Abstract
本发明公开了一种冰温结合自发气调贮藏保鲜树莓的方法,而提供一种能够提高树莓的贮藏品质,延长树莓保鲜期的贮藏保鲜树莓的方法。采摘八成熟的树莓,散去田间热,剔出有机械损伤、病虫害、腐烂和残次的果实,然后,控制在12小时以内将树莓放入冷库进行预冷处理,预冷库温度控制在2℃±0.5℃;将经预冷处理的树莓装入硬质容器,再装入0.03-0.05mm厚的PE保鲜袋中,随即扎紧保鲜袋口;将装有树莓的保鲜袋进行冷适应训化16小时后,再在-0.7℃±0.5℃条件下冰温贮藏。本发明的贮藏保鲜树莓的方法将冰温贮藏与自发气调两种技术有机结合用于树莓的保鲜,保鲜期可达38天,好果率达89.6%,树莓的感官品质及理化品质良好。

一种冰温结合自发气调贮藏保鲜树莓的方法
技术领域
[0001] 本发明涉及保鲜技术领域,特别是涉及一种冰温结合自发气调贮藏保鲜树莓的方法。
背景技术
[0002] 树莓是蔷薇科悬钩子属植物,其果实为浆果,风味独特,矿物质及维生素等含量丰富,且富含S0D、鞣花酸、花青素等功能性物质,具有很高的食用价值及保健功效。
[0003] 然而,由于树莓的果皮很薄,组织柔嫩,在贮藏运输过程中极易受机械损伤及微生物浸染,加之其呼吸速率较高,因此,树莓极易腐败变质,采后的货架寿命一般仅为1-3天,限制了树莓产业的发展。
发明内容
[0004] 本发明的目的是针对现有技术中存在的技术不足,而提供一种能够提高树莓的贮藏品质,延长树莓保鲜期的贮藏保鲜树莓的方法。
[0005] 为实现本发明的目的所采用的技术方案是:
[0006] 一种冰温结合自发气调贮藏保鲜树莓的方法,其特征在于,包括下述步骤:
[0007] (I)采摘八成熟的树莓,散去田间热,剔出有机械损伤、病虫害、腐烂和残次的果实,然后,及时将树莓放入冷库进行预冷处理,预冷库温度控制在2°C ±0.5°C ;
[0008] (2)将经预冷处理的树莓装入硬质容器中,再将装有树莓的硬质容器装入厚度为
0.03-0.05mm、包装容量为35cm x 25cm的PE保鲜袋中,随即扎紧保鲜袋口 ;
[0009] (3)将上述装有树莓的保鲜袋进行冷适应训化后,再于-0.7°C ±0.5°C条件下冰温贮藏;所述冷适应训化的冷库温度为0°c ±0.5°C。
[0010] 步骤(2)中的预冷时间为16小时。
[0011] 步骤(3)的冷适应训化时间为16小时。
[0012] 步骤(3)中将装有树莓的保鲜袋放入塑料筐进行冷适应训化后,并将塑料筐整齐码入冰温库的库架上进行冰温贮藏。
[0013] 步骤(I)中树莓从采摘到放入冷库进行预冷处理的时间控制在12小时以内。
[0014] 所述硬质容器为塑料盒。
[0015] PE保鲜袋厚度为0.03mm时装入树莓750g,PE保鲜袋厚度为0.04mm或0.05mm时装入树莓均为500g。
[0016] 与现有技术相比,本发明的有益效果是:
[0017] 1、本发明的贮藏保鲜树莓的方法将冰温贮藏与自发气调两种技术有机结合用于树莓的保鲜。气调技术有效延缓了树莓可溶性固形物含量的下降,有利于冰温贮藏。再通过冰温贮藏,最大限度地降低树莓的新陈代谢并有效抑制有害微生物的生长,有效地保持了树莓的感官及理化品质,延长了贮藏期限。
[0018] 2、本发明在冰温贮藏前,采用低温训化技术,于0°C ±0.5°C下保存16小时,提高了树莓冰温贮藏的冷适应性。
[0019] 3、本发明通过选择特定厚度PE袋与包装容量,使薄膜包装袋内形成适宜树莓呼吸的气体环境,从而控制树莓的呼吸强度,延长其货架期。
[0020] 4、本发明的方法通过冰温贮藏与自发气调两种技术有机结合,及各个工艺参数的确定,使树莓的保鲜期可达38天,好果率达89.6%,树莓的感官品质及理化品质良好。
[0021] 5、本发明的方法简便易行,效果较好,成本低廉。

[0024] (I)采摘八成熟的树莓,将果实平铺于透气性良好的竹垫上,厚度约3-5cm,以便及时散去田间热;剔出有机械损伤、病虫害、腐烂和残次的果实;然后,及时(控制在12小时以内)将树莓放入冷库进行预冷处理,预冷库温度控制在2V ±0.5°C,预冷16小时。
[0025] (2)将经步骤(I)处理的树莓装入塑料盒,并将塑料盒放入0.03mm厚、包装容量为35cm X 25cm的PE保鲜袋中,每袋放入树莓750g,随即扎紧保鲜袋口 ;将装有树莓的保鲜袋放入塑料筐,于0°C ±0.5°C的冷库中进行冷适应训化16小时后,再将塑料筐整齐码入冰温库的库架上,在-0.7V ±0.5°C下冰温贮藏。贮藏的树莓果实的保鲜期达35天,好果率达85.3%,树莓的感官品质及理化品质较好,果实饱满,色泽红亮,气味浓郁,可滴定酸含量1.51%,可溶性固形物含量9.38%,呼吸强度为88.40mg.co2.kg' IT1,而对照组(-0.7°C ±0.5°C,未加保鲜膜包装)的可滴定酸含量为1.47%,可溶性固形物含量为8.87%,呼吸强度为 97.65mg.CO2.kg—1.h-1。

[0031] (2)将经步骤(I)处理的树莓装入塑料盒,并将塑料盒放入0.05mm厚、包装容量为35cm X 25cm的PE保鲜袋中,每袋放入树莓500g,随即扎紧保鲜袋口。将装有树莓的保鲜袋放入塑料筐,于0°C ±0.5°C冷库中进行冷适应训化16小时后,再将塑料筐整齐码入冰温库的库架上,在-0.7V ±0.5°C下冰温贮藏。贮藏的树莓果实的保鲜期达38天,好果率达86.6%,树莓的感官品质及理化品质较好,果实饱满,色泽红亮,气味浓郁,可滴定酸含量1.50%,可溶性固形物含量9.45%,呼吸强度为78.44mg.co2.kg—1.h-1,而对照组(-0.7°C ±0.5°C,未加保鲜膜包装)的可滴定酸含量为1.47%,可溶性固形物含量为8.87%,呼吸强度为 97.65mg.CO2.kg—1.h-1。
[0032] 综上,利用本发明技术贮藏的树莓果实的保鲜期可达35-38天,好果率85.3%-89.6%,树莓的感官品质及理化品质良好,适于鲜食。
[0033] 以上所述仅是本发明的优选实施方式,应当指出的是,对于本技术领域的普通技术人员来说,在不脱离本发明原理的前提下,还可以做出若干改进和润饰,这些改进和润饰也应视为本发明的保护范围。
Claims (7)
1.一种冰温结合自发气调贮藏保鲜树莓的方法,其特征在于,包括下述步骤: (1)采摘八成熟的树莓,散去田间热,剔出有机械损伤、病虫害、腐烂和残次的果实,然后,及时将树莓放入冷库进行预冷处理,预冷库温度控制在2°c ±0.5°C ; (2)将经预冷处理的树莓装入硬质容器中,再将装有树莓的硬质容器装入厚度为.0.03-0.05mm、包装容量为35cm x 25cm的PE保鲜袋中,随即扎紧保鲜袋口 ; (3)将上述装有树莓的保鲜袋进行冷适应训化后,再于-0.7°C ±0.5°C条件下冰温贮藏;所述冷适应训化的冷库温度为0°C ±0.5°C。
2.根据权利要求1所述的冰温结合自发气调贮藏保鲜树莓的方法,其特征在于,步骤(2)中的预冷时间为16小时。
3.根据权利要求1所述的冰温结合自发气调贮藏保鲜树莓的方法,其特征在于,步骤(3)的冷适应训化时间为16小时。
4.根据权利要求1所述的冰温结合自发气调贮藏保鲜树莓的方法,其特征在于,步骤(3)中将装有树莓的保鲜袋放入塑料筐进行冷适应训化后,并将塑料筐整齐码入冰温库的库架上进行冰温贮藏。
5.根据权利要求1所述的冰温结合自发气调贮藏保鲜树莓的方法,其特征在于,步骤(I)中树莓从采摘到放入冷库进行预冷处理的时间控制在12小时以内。
6.根据权利要求1所述的冰温结合自发气调贮藏保鲜树莓的方法,其特征在于,所述硬质容器为塑料盒。
7.根据权利要求1所述的冰温结合自发气调贮藏保鲜树莓的方法,其特征在于,在PE保鲜袋容量为35cm X 25cm时,保鲜袋厚度为0.03mm时装入树莓750g,保鲜袋厚度为.0.04mm或0.05mm时装入树莓均为500g。
