技术领域
本发明涉及一种狮子头及其加工工艺。
技术背景
狮子头即是大肉丸子或四喜丸子,一般的狮子头都是将肥七瘦三的猪肋条肉剁成石榴粒状后制成丸子,微火焖炖熟后丸子表面的肥肉大体溶化但没全部溶化,瘦肉则相对显得凸起,给人一种毛毛糙糙的感觉,因丸子大而表面毛糙于是便称之为“狮子头”了。猪肉的营养价值和鸡肉不一样,鸡肉的蛋白质含量更高,脂肪更少,易于消化和吸收。
发明内容
本发明的目的是提供一种以鸡肉为主要原料的彰德府营养狮子头。
为了达到上述目的本发明采用以下技术方案:彰德府营养狮子头由以下原料按重量份组成:鸡肉30~50,水10~30、魔芋粉1~8、鸡肝1~15、藕1~6。
在原料中加入以下重量份的辅料:骨汤1~10、味精0.1~0.5、盐0.4~3、面包屑1~10、增香剂0.2~2、生姜0.3~0.5、葱1~3、鸡蛋1~3、干淀粉1~6、天然香辛料0.8~1.8、保水剂0.5~1.2。
鸡肉为冰鲜鸡肉,水为电解功能水。
所述的彰德府营养狮子头加工工艺如下:
a原料预处理后,在斩拌机内高速斩拌,同时加入各种辅料,均匀混合;
b利用冰水来控制料馅出锅温度在8℃以下;
c然后用丸子机成型,接着进行煮制;
d然后将冷却的彰德府营养狮子头及时送往速冻隧道进行速冻速冻;
e将速冻好的彰德府营养狮子头进行包装,然后将成品放入-18℃低温库储藏。
采用本发明技术方案制成的彰德府营养狮子,色泽金黄,味道鲜美,香而不腻,凸显了鸡肉作为主原料的优点,更容易消化和吸收。

彰德府营养狮子头由以下原料按重量份组成:鸡肉35,水15、魔芋粉5、鸡肝7、藕3。
在原料中加入以下重量份的辅料:骨汤1、味精0.1、盐0.4、面包屑1、增香剂0.2、生姜0.3、葱1、鸡蛋1、干淀粉1、天然香辛料0.8、保水剂0.5。
加工工艺同实施例1。

在原料中加入以下重量份的辅料:骨汤5、味精0.3、盐2、面包屑5、增香剂1、生姜0.4、葱2、鸡蛋2、干淀粉3、天然香辛料1.3保水剂0.8。
加工工艺同实施例1。

彰德府营养狮子头由以下原料按重量份组成:鸡肉45,水23、魔芋粉3、鸡肝12、藕5。
在原料中加入以下重量份的辅料:骨汤7、味精0.2、盐2.5、面包屑8、增香剂1.6、生姜0.5、葱3、鸡蛋3、干淀粉4、天然香辛料1.5、保水剂1。
加工工艺同实施例1。

彰德府营养狮子头由以下原料按重量份组成:鸡肉35,水18、魔芋粉3、鸡肝3、藕2。
在原料中加入以下重量份的辅料:骨汤3、味精0.3、盐1.7、面包屑7、增香剂0.5、生姜0.4、葱2、鸡蛋2、干淀粉4、天然香辛料1.2、保水剂1.2。
加工工艺同实施例1。

1.一种彰德府营养狮子头,其特征是由以下原料按重量份组成:鸡肉30~50,水10~30、魔芋粉1~8、鸡肝1~15、藕1~6。
2.根据权利要求1所述的彰德府营养狮子头,其特征是在原料中加入以下重量份的辅料:骨汤1~10、味精0.1~0.5、盐0.4~3、面包屑1~10、增香剂0.2~2、生姜0.3~0.5、葱1~3、鸡蛋1~3、干淀粉1~6、天然香辛料0.8~1.8、保水剂0.5~1.2。
3.根据权利要求1所述的彰德府营养狮子头,其特征是:鸡肉为冰鲜鸡肉,水为电解功能水。
