Abstract

Una cebada nula de LOX-1 yproductos de la planta producidos de éste, tal como malta manufacturada utilizando granos de cebada defectuosos en la síntesis de la enzima lipoxigenasa-1 que convierte lo ácidos grasos. Dicha enzima cuenta para la actividad principal relacionada a la conversion del ácido linoleíco en ácido 9-hidroperoxi octadecadienoíco, un metabolito de la vía lipoxigenasa, el cual a través de reacciones espontáneas o enzimáticas adicionales podría llevar a la aparicion del trans-2-nonenal. Permite a los fabricantes de cerveza producir una cerveza exenta de malos sabores detectables específicos del trans-2-nonenal, aun después del almacenamiento prolongado de la bebida. Reivindicacion 1: Una planta de cebada, o una parte de ésta, que comprende menos del 5% de la actividad de la LOX de una planta de cebada del tipo salvaje.
