檬酸0.07-0.08%,上述各组分百分比总和为100%。
所述巨胚米胚芽提取液是利用30-40℃的甘蔗清汁浸泡脱脂巨胚米胚芽后得到的提取液。
所述黑米种皮提取液是利用30-40℃的甘蔗清汁浸泡黑米种皮后得到的提取液。
本发明还提供了所述功能型甘蔗汁饮料的制备方法,包括以下步骤:
(1)甘蔗清汁制备:新鲜甘蔗用常温自来水涮洗干净,60~70℃热水冲洗60~80秒,粉粹机切碎,经压榨得甘蔗原汁,过滤后用“双酸法”澄清得甘蔗清汁;
(2)巨胚米胚芽提取液制备:巨胚米胚芽去杂后粉碎,正己烷脱脂,用30-40℃的甘蔗清汁浸泡脱脂巨胚米胚芽4-6小时,甘蔗清汁与脱脂巨胚米胚芽的重量比为7-9:1,过滤分离得巨胚米胚芽提取液;
(3)黑米种皮提取液制备:黑米种皮经粉碎机粉碎,用30-40℃的甘蔗清汁浸泡4-6小时,甘蔗清汁与黑米种皮的重量比为8-10:1,过滤分离得黑米种皮提取液;
(4)甘蔗清汁、巨胚米胚芽提取液、黑米种皮提取液、柠檬酸按配比加入混合缸中,搅匀,灌装封口,杀菌,冷却至室温即得成品。

(1)甘蔗清汁制备:新鲜甘蔗用常温自来水涮洗干净,65℃热水冲洗70秒,粉粹机切碎,经压榨得甘蔗原汁,过滤后用“双酸法”(高大维.饮料生产基本知识.华南工学院出版社,1986)澄清得甘蔗清原汁;
(2)巨胚米胚芽提取液制备:巨胚米胚芽(由福建农林大学选育的巨胚稻品种MhgeR出糙脱胚而得)去杂后粉碎,正己烷脱脂(将巨胚米胚芽置于锥形瓶中,以正己烷为浸出溶剂,锥形瓶置于振荡器上,脱脂条件为:料液比(质量比)1∶2.6,时间7h(每2h换1次新溶剂),温度58℃。在此条件下脱脂米胚芽残油率0.70%),用35℃的甘蔗清汁浸泡脱脂巨胚米胚芽5小时,甘蔗清汁与脱脂巨胚米胚芽的重量比为8:1,过滤分离得巨胚米胚芽提取液;
(3)黑米种皮提取液制备:黑米种皮经粉碎机粉碎,用35℃的甘蔗清汁浸泡5小时,甘蔗清汁与黑米种皮的重量比为9:1,过滤分离得黑米种皮提取液;
(4)甘蔗清汁、巨胚米胚芽提取液、黑米种皮提取液、柠檬酸按(重量比)甘蔗汁60%、巨胚米胚芽提取液20%、黑米种皮提取液19.93%、柠檬酸0.07%的配比加入混合缸中,搅匀,灌装封口,121℃杀菌25分钟,冷却至室温即得成品。

1.一种功能型甘蔗汁饮料,其特征在于:该饮料原料各组份的重量百分比为:甘蔗清汁60-70%、巨胚米胚芽提取液15-20%、黑米种皮提取液15-20%、柠檬酸0.07-0.08%,上述各组分百分比总和为100%;其制备方法包括以下步骤:
(1)甘蔗清汁制备:新鲜甘蔗用常温自来水涮洗干净,60~70℃热水冲洗60~80秒,粉粹机切碎,经压榨得甘蔗原汁,过滤后用“双酸法”澄清得甘蔗清汁;
(2)巨胚米胚芽提取液制备:巨胚米胚芽去杂后粉碎,正己烷脱脂,用30-40℃的甘蔗清汁浸泡脱脂巨胚米胚芽4-6小时,甘蔗清汁与脱脂巨胚米胚芽的重量比为7-9:1,过滤分离得巨胚米胚芽提取液;
(3)黑米种皮提取液制备:黑米种皮经粉碎机粉碎,用30-40℃的甘蔗清汁浸泡4-6小时,甘蔗清汁与黑米种皮的重量比为8-10:1,过滤分离得黑米种皮提取液;
