Abstract
Un método para preparar una planta de cebada que tiene una mutación en el gen LOX-1 de modo que codifica una proteína LOX-1 mutada que le falta todo o al menos una porción de aminoácidos 520 a 862 del tipo salvaje de cebada LOX-1 (SEQ ID Nº 3 ó 7), en donde dicha planta de cebada tiene pérdida total de actividad LOX-1, dicho método comprendiendo los pasos de: (i) mutar plantas de cebada y/o granos de cebada y/o embriones de cebada; (ii) opcionalmente, cosechar dichas plantas de cebada y/o granos de cebada y/o embriones de cebada mutados; (iii) determinar la ausencia o presencia de una mutación en el gen para LOX-1 en la cebada, donde dicha mutación lleva a un gen que codifica una forma de polipéptidos de LOX-1, que le falta todo o al menos una porción de aminoácidos 520 a 862 del tipo salvaje de cebada LOX-1 (SEQ ID Nº 3 ó 7); y (iv) seleccionar plantas que porten la mutación provista en (iii). Composiciones de malta producidas a partir de dicha planta de cebada procesada y métodos para la preparación de las mismas.
