本发明涉及一种发酵方法生产功能型枸杞黄酒的方法,酒精度15‑30%(vol)。糯米经蒸煮后,搭窝时加入酒药与麦曲的同时,一并加入枸杞干果经低温冷冻工艺处理,制得的枸杞冻干全粉。工艺程序为过筛、浸米、蒸煮、淋水、搭窝、发酵、浸提压榨、静化老熟、精滤等工艺制作而成。产品具有色泽纯正,酒体澄清,枸杞果香浓郁,口感醇厚等特点。主要工艺特点是枸杞经低温冷冻工艺加工为40目以上的枸杞冻干全粉,糯米经过筛、浸米、蒸煮、淋水后,在搭窝加入酒药、麦曲的同时加入枸杞冻干全粉一并完成发酵。所制得的功能型枸杞营养黄酒,具有很高的营养保健价值,是一款高品质的营养酒。

枸杞属茄科植物,在我国大部分地区都有分布,其中最负盛名的是宁夏枸杞(Lycium barbarum L.)。宁夏枸杞栽培历史悠久,果实粒大,色艳质优,属药材珍品,其药用价值和营养价值极高,是一种药膳同源的功能性保健食品。中华人民共和国药典明确标明枸杞正品为茄科植物的宁夏枸杞。
现代研究表明,枸杞所含营养成份非常丰富。干枸杞子的含糖量高,约为40%-53%,包括枸杞多糖,还原糖,糖醛酸等。类胡萝卜素(一氢叶黄素、二氢叶黄素、胡萝卜素),主要以β-胡萝卜素为主,其中胡萝卜素的含量是所有植物中最高的。根据近年来国内外研究资料的详细统计,果实枸杞子另含黄酮苷、香豆精苷、多酚酸、超氧歧化酶、甜菜碱等药用有效成分。枸杞还含有丰富的钾、钠、钙、镁、铁、铜、锰、锌等元素,以及22种氨基酸和多种维生素。

长期枸杞酒的生产实践和产品研发经验告诉我们,传统枸杞黄酒制备方法是将枸杞干果置入一并发酵,不能提取出枸杞的营养成分。运用本制备方法,枸杞干果在低温冷冻工艺下加工成40目以上粒径的枸杞冻干全粉,得以低温下保留了枸杞的全部活性物质,在发酵过程中更可以充分地萃取提纯出枸杞的营养成分与药理成分。
发明内容
本发明所要解决的技术问题是,针对现有枸杞黄酒生产方法中存在的不足,提出一种新的功能型枸杞黄酒发酵生产方法。将枸杞干果经低温冷冻处理,加工为40目以上粒径的枸杞冻干全粉。纯糯米在蒸煮完成后,搭窝时加入酒药与麦曲的同时,一并加入40目以上粒径的枸杞冻干全粉等原料一起完成发酵。使枸杞中营养物质及药理成分得以充分地释放,果中之冠的枸杞营养成分与营养丰富的液体黄酒在发酵中完美的融为一体,馥郁芬芳。
本发明的技术方案如下:
1.低温冷冻工艺对枸杞干果进行处理,低温粉碎加工成40目以上粒径的枸杞冻干全粉。
2.制备方法工艺如下:
糯米→过筛→浸米→蒸煮→淋水→搭窝(含酒药、麦曲、枸杞冻干全粉)→浸提压榨→静化→老熟→精滤→灌装
本发明所述枸杞黄酒具体特征如下:
1.每100毫升酒中含有18-25g天然枸杞果的全部营养成分。
2.所用枸杞为枸杞干果经低温冷冻工艺加工成的枸杞冻干全粉。
3.酒精度为15%-30%(vol)。
具体实施方式
实施列一:
1.枸杞干果的原料加工:将枸杞干果经低温冷冻工艺加工后,制得40目以上粒径的枸杞冻干全粉待用。
2.将纯糯米过筛、浸米、蒸煮、淋水后待用。
3.在进入发酵工艺搭窝之时,同时加入酒药、麦曲、枸杞冻干全粉完成发酵过程。
4.经浸提压榨、静化老熟、精滤后,可以灌瓶。
成品检验技术指标
A、感官指标:
色泽:清澈透明,有枸杞的红色或棕黄色;
气味:黄酒特有的醇香,枸杞的果香,无异味;
口感:醇和、爽口、无异味,有枸杞的特殊口味。
B、理化指标:
酒精度(20℃)>15-30%;
总糖(以葡萄糖计)g/L≥20;
总酸(以乳酸计)g/L≥20;
甲醇g/100mL,≤0.04;
铅(以Pb计),mg/L≤1;
锰(以Mn计),mg/L≤2。
Claims (4)
1.本发明涉及一种功能型枸杞营养黄酒的制备方法,其特征在于该酒的枸杞是以枸杞粉的形式,在搭窝的时候与酒药、麦曲同时加入,与糯米一起发酵,制得黄酒。
2.根据权利要求1所述的一种功能型枸杞营养黄酒的制备方法,其特征在于所用枸杞干果为经低温冷冻处理后制得的枸杞冻干全粉。
3.根据权利要求1或2所述的一种功能型枸杞营养黄酒的制备方法,其特征在于酒精度为15%-30%(vol)。
4.根据权利要求1,2,3所述的一种功能型枸杞营养黄酒的生产方法,其特征在于制备方法工艺如下:
a.纯糯米经过筛、浸米、蒸煮、淋水、搭窝(含酒药、麦曲、枸杞冻干全粉)、浸提压榨、静化老熟、精滤等工艺制备完成发酵的工艺方法;
b.枸杞干果采用低温冷冻处理,制得到40目以上粒径的枸杞冻干全粉;纯糯米经蒸煮后,在搭窝加入酒药与麦曲的同时,一并加入40目以上粒径枸杞冻干全粉完成发酵;
c.发酵生产的一种功能型枸杞营养黄酒,经浸提压榨,静化老熟10-60天;
d.精滤、装瓶:静化老熟完成后的成品酒经过精滤后,即可装瓶。
