Abstract

CEVADA PARA A PRODUçãO DE BEBIDA COM SABOR ESTáVEL De acordo com a invenção, fornece-se cevada isenta de LOX-1 e produtos vegetais produzidos a partir dela, tal como malte fabricado usando grãos de cevada defeituosos na síntese da enzima conversora de ácidos graxos, lipoxigenase-1. A dita enzima é responsável pela principal atividade relacionada à conversão de ácido linoléico em ácido 9-hidroperoxi-octadecadienóico, um metabólito da via de lipoxigenase, o qual, através de reações enzimáticas ou espontâneas adicionais, pode levar ao aparecimento de trans-2-nonenal. A invenção permite que os cervejeiros produzam cerveja isenta de desvios de sabor específicos, detectáveis, de 2-nonenal, mesmo depois de estocagem prolongada da bebida.
