近年来随着人们生活质量的不断提高,人们对于饮料的要求越来越高。茶饮料作为饮料的新品种,以自身的色香味以及具有调节人体机能的保健功效来满足人们的嗜好需求。未来的饮料市场是一个多元化共存的市场,功能性保健饮料因符合人体的健康需求,必定是一个长期的流行趋势。目前,水果茶饮料的品种各式各样,但大多是以水果汁为主要原料,添加茶叶的煎煮液,再经调味剂调味制得,其茶叶的营养价值很难完全释放,茶叶的下脚料就当作废料处理,浪费资源,效率极低,而且口感欠缺,产品质量参差不齐等,满足不了市场的需求。

本发明要解决的技术问题是提供一种木瓜茶饮料及其制备方法,该木瓜茶饮料配方合理,具有多种营养成分,长期饮用既能健康排毒,又能达到强身健体,美容养颜的效果。
为解决上述技术问题,本发明采用以下技术方案:
一种木瓜茶饮料,由以下重量份原料制得:苦丁茶4~8份、胖大海6~10份、葛根4~8份、茉莉花2~4份、桂花2~4份、木瓜12~16份、木糖醇8~12份。
所述原料最佳重量份为:苦丁茶6份、胖大海8份、葛根6份、茉莉花3份、桂花3份、木瓜14份、木糖醇10份。
所述木瓜茶饮料的制备方法,由以下步骤制得:
1)榨汁:将去皮去籽的木瓜榨汁,经过100~120℃高温灭菌10~30分钟,再过滤,制得木瓜汁;
2)烘烤:将苦丁茶、胖大海、葛根、茉莉花和桂花按所述重量份混合,置于130~140℃温度下烘干,直至复合配方中水分含量为3~5%;
3)粉碎:将步骤2)处理过的复合配方,倒入旋切式粉碎机粉碎,粉碎粒度为50~60目,制得粉剂;
4)发酵:将步骤3)制得的粉剂与木糖醇混合,加入粉剂总重量3~5倍水和0.01~1%的酵母菌,于30~35℃的温度下发酵3~5小时,取出发酵醪液,采用超滤膜过滤,即得发酵液;
5)调配、杀菌、灌装:将步骤4)制得的发酵液与步骤1)制得的木瓜汁进行调配,用水勾兑,静置沉淀1~2天,取上层清液,然后对上层清液进行灌装、灭菌,制得木瓜茶饮料。
所述步骤5)中,混合液用水勾兑后酒精含量为0.5~0.8%vol。
所述步骤5)中,灭菌的方式为水浴连续滚动杀菌,其水温为95~115℃,杀菌时间为10~30分钟。

一种木瓜茶饮料,其配方为:
苦丁茶6份、胖大海8份、葛根6份、茉莉花3份、桂花3份、木瓜14份、木糖醇10份。
本实施例木瓜茶饮料的制备方法,其步骤为:
1)榨汁:将去皮去籽的木瓜榨汁,经过110℃高温灭菌20分钟,再过滤,制得木瓜汁;
2)烘烤:将苦丁茶、胖大海、葛根、茉莉花和桂花按所述重量份混合,置于135℃温度下烘干,直至复合配方中水分含量为4%;
3)粉碎:将步骤2)处理过的复合配方,倒入旋切式粉碎机粉碎,粉碎粒度为55目,制得粉剂;
4)发酵:将步骤3)制得的粉剂与木糖醇混合,加入粉剂总重量4倍水和0.5%的酵母菌,于32℃的温度下发酵4小时,取出发酵醪液,采用孔径0.4um的超滤膜过滤,即得发酵液;

5)调配、杀菌、灌装:将步骤4)制得的发酵液与步骤1)制得的木瓜汁进行调配,用水勾兑至酒精含量为0.8%vol,静置沉淀2天,取上层清液,然后对上层清液进行灌装,最后在115℃水温下水浴连续滚动杀菌10分钟,制得木瓜茶饮料。
实施例3
一种木瓜茶饮料,其配方为:
苦丁茶6份、胖大海6份、葛根8份、茉莉花3份、桂花2份、木瓜16份、木糖醇12份。
本实施例木瓜茶饮料的制备方法,其步骤为:
1)榨汁:将去皮去籽的木瓜榨汁,经过120℃高温灭菌10分钟,再过滤,制得木瓜汁;
2)烘烤:将苦丁茶、胖大海、葛根、茉莉花和桂花按所述重量份混合,置于130℃温度下烘干,直至复合配方中水分含量为5%;
3)粉碎:将步骤2)处理过的复合配方,倒入旋切式粉碎机粉碎,粉碎粒度为50目,制得粉剂;
4)发酵:将步骤3)制得的粉剂与木糖醇混合,加入粉剂总重量3倍水和0.01%的酵母菌,于35℃的温度下发酵3小时,取出发酵醪液,采用孔径0.3um的超滤膜过滤,即得发酵液;
5)调配、杀菌、灌装:将步骤4)制得的发酵液与步骤1)制得的木瓜汁进行调配,用水勾兑至酒精含量为0.5%vol,静置沉淀1天,取上层清液,然后对上层清液进行灌装,最后在120℃水温下水浴连续滚动杀菌10分钟,制得木瓜茶饮料。
实施例4
一种木瓜茶饮料,其配方为:
苦丁茶4份、胖大海10份、葛根6份、茉莉花2份、桂花4份、木瓜15份、木糖醇11份。
本实施例木瓜茶饮料的制备方法,其步骤为:
1)榨汁:将去皮去籽的木瓜榨汁,经过112℃高温灭菌12分钟,再过滤,制得木瓜汁;
2)烘烤:将苦丁茶、胖大海、葛根、茉莉花和桂花按所述重量份混合,置于132℃温度下烘干,直至复合配方中水分含量为5%;
3)粉碎:将步骤2)处理过的复合配方,倒入旋切式粉碎机粉碎,粉碎粒度为52目,制得粉剂;
4)发酵:将步骤3)制得的粉剂与木糖醇混合,加入粉剂总重量5倍水和0.6%的酵母菌,于32℃的温度下发酵4小时,取出发酵醪液,采用孔径0.4um的超滤膜过滤,即得发酵液;
5)调配、杀菌、灌装:将步骤4)制得的发酵液与步骤1)制得的木瓜汁进行调配,用水勾兑至酒精含量为0.6%vol,静置沉淀1天,取上层清液,然后对上层清液进行灌装,最后在100℃水温下水浴连续滚动杀菌30分钟,制得木瓜茶饮料。
Claims (5)
1.一种木瓜茶饮料,其特征在于,由以下重量份原料和步骤制得:
1)苦丁茶4~8份、胖大海6~10份、葛根4~8份、茉莉花2~4份、桂花2~4份、木瓜12~16份、木糖醇8~12份;
2)榨汁:将去皮去籽的木瓜榨汁,经过100~120℃高温灭菌10~30分钟,再过滤,制得木瓜汁;
3)烘烤:将苦丁茶、胖大海、葛根、茉莉花和桂花按重量份混合,置于130~140℃温度下烘干,直至复合配方中水分含量为3~5%;
4)粉碎:将步骤3)处理过的复合配方,倒入旋切式粉碎机粉碎,粉碎粒度为50~60目,制得粉剂;
5)发酵:将步骤4)制得的粉剂与木糖醇混合,加入粉剂总重量3~5倍水和0.01~1%的酵母菌,于30~35℃的温度下发酵3~5小时,取出发酵醪液,采用超滤膜过滤,即得发酵液;
6)调配、灌装、杀菌:将步骤5)制得的发酵液与步骤2)制得的木瓜汁进行调配,用水勾兑,静置沉淀1~2天,取上层清液,然后对上层清液进行灌装、灭菌,制得木瓜茶饮料。
2.根据权利要求1所述的木瓜茶饮料,其特征在于,由以下重量份原料制得:苦丁茶6份、胖大海8份、葛根6份、茉莉花3份、桂花3份、木瓜14份、木糖醇10份。
3.根据权利要求1所述的制备方法,其特征在于:所述步骤6)混合液用水勾兑后酒精含量为0.5~0.8%vol。
4.根据权利要求1所述的制备方法,其特征在于:所述步骤6)灭菌的方式为水浴连续滚动杀菌,其水温为95~115℃,杀菌时间为10~30分钟。
5.根据权利要求1所述的制备方法,其特征在于:所述步骤5)超滤膜为孔径0.3~0.5um的超滤膜。
