Abstract

Согласно данному изобретению обеспечен нуль-LOX-1-ячмень и продукты растительного происхождения, полученные из него, такие как солод, приготовленный с использованием зерен ячменя, дефектных в синтезе превращающего жирные кислоты фермента липоксигеназы-1. Указанный фермент является ответственным за основную активность, связанную с превращением линолевой кислоты в 9-гидропероксиоктадекадиеновую кислоту, метаболит липоксигеназного пути, которая посредством дополнительных ферментативных и спонтанных реакций может приводить к появлению транс-2-ноненаля. Данное изобретение позволяет пивоварам производить пиво, лишенное детектируемых транс-2-ноненаль-специфических привкусов, даже после продолжительного хранения этого напитка.
