Abstract

"HIDROLISADO DE PROTEìNA CULTIVADO". Esta invenção refere-se a um processo para a produção de uma base saborosa cultivada que consiste em hidrolisar um material contendo proteína usando-se uma combinação de pelo menos uma enzima com pelo menos uma cepa de bactéria do ácido láctico termotolerante selecionada por sua capacidade em proporcionar uma atividade de glutaminase. A invenção refere-se também a uma cepa isolada de cepas de bactérias do ácido láctico termotolerantes selecionada por sua capacidade em proporcionar uma atividade de glutaminase e aos seus usos no preparo de temperos, condimentos e produtos de culinária e de alimentação de animais domésticos.
