本发明涉及一种生产浸泡型枸杞葡萄利口酒的方法,特别是一种酒精度为20-25%(vol),基酒为葡萄发酵酒的枸杞葡萄利口酒的制备方法。属于配制酒技术领域。该枸杞葡萄利口酒的配制方法是采用低温冷冻升华工艺将原料枸杞进行前期处理,首先制得冻干枸杞粉,然后采用浸提,精滤等工艺制作而成。产品具有色泽纯正,酒体清澈,口感醇厚等特点,枸杞果香与葡萄酒的酸涩柔和相得益彰。该酒每100mL中含有28-35克天然枸杞果成分。主要工艺特点是浸泡使用的基酒为葡萄发酵酒,原料枸杞为冻干枸杞粉。生产过程不加入蔗糖,淀粉类糖和各类食品添加剂。成品酒完全在自然状态下顺序自然完成,产品色泽鲜亮,馥郁芳香,赏心悦目,具有很高的营养保健价值,它为人们提供了一种将果中之冠的枸杞与葡萄发酵酒完美地融为一体的佐餐利口酒,同时,也是一种高品质的营养酒。

背景技术
枸杞属茄科植物,在我国大部分地区都有分布,其中最负盛名的是宁夏枸杞(Lycium barbarum L.)。宁夏枸杞栽培历史悠久,果实粒大,色艳质优,属药材珍品,其药用价值和营养价值极高,是一种药膳同源的功能性保健食品。中华人民共和国药典明确标明枸杞正品为茄科植物的宁夏枸杞。
现代研究表明,枸杞所含营养成份非常丰富。干枸杞子的含糖量高,约为40%-53%,包括枸杞多糖,还原糖,糖醛酸等。类胡萝卜素(一氢叶黄素、二氢叶黄素、胡萝卜素),主要以β-胡萝卜素为主,其中胡萝卜素的含量是所有植物中最高的。根据近年来国内外研究资料的详细统计,果实构杞子另含黄酮苷、香豆精苷、多酚酸、超氧歧化酶、甜菜碱等药用有效成分。枸杞还含有丰富的钾、钠、钙、镁、铁、铜、锰、锌等元素,以及22种氨基酸和多种维生素。
现代药理学研究认为:枸杞多糖是一种非特异性的免疫增强剂,能提高机体免疫功能,增强抗病能力,从而达到抗衰老、抗癌、抗肝炎、以及抗爱滋病等作用。甜菜碱在生物体内起甲基供应体的作用,能促进脂质代谢,具有抗脂肪肝的作用,是枸杞子中主要有效成分之一。枸杞色素中丰富的类胡萝卜素,其中β-胡萝卜素不仅具有维生素A的活性其作用,可以明目,而且在抗癌抗衰老和预防心血管疾病方面也有明显的作用。
枸杞作为传统名贵中药,味甘、性平。能利肝、明目、补肾、生精、祛风和除虚。有升高白血球、降低血压、降低血糖、滋补肝肾、益精明目、保肝、提高免疫力、抗癌、抗衰老、抗疲劳、抗肿瘤之功效。是扶正固本,生精补髓,滋阴补肾,益气安神,强身健体,延缓衰老之良药。
葡萄发酵酒是世界上公认的与酿造酒、蒸馏酒、配制酒并列的四大饮料酒之一,它色香味成分相互平衡,酒体优雅、精美醇良、醇正爽口。除乙醇和水之外,葡萄发酵酒的主要成分还有葡萄糖、氨基酸及多种矿物质成分等,具有一定的保健价值。
随着社会经济的发展和人民生活水平的提高,人们越来越注意饮食对自身健康的影响,因此具有调节机体功能、预防疾病和促进健康的功能性保健食品得到迅速发展。
长期枸杞酒的生产实践让我们了解到,由于宁夏枸杞不同于其它植物类果实的原始属性和差异性,沿用传统枸杞酒制备方法不能最大限度地提取天然枸杞的全部营养成分与药理成分,而经过发酵的枸杞也只能获取到3%左右的酒精度,且枸杞果中的大部分营养成分仍无法 提出,从而制约和阻碍了天然枸杞为人类社会提供最佳营养价值和药用价值的功能基础。因此本发明将枸杞干果原料用超低温冷冻升华工艺处理,加工成80-150目的枸杞冻干全粉。经低温冷冻升华工艺处理的构杞原料保留了天然枸杞的全部活性营养成分与药理成分。用经过处理的葡萄发酵酒作为基酒对枸杞冻干全粉进行萃取,可以得到高品质、高浓度、原生态的枸杞葡萄利口酒。
发明内容
本发明所要解决的技术问题是,如何将天然枸杞与葡萄发酵酒完美的融为一体,提出了一种生产配制型枸杞葡萄利口酒的制备方法。该制备方法用以葡萄发酵酒为主要成分的基酒对枸杞冻干粉进行萃取,使枸杞中的营养物质及药理成分最大限度地得以释放,制备出独特的,具有枸杞果香与葡萄醇香的高品质、高浓度的枸杞葡萄利口酒,使果中之冠的枸杞与营养丰富的葡萄发酵酒完美融为一体,馨香爽口。
本发明的技术方案如下:
1.以葡萄发酵酒为基酒,首先对山楂,甘草等植物材料进行浸泡提取,改变基酒成分,清液过滤后待用。
2.采用超低温冷冻升华工艺对枸杞干果进行处理,加工成80-150目的枸杞冻干全粉。
3.用得到的基酒清液对枸杞冻干全粉进行萃取。由于冻干过程最大程度的保留了枸杞的全部活性营养成分,加上80-150目的细小冻干全粉微粒能充分与基酒液接触,再加上充分的搅拌。利用此方法,就能最大限度地提取天然枸杞的全部营养成分和药理成分。
本发明所述枸杞葡萄利口酒具体特征配方如下:
1.每100毫升酒中含有28-35g天然枸杞果成分。
2.所用枸杞为冻干枸杞全粉。
3.基酒采用葡萄发酵酒,酒精度为12%-25%(vol) 。
具体实施方式
实施例一:
1、原料的配制:将山楂切片或破碎,将甘草切片或破碎,处理后待用。
2、将配制好的葡萄发酵基酒放入酒坛中,然后将80-150目粒径枸杞冻干粉和上述待用的山楂、甘草等植物材料按比例加入到酒坛内,将酒坛密封8-10天,同时每天搅拌两到三次,使其浸泡充分。加入比例为每100毫升酒中含有:枸杞:28-35克、山楂:1克、甘草:0.5克。
3、将上述浸泡的酒过滤后,放入老熟罐中,根据需要,静置30-60天,使其自然老熟和沉淀。
4、精滤、装瓶:将老熟和沉淀好的酒经过精滤后,即可装瓶。其中,精滤是采用板框式过滤器进行。
实施例二:
1.葡萄发酵基酒中加入山楂、甘草等植物材料浸泡8-10天,过滤,得到基酒提取液;
2.枸杞干果采用超低温冷冻升华工艺加工处理,得到80-150目粒径枸杞冻干粉;
3.用“1”项得到的基酒提取液萃取枸杞冻干全粉,萃取工艺可用陶坛也可以用不锈钢罐。将酒坛密封8-10天,同时每天搅拌数次;
4.将上述萃取完成的酒,滤出清液,放入老熟罐中,静置30-60天,进行静化处理;
5.精滤、装瓶:将老熟和沉淀好的酒经过精滤后,即可装瓶。
成品检验技术指标
A、感官指标:
色泽:清澈透明,有枸杞的红色或红宝石色;
气味:枸杞的果香与葡萄酒的清香融为一体,无异味;
口感:醇厚、爽口、绵柔、无异味,枸杞的果香与葡萄酒的酸涩融为一体。
B、理化指标:
酒精度(20℃)>20-25%,
总糖(以葡萄糖计)g/L≥20,
总酸(以乳酸计)g/L≥20。
Claims (4)
1.一种枸杞葡萄利口酒的制备方法,其特征在于该酒的配方如下:每100毫升酒中含有28-35g天然枸杞果成分。
2.根据权利要求1所述的枸杞葡萄利口酒的制备方法,其特征在于所用枸杞为冻干枸杞全粉。
3.根据权利要求1或2所述的枸杞葡萄利口酒的制备方法,其特征在于基酒采用葡萄发酵酒,酒精度为12%-25%(vol)。
4.根据权利要求1,2,3所述的枸杞葡萄利口酒的生产方法,其特征在于制备方法如下:
a.基酒中加入山楂,甘草等药物浸泡8-10天,过滤,得到以葡萄发酵酒为基酒的提取液;
b.枸杞干果采用超低温冷冻升华工艺加工处理,得到80-150目粒径枸杞冻干粉;用已完成的基酒提取液再次萃取枸杞冻干全粉。萃取工艺可用陶坛也可用不锈钢罐,密封10-15天,每天搅拌1-2次;
c.将上述浸泡好的酒,滤出清液,放入老熟罐中,静置30-60天;
d.精滤、装瓶:将老熟和沉淀好的酒经过精滤后,即可装瓶。
