このような具材入り液体調味料では、具材とともに醤油や味噌などの発酵調味料が用いられており、具材と発酵調味料を混合加熱した際の具材の風味劣化を抑制し、液体調味料全体の風味及び旨みの増強を目的とする工夫がなされている。例えば、特許文献1では、野菜粒子及び/又は果汁含有調味料の製造工程において、生醤油に含まれるホスファターゼによって旨み成分である5’-ヌクレオチドの分解消失を抑えるために、生醤油を5’-ヌクレオチドを除く原料の一部(乾燥野菜や糖類)と混和したものを加熱した後、5’-ヌクレオチドと原料の残部を混和し、再び加熱することによって、野菜粒子及び/又は果汁の風味を改善する方法が記載されている。また、特許文献2では、ニンニク及び赤唐辛子等のキムチ特有の素材に対して、有機酸、植物性油脂、植物性タンパク加水分解物を一定量添加することによって、キムチ特有の発酵感や熟成感と、香味バランスを有する加熱調理用液体調味料が得られることが記載されている。しかしながら、これらの方法では、調味液中の具材及び調味料全体に好ましい発酵感を持たせることができず、具材の食べごたえが十分に感じられない。
本発明は、具材及び調味料全体に好ましい発酵感が増強され、かつ加熱調理後においても好ましい発酵感と具材の食感が損なわれず、具材の食べごたえが十分である、具材含有液状調味料を提供することを課題とする。
そこで本発明者は、上記課題を解決すべく鋭意研究を重ねた結果、具材含有液状調味料において、脂質を含有する発酵物と食酢を添加した調味液を、乾燥具材と共に密閉容器内で加熱することによって、発酵物由来の風味が調味液から蒸発せずに調味液に留まり、発酵感が具材にも調味料全体にも増強されること、また、加熱調理時の熱負荷や撹拌による物理的負荷によっても、発酵感と具材の食感が損なわれず、具材の食べごたえが十分であることを見出し、本発明を完成させるに至った。
ここで、「発酵感」とは、例えば、キムチなどの発酵食品特有の熟成感、すっきりした酸味、及び旨味の感じ方を意味する。また、「具材の食べごたえ」とは、具材本来の食感と具材の発酵風味の両方の満足度を意味する。
すなわち、本発明は、以下の発明を包含する。
(1)具材、脂質含有発酵物、及び食酢を含有する、密閉容器入り具材含有液状調味料。
(2)前記脂質含有発酵物中の脂質含有量が、脂質含有発酵物全量に対して1~80質量%である、(1)に記載の密閉容器入り具材含有液状調味料。
(3)前記具材が乾燥具材である、(1)又は(2)に記載の密閉容器入り具材含有液状調味料。
(4)前記具材と脂質含有発酵物の含有比が質量比で95:1~5:1である、(1)~(3)のいずれかに記載の密閉容器入り具材含有液状調味料。
(5)前記具材の含有量が、湿重量で調味料全体の10~80質量%である、(1)~(4)のいずれかに記載の密閉容器入り具材含有液状調味料。
(6)前記脂質含有発酵物が、豆板醤、コチュジャン、甜麺醤、味噌、チーズ、発酵バター、及びアンチョビから選ばれる少なくとも1種である、(1)~(5)のいずれかに記載の密閉容器入り具材含有液状調味料。

本願は、2018年1月10日に出願された日本国特許出願2018-001788号の優先権を主張するものであり、該特許出願の明細書に記載される内容を包含する。
本発明によれば、発酵感が具材及び調味料全体に増強され、加熱調理時の熱負荷や撹拌による物理的負荷によっても具材本来の食感が損なわれず、具材の食べごたえが十分である具材含有液状調味料が提供される。本発明の具材含有液状調味料は、具材に発酵物由来の脂質が吸収されているので、加熱調理時にも発酵物由来の風味が保持され、加熱調理に使用するのに適している。
1.密閉容器入り具材含有液状調味料
本発明の密閉容器入り具材含有液状調味料(以下、「本発明の液状調味料」という)は、具材、脂質含有発酵物、及び食酢を含有することを特徴とする。
本発明の密閉容器入り具材含有液状調味料(以下、「本発明の液状調味料」という)は、具材、脂質含有発酵物、及び食酢を含有することを特徴とする。
(具材)
本発明の液状調味料において、具材は、乾燥具材、生具材、塩蔵した具材のいずれも用いることができるが、水分を含んだ具材は、嵩が高くなるため密閉容器に充填しづらく、また、調味液中の発酵物に由来する脂質を吸収しやすいため、乾燥具材が好ましい。乾燥具材以外の具材を用いる場合は、乾燥具材と併用することが好ましい。
本発明の液状調味料において、具材は、乾燥具材、生具材、塩蔵した具材のいずれも用いることができるが、水分を含んだ具材は、嵩が高くなるため密閉容器に充填しづらく、また、調味液中の発酵物に由来する脂質を吸収しやすいため、乾燥具材が好ましい。乾燥具材以外の具材を用いる場合は、乾燥具材と併用することが好ましい。
本発明の液状調味料において、具材の形状は、直方体状、立方体(ダイス)状、球状、粒状など、いずれの形状でもよいが、直方体状が好ましい。ここで、具材の形状は、調味液中で膨潤後の具材の形状を意味する。
本発明の液状調味料において、具材の「長辺」とは、調味液中で膨潤後の具材の長さを意味し、液状調味料から具材を分取して測定した値である。また、具材の形状との関係において、長辺は、具材が直方体状または立方体状(ダイス状)に近い形状の場合は、最長辺の長さ、球状や粒状に近い形状の場合は、最長の直径の長さ、その他の形状であれば、最長の長幅が該当する。本発明の液状調味料において、調味液中で膨潤後の具材の長辺は、好ましくは3~60mmであり、より好ましくは5~50mmであり、さらに好ましくは7~40mmであり、最も好ましくは10~40mmである。膨潤後の具材の長辺が3mm未満の場合には、具材本来の食感が不十分なだけでなく、具材及び調味料全体に発酵感が十分に感じられず、食べごたえが得られない。また60mmを超えると、調味液が具材に浸透しづらく、具材及び調味料全体の発酵感が満足できるものではない。
本発明の液状調味料において、「具材の含有量」とは、調味液中で膨潤後の具材の含有量(湿重量)を意味し、上記具材の長辺を測定する際と同様に、調味液中で膨潤後の具材を液状調味料から分取して重量を測定し、液状調味料全体の重量に対する長辺が3~60mmである具材の重量の割合を質量%として示したものである。本発明の液状調味料における具材の含有量は、湿重量で調味料全体の10~80質量%、好ましくは15~75質量%、より好ましくは20~75質量%、さらに好ましくは25~70質量%、さらにより好ましくは25~65質量%、最も好ましくは40~65質量%である。具材の含有量が、湿重量で10質量%未満であると、具材及び調味料全体に発酵感が十分に得られない。また具材の含有量が、湿重量で80質量%を超えると、具材及び調味料全体に十分な発酵感が得られず、調味液が少なすぎると調理に使用する際の作業性が悪くなる。
本発明の液状調味料に含有させる具材が乾燥具材である場合、当該乾燥具材の水分量は、余分な水分を調味液に移行させない点から、10質量%以下が好ましく、8質量%以下がより好ましく、5質量%以下がさらに好ましい。
前記乾燥具材は、乾燥前に糖類と混合、あるいは糖類含有溶液に浸漬して加熱混合することにより調製したものでも良い。具体的には、糖類としては、ブドウ糖、果糖、ショ糖、乳糖、澱粉分解物等が挙げられ、二種以上を用いてもよい。糖類の添加量、混合時間、及び糖類含有溶液に浸漬する場合の濃度、加熱混合温度及び時間、ならびに続く乾燥の温度及び時間は、具材の種類、サイズ等により任意に選択すればよいが、糖類と混合する場合の糖類の添加量は乾燥具材に対して5~30質量%が好ましく、糖類含有溶液に浸漬する場合の糖類の濃度は5~30質量%が好ましく、溶液中での加熱混合条件は50~80℃で10分~12時間が好ましい。
また、前記乾燥具材は、カットした具材をカルシウム塩溶液中で加熱混合した後、乾燥したものでも良い。カルシウム塩溶液の濃度、加熱混合温度及び時間、ならびに続く乾燥の温度及び時間は、具材の種類、サイズ等により任意に選択すればよい。具体的には、カットした具材を、塩化カルシウム、乳酸カルシウム、酢酸カルシウム等のカルシウム塩を水に0.5~5質量%となるように溶解した水溶液中で50~80℃で1~120分間撹拌した後に、処理液と分離し、液切りを行った後、65~80℃で3~12時間乾燥すれば良い。上記カルシウム水溶液に、ブドウ糖、果糖、ショ糖、乳糖、澱粉分解物等の糖類を5~30質量%含有させることもできる。
前記乾燥具材は、所定の大きさにカットした後に乾燥又は乾燥後にカットすることにより製造できる。乾燥方法としては、熱風乾燥、凍結乾燥、減圧加熱乾燥、マイクロウェーブ乾燥、天日乾燥、自然乾燥等が挙げられる。
具材が野菜の場合、野菜の種類は特に限定されないが、加熱調理して食されるものが好ましく、例えばタマネギ、キャベツ、白菜、ニンジン、ピーマン、大根、大根葉、ビート、レンコン、ゴボウ、ネギ、シソ、セロリ、パセリ、パプリカ、トマト、きゅうり、とうもろこし(スイートコーン)、カリフラワー、なす、ジャガイモ、サツマイモ、サトイモ、ヤマイモ、カボチャ等が挙げられる。このうち、タマネギ、キャベツ、白菜、ニンジン、ネギ、セロリ、パプリカが好ましく、タマネギ、キャベツ、白菜、ニンジンがより好ましい。これらの野菜は、一種又は二種以上を用いることができる。
野菜以外の具材としては、例えば、果実類(レモン、ゆず、すだち、ライム、みかん、グレープフルーツ、りんご、パイナップル、桃、ぶどう、いちご、梨、バナナ、メロン、キウイ、カシス、アセロラ、ブルーベリー、アプリコット、グアバ、プラム、マンゴー、パパイヤ、ライチ等)、種実類(アーモンド、ピーナッツ、松の実、トウモロコシ、ココナッツ、ダイズ等)、きのこ類(しめじ、しいたけ、マッシュルーム、エリンギ、マイタケ等)、豆類(大豆、えんどう豆、レンズ豆、ひよこ豆、エジプト豆等)、魚介類(鰹、鮪、鰯、イカ、エビ、アサリ、ホタテ、ムール貝等)、畜肉類又は畜肉加工品(牛肉、鶏肉、豚肉、ハム、ベーコン、ソーセージ等)、海藻類(ひじき、わかめ、昆布等)、卵類の乾燥物等が挙げられる。これらの具材は、一種又は二種以上を用いることができる。
(脂質含有発酵物)
本発明の液状調味料に使用する「脂質含有発酵物」は、所定量の脂質を含有するものであれば、植物発酵物であっても乳発酵物であっても魚介類発酵物であってもよい。植物発酵物は、穀類(米、大麦、小麦など)、豆類(大豆、小豆など)、野菜・果実類(白菜、大根など)の植物原料を微生物により発酵・熟成させたものであって、豆板醤、コチュジャン、テンジャン、甜麺醤、XО醤、豆鼓醤、芝麻醤等の醤類、味噌類が挙げられる。ここで、味噌類としては、例えば、麦味噌、米味噌、豆味噌、調合味噌などに加えて、その製法に起因する色の違いによって命名される赤味噌・白味噌・淡色味噌等が挙げられる。また、乳発酵物は、乳原料に乳酸菌等を接種して発酵させたものであって、例えば、チーズ、ヨーグルト、発酵バター等が挙げられる。魚介類発酵物としては、魚介類を微生物により発酵させたものであって、例えばアンチョビ、かつお節、塩辛等が挙げられる。これらの脂質含有発酵物は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
本発明の液状調味料に使用する「脂質含有発酵物」は、所定量の脂質を含有するものであれば、植物発酵物であっても乳発酵物であっても魚介類発酵物であってもよい。植物発酵物は、穀類(米、大麦、小麦など)、豆類(大豆、小豆など)、野菜・果実類(白菜、大根など)の植物原料を微生物により発酵・熟成させたものであって、豆板醤、コチュジャン、テンジャン、甜麺醤、XО醤、豆鼓醤、芝麻醤等の醤類、味噌類が挙げられる。ここで、味噌類としては、例えば、麦味噌、米味噌、豆味噌、調合味噌などに加えて、その製法に起因する色の違いによって命名される赤味噌・白味噌・淡色味噌等が挙げられる。また、乳発酵物は、乳原料に乳酸菌等を接種して発酵させたものであって、例えば、チーズ、ヨーグルト、発酵バター等が挙げられる。魚介類発酵物としては、魚介類を微生物により発酵させたものであって、例えばアンチョビ、かつお節、塩辛等が挙げられる。これらの脂質含有発酵物は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
上記の脂質含有発酵物中の脂質含有量は、発酵感を高める点から、脂質含有発酵物全量に対して1~80質量%が好ましく、1.5~70質量%がより好ましく、1.5~60質量%がさらに好ましく、1.5~50質量%が最も好ましい。脂質含有発酵物中の脂質含有量が1質量%未満であると、具材に十分な発酵感が得られず、80質量%より多いと油っぽくなり好ましくない。また、脂質含有発酵物を二種以上用いる場合は、合計の脂質含有量が、上記範囲であればよい。脂質含有量は、ソックスレー抽出法(日本食品分析表分析マニュアル)によって測定することができる。
本発明の液状調味料において、「具材と脂質含有発酵物の含有比」とは、調味液中で膨潤後の具材の含有量(湿重量)と脂質含有発酵物の含有量の質量比である。本発明の液状調味料における、上記の具材と脂質含有発酵物の含有比は質量比で、95:1~5:1が好ましく、60:1~7:1がより好ましく、40:1~9:1がさらに好ましく、30:1~9:1がさらにより好ましく、28:1~9:1が最も好ましい。脂質含有発酵物に対する具材の含有比が上記範囲内であると発酵感の強さや具材の食べごたえが十分に得られる。一方、脂質含有発酵物に対する具材の含有比が上記範囲内でないと、発酵感が弱くなり、好ましくない。
(食酢)
本発明の液状調味料に使用する「食酢」には、米や麦などの穀物や果汁を主原料として生産される醸造酢と、氷酢酸や酢酸の希釈液に砂糖等の調味料を加えるか、又はそれに醸造酢を加えた合成酢があり、本発明においてはいずれも使用できる。醸造酢としては、例えば、穀物酢(米酢、玄米酢、黒酢、粕酢、麦芽酢、はと麦酢、大豆酢等)、果実酢(りんご酢、ぶどう酢、レモン酢、カボス酢、ワイン酢、バルサミコ酢等)、エタノールを原料とした酢酸発酵によって製造される酒精酢、中国酢、シェリー酢などが挙げられ、また、合成酢としては、氷酢酸又は酢酸を水で適宜希釈したものなどが挙げられる。これらの食酢は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
本発明の液状調味料に使用する「食酢」には、米や麦などの穀物や果汁を主原料として生産される醸造酢と、氷酢酸や酢酸の希釈液に砂糖等の調味料を加えるか、又はそれに醸造酢を加えた合成酢があり、本発明においてはいずれも使用できる。醸造酢としては、例えば、穀物酢(米酢、玄米酢、黒酢、粕酢、麦芽酢、はと麦酢、大豆酢等)、果実酢(りんご酢、ぶどう酢、レモン酢、カボス酢、ワイン酢、バルサミコ酢等)、エタノールを原料とした酢酸発酵によって製造される酒精酢、中国酢、シェリー酢などが挙げられ、また、合成酢としては、氷酢酸又は酢酸を水で適宜希釈したものなどが挙げられる。これらの食酢は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
本発明の液状調味料中の食酢の含有量としては、下記に示すpHの範囲となるように使用するのが好ましく、酢の種類によって任意に調整できる。
(その他の原料など)
本発明の液状調味料には、本発明の効果を損なわない限りにおいて、上記原料に加えて、糖類(高甘味度甘味料を含む)、食塩、アミノ酸系調味料、核酸系調味料、有機酸系調味料、風味原料、旨味調味料、酒類、フレーバー、香辛料、香辛料抽出物などの呈味・風味成分、粘度調整剤、安定剤、着色料、カルシウム塩等などの添加剤などを用いることができる。これらの成分の含有量は、特に限定はされず、用途に応じて適宜決定することができる。
本発明の液状調味料には、本発明の効果を損なわない限りにおいて、上記原料に加えて、糖類(高甘味度甘味料を含む)、食塩、アミノ酸系調味料、核酸系調味料、有機酸系調味料、風味原料、旨味調味料、酒類、フレーバー、香辛料、香辛料抽出物などの呈味・風味成分、粘度調整剤、安定剤、着色料、カルシウム塩等などの添加剤などを用いることができる。これらの成分の含有量は、特に限定はされず、用途に応じて適宜決定することができる。
上記糖類としては、例えば、砂糖、麦芽糖、果糖、異性化液糖、ブドウ糖、水あめ、デキストリンやソルビトール、マルチトール、キシリトールなどの糖アルコール類等が挙げられる。これらの糖類は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
上記高甘味度甘味料としては、例えば、アスパルテーム、アセスルファムカリウム、スクラロース、ネオテーム、甘草抽出物、ステビアやその酵素処理物等が挙げられる。これらの高甘味度甘味料は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
上記食塩はそのものでもよいが、食塩を含有する食品でも良い。食塩を含有する食品は特に限定はないが、例として、醤油、出汁等が挙げられる。上記醤油としては特に限定されるものではないが、例えば濃口醤油、淡口醤油、白醤油、溜り醤油、再仕込み醤油等が挙げられる。これらの醤油は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
上記アミノ酸系調味料としては、例えば、L-グルタミン酸ナトリウム、DL-アラニン、グリシン、L-又はDL-トリプトファン、L-フェニルアラニン、L-又はDL-メチオニン、L-リシン、L-アスパラギン酸、L-アスパラギン酸ナトリウム、L-アルギニン等が挙げられる。これらのアミノ酸系調味料は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
上記核酸系調味料としては、例えば、5’-イノシン酸二ナトリウム、5’-グアニル酸二ナトリウム、5’-ウリジル酸二ナトリウム、5’-シチジル酸二ナトリウム、5’-リボヌクレオチドカルシウム、5’-リボヌクレオチド二ナトリウム等が挙げられる。これらの核酸系調味料は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
上記有機酸系調味料としては、例えば、クエン酸カルシウム、クエン酸三ナトリウム、グルコン酸カリウム、グルコン酸ナトリウム、コハク酸、コハク酸一ナトリウム、コハク酸二ナトリウム、酢酸ナトリウム、DL-酒石酸水素カリウム、L-酒石酸水素カリウム、DL-酒石酸ナトリウム、L-酒石酸ナトリウム、乳酸カリウム、乳酸カルシウム、乳酸ナトリウム、フマル酸一ナトリウム、DL-リンゴ酸ナトリウム等が挙げられる。これらの有機酸系調味料は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。二種以上の有機酸系調味料を併用することで、双方の呈味が相乗的に高まるため好ましい。
上記風味原料としては、例えば、鰹だし、昆布だし、野菜エキス、鰹エキス、昆布エキス、魚介エキス、畜肉エキス、果汁等が挙げられる。これらの風味原料は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
上記旨味調味料としては、例えば、たん白加水分解物、酵母エキス等が挙げられる。これらの旨味調味料は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
上記酒類としては、清酒、合成清酒、みりん、焼酎、ワイン、リキュール、紹興酒等が挙げられる。これらの酒類は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
上記フレーバーとしては、例えば、ジンジャーフレーバー、ガーリックフレーバー、マスタードフレーバー、オニオンフレーバー、ゴマフレーバー、ねぎフレーバー、ニラフレーバー、しそフレーバー、わさびフレーバー、レモンフレーバー等が挙げられる。これらのフレーバーは、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
上記香辛料(spicy seasoning)とは、特有の香り、刺激的な呈味、色調を有し、香り付け、消臭、調味、着色等の目的で飲食品に配合する植物体の一部(植物の果実、果皮、花、蕾、樹皮、茎、葉、種子、根、地下茎など)をいい、香辛料にはスパイス(spice)又はハーブ(herb)が含まれる。スパイスとは香辛料のうち、利用部位として茎と葉と花を除くものをいい、例えば、胡椒(黒胡椒、白胡椒、赤胡椒)、ニンニク、ショウガ、ごま(ごまの種子)、唐辛子、ホースラディシュ(西洋ワサビ)、マスタード、ケシノミ、ナツメグ、シナモン、カルダモン、クミン、サフラン、オールスパイス、クローブ、山椒、ウイキョウ、カンゾウ、フェネグリーク、ディルシード、カショウ、ロングペパー、オリーブの実などが挙げられる。また、ハーブとは香辛料のうち、茎と葉と花を利用するものをいい、例えば、クレソン、コリアンダー、シソ、セロリ、タラゴン、チャイブ、チャービル、セージ、タイム、ローレル、ニラ、パセリ、マスタードグリーン(からしな)、ミョウガ、ヨモギ、バジル、オレガノ、ローズマリー、ペパーミント、サボリー、レモングラス、ディル、ワサビ葉、山椒の葉などが挙げられる。
上記香辛料抽出物としては、一般的に「香辛料」又は「スパイス」と表示される食品の抽出物であれば何でもよく、例えば、唐辛子抽出物、マスタード抽出物(カラシ抽出物)、ショウガ抽出物(ジンジャー抽出物)、ワサビ抽出物、ペパー抽出物、ニンニク抽出物(ガーリック抽出物)、オニオン抽出物、サンショウ抽出物等が挙げられる。これらの香辛料抽出物は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
上記粘度調整剤としては、例えば、アラビアガム、アルギン酸、アルギン酸ナトリウム、カラギナン、カラヤガム、寒天、ローカストビーンガム、キサンタンガム、グァーガム、ジェランガム、セルロース、タマリンドシードガム、タラガム、トラガントガム、プルラン、ペクチン、キチン、キトサン、加工澱粉等が挙げられる。これらの粘度調整剤は、一種のみを単独で使用してもよく、二種以上を任意の組み合わせ及び比率で併用してもよい。
本発明の液状調味料中の調味液のpHは、2~5であるのが好ましく、2.5~4.5がより好ましく、3~4がさらに好ましい。pHが上記の範囲であると、食感維持と発酵感を高める上で好ましい。
本発明の液状調味料は、鍋用調味料、麺用調味料、米飯用調味料、釜飯用調味料、あんかけ用調味料、焼肉用調味料、惣菜用調味料、豆腐用調味料、チャーハン用調味料、天丼用調味料、餃子用調味料、和え物用調味料、ハンバーグ用調味料、ステーキ用調味料、ソテー用調味料、電子レンジ用調味料、スンドゥブ用調味料、炒め用調味料、炊き込みご飯用調味料、五目ご飯用調味料、キムチ用調味料、揚げ物用調味料、ラーメン用調味料、煮込み用調味料、しゃぶしゃぶ用調味料、ディップ用調味料、パスタ用調味料、スープ用調味料、サラダ用調味料、サンドイッチ用調味料等に用いることができる。本発明の液状調味料は、野菜類を煮込んだ場合でも加熱調理時でも好ましい発酵感、熟成感が強調され、不快と感じられる独特の発酵臭や後味を感じない。よって、本発明の液状調味料は、加熱調理時に添加する加熱用調味料、あるいは加熱調理後にかけて使用する加熱料理用調味料として有用であり、焼肉用調味料、惣菜用調味料、パスタ用調味料、チャーハン用調味料、スープ用調味料、餃子用調味料として使用するのが特に好ましい。
本発明において使用する容器としては、密閉可能であれば、材質や形状は特に限定はされないが、例えば、プラスチック製容器、パウチ(ポリエチレンパウチ、アルミパウチ)、ペットボトル、スチール缶、アルミ缶、瓶容器などが挙げられる。なかでも、具材と調味液の充填及び取り出しが容易であることから広口型容器が好ましく、高い密閉性と耐熱性を確保するために、口部にフィルム材をヒートシールすることによって密閉できるプラスチック製のカップ型容器がより好ましい。
2.密閉容器入り具材含有液状調味料の製造方法
本発明の密閉容器入り具材含有液状調味料は、調味液中で膨潤後の具材の長辺が3~60mmである具材を、湿重量で調味料全体の10~80質量%含有するように密閉可能な容器に投入した後、食酢及び脂質含有発酵物を含む調味液を添加し、容器を密閉する工程と、具材と調味液を充填した密閉容器を60~100℃で20~120分間撹拌することなく加熱処理する工程と、加熱処理後、常温になるまで放置又は冷却する工程を含む方法により製造できる。上記加熱処理は、具材と調味液を充填し密閉した容器を、熱風、熱水、熱水シャワー、又は蒸気等の存在下に置くことにより行い、加熱処理中に撹拌は行わない。加熱処理は、昇温加熱処理、又は定温加熱処理により行うことが出来る。昇温加熱処理とは、特定の温度に達するまで温度を上昇させ、達温した時点で、加熱を終了する方法を意味し、定温加熱処理とは、ある一定の温度まで加熱した後、一定の温度で保持する加熱処理方法を意味する。加熱温度は、加熱環境下の温度で、60~100℃が好ましく、65~95℃がより好ましく、70~95℃がさらに好ましい。加熱処理の時間は、昇温加熱処理の場合、60℃から一定温度まで達する時間を意味し、定温加熱処理の場合、60℃から一定温度まで達する時間及び一定温度で保つ時間の合計の時間を意味する。前記加熱時間は、温度により適宜調整すればよいが、20~120分間が好ましく、20~100分間がより好ましく、30~90分間がさらに好ましい。上記加熱時間の内、定温加熱処理の場合、一定温度で保つ時間が5~110分間であることが好ましく、5~90分間であることがより好ましく、10~80分間であることがさらにより好ましい。また、食酢及び脂質含有発酵物を含む調味液は、具材以外の原料を加熱しながら、又は加熱をせずに混合撹拌することで調製できる。前記の混合する際の温度は、調味液に添加する脂質含有発酵物の発酵感が飛散してしまわないようにするために、10~60℃が好ましく、10~50℃がより好ましく、10~30℃がさらに好ましく、15~25℃が特に好ましい。最も好ましくは、15~25℃(室温)で加熱せずに混合撹拌することである。前記調味液の混合時間は、温度により適宜調整すればよいが、1~60分間が好ましく、3~30分間がより好ましく、5~30分間がさらに好ましい。

以下、実施例により本発明をさらに具体的に説明する。但し、本発明はこれらに限定されるものではない。
(試験例1)具材含有調味料の加熱条件の検討
(1)試験品の調製(実施例1~4、及び比較例1~3)
表1に示す配合割合(質量%)で、濃口醤油(食塩分18%)、砂糖、液糖、醸造酢(酸度15%)、及び脂質含有発酵物[豆板醤(脂質含有量1.8質量%)とコチュジャン(脂質含有量1.5質量%)]を水に溶解し、常温(15~25℃)で5分間混合撹拌(撹拌条件:高速)して調味液を調製した。タマネギの外皮をとり、短辺が5mm、長辺が40mmにカットした後、熱風乾燥して乾燥タマネギを調製した。乾燥タマネギを、液状調味料全量に対して調味液中で膨潤後の含有量が55質量%(具材と脂質含有発酵物の含有比=22:1)となるように、広口カップに充填した後、上記調味液を投入し、フィルムシートでシールした。次に、実施例1~4は、高温加熱処理機により蒸気で加熱を開始し、表1に示す温度まで15分間昇温した後、表1に示す時間、加熱処理を行った(定温加熱処理)。各加熱処理の後、それぞれ水で室温まで冷却し、試験品の密閉容器入り具材含有液状調味料を調製した(密閉系/撹拌なし)。比較例1は、調味液を90℃に達するまで10分間混合撹拌(撹拌条件:通常)して調製する以外は、実施例2と同様にして具材含有液状調味料を調製した。比較例2、3の試験品については、調味液の原料と具材をステンレス容器に投入し、表1に示す温度及び時間で撹拌しながら加熱混合することによって具材含有液状調味料を調製した(開放系/撹拌あり)。
(1)試験品の調製(実施例1~4、及び比較例1~3)
表1に示す配合割合(質量%)で、濃口醤油(食塩分18%)、砂糖、液糖、醸造酢(酸度15%)、及び脂質含有発酵物[豆板醤(脂質含有量1.8質量%)とコチュジャン(脂質含有量1.5質量%)]を水に溶解し、常温(15~25℃)で5分間混合撹拌(撹拌条件:高速)して調味液を調製した。タマネギの外皮をとり、短辺が5mm、長辺が40mmにカットした後、熱風乾燥して乾燥タマネギを調製した。乾燥タマネギを、液状調味料全量に対して調味液中で膨潤後の含有量が55質量%(具材と脂質含有発酵物の含有比=22:1)となるように、広口カップに充填した後、上記調味液を投入し、フィルムシートでシールした。次に、実施例1~4は、高温加熱処理機により蒸気で加熱を開始し、表1に示す温度まで15分間昇温した後、表1に示す時間、加熱処理を行った(定温加熱処理)。各加熱処理の後、それぞれ水で室温まで冷却し、試験品の密閉容器入り具材含有液状調味料を調製した(密閉系/撹拌なし)。比較例1は、調味液を90℃に達するまで10分間混合撹拌(撹拌条件:通常)して調製する以外は、実施例2と同様にして具材含有液状調味料を調製した。比較例2、3の試験品については、調味液の原料と具材をステンレス容器に投入し、表1に示す温度及び時間で撹拌しながら加熱混合することによって具材含有液状調味料を調製した(開放系/撹拌あり)。
(2)官能評価試験
(1)で調製した試験品の液状調味料について、「発酵感の強さ」、「発酵感の好ましさ」、及び「具材の食べごたえ」の官能評価を行った。また、当該液状調味料を用いて加熱調理した肉料理の「発酵感の強さ」、「発酵感の好ましさ」と、肉料理に用いた際の液状調味料中の具材の「食べごたえ」の官能評価を行った。肉料理の方法として、フライパンを予備加熱し、薄切り牛肉約250gを中火で焼き色が付くまで加熱した。続いて、試験品の広口カップ中の調味料210gを加え、中火で2分加熱しながら肉に十分からめた。ここで「発酵感の好ましさ」とは、前記の「発酵感」の熟成感、すっきりした酸味、及び旨味のバランスが良く、臭みや刺激臭が感じられない風味の特徴を示す。また、具材の「食べごたえ」とは、喫食時に具材の食感が損なわれずかつ具材から発酵感を感じられる状態を示す。
(1)で調製した試験品の液状調味料について、「発酵感の強さ」、「発酵感の好ましさ」、及び「具材の食べごたえ」の官能評価を行った。また、当該液状調味料を用いて加熱調理した肉料理の「発酵感の強さ」、「発酵感の好ましさ」と、肉料理に用いた際の液状調味料中の具材の「食べごたえ」の官能評価を行った。肉料理の方法として、フライパンを予備加熱し、薄切り牛肉約250gを中火で焼き色が付くまで加熱した。続いて、試験品の広口カップ中の調味料210gを加え、中火で2分加熱しながら肉に十分からめた。ここで「発酵感の好ましさ」とは、前記の「発酵感」の熟成感、すっきりした酸味、及び旨味のバランスが良く、臭みや刺激臭が感じられない風味の特徴を示す。また、具材の「食べごたえ」とは、喫食時に具材の食感が損なわれずかつ具材から発酵感を感じられる状態を示す。
官能評価は、訓練された官能検査員7名にて、下記の評価基準により行った。評価項目毎の評価点の算出は、7名の評価を加重平均し、小数点2位以下を四捨五入した。5点評価の2.5点を合格点(効果あり)とし、2.5点よりも高い3点を良好な効果があるものとし、3.5点以上をより良好な効果があるものとし、4点以上を最も良好な効果があるものとした。また、各評価項目の評価点で1項目でも評価点が2.5点未満となったものは不合格とした。

表1に示されるように、加熱せずに調製した調味液を使用し、当該調味液と具材を密閉系で撹拌せずに加熱処理することによって調製した実施例1~4の液状調味料は、好ましい発酵感が十分感じられるとともに、具材の食べごたえが良好であった。また、当該液状調味料を用いて加熱調理した料理にも好ましい発酵感が十分感じられるとともに、具材の食べごたえが良好であった。
これに対し、加熱して調製した調味液を使用し、当該調味液と具材を密閉系で加熱処理することによって調製した比較例1、具材と調味液を開放系で加熱処理することによって調製した比較例2、3の液状調味料、及び、当該調味料を用いて加熱調理した料理には、好ましい発酵感が十分に得られなかった。また比較例2の液状調味料を用いて加熱調理した料理には具材の食べごたえも良好と言えるレベルに達するものではなかった。
(試験例2)脂質含有発酵物の種類、具材と脂質含有発酵物の含有比の検討
(1)試験品の調製(実施例5~12、比較例4)
表2に示す配合割合(質量%)で、濃口醤油(食塩分18%)、砂糖、液糖、醸造酢(酸度15%)、及び脂質含有発酵物[豆板醤(脂質含有量1.8質量%)、コチュジャン(脂質含有量1.5質量%)、味噌(脂質含有量5.2質量%)、チーズパウダー(脂質含有量34質量%)]を水に溶解し、常温で混合撹拌(撹拌条件:高速)して調味液を調製した。乾燥タマネギ(長辺:40mm)を、液状調味料全量に対して調味液中で膨潤後の含有量が55質量%となるように、広口カップに充填した後、上記調味液を投入し、フィルムシートでシールした。次に、高温加熱処理機により蒸気で加熱を開始し、75℃まで15分間昇温した後、75℃で10分間加熱処理を行い、試験品の密閉容器入り具材含有液状調味料を得た。
(1)試験品の調製(実施例5~12、比較例4)
表2に示す配合割合(質量%)で、濃口醤油(食塩分18%)、砂糖、液糖、醸造酢(酸度15%)、及び脂質含有発酵物[豆板醤(脂質含有量1.8質量%)、コチュジャン(脂質含有量1.5質量%)、味噌(脂質含有量5.2質量%)、チーズパウダー(脂質含有量34質量%)]を水に溶解し、常温で混合撹拌(撹拌条件:高速)して調味液を調製した。乾燥タマネギ(長辺:40mm)を、液状調味料全量に対して調味液中で膨潤後の含有量が55質量%となるように、広口カップに充填した後、上記調味液を投入し、フィルムシートでシールした。次に、高温加熱処理機により蒸気で加熱を開始し、75℃まで15分間昇温した後、75℃で10分間加熱処理を行い、試験品の密閉容器入り具材含有液状調味料を得た。
(2)官能評価試験
(1)で調製した試験品について、試験例1と同様の方法で官能評価を行った。

表2に示されるように、脂質含有発酵物として豆板醤、コチュジャン、味噌、又はチーズパウダー又はそれらの混合物を用い、具材と脂質含有発酵物の含有比が95:1~5:1の範囲である実施例5~12の液状調味料は、好ましい発酵感が十分感じられるとともに、具材の食べごたえが良好であった。また、当該液状調味料を用いて加熱調理した料理にも好ましい発酵感が十分感じられるとともに、具材の食べごたえが良好であった。一方、脂質含有発酵物を使用しない比較例4の液状調味料、及び、当該調味料を用いて加熱調理した料理にはいずれも好ましい発酵感が十分に感じられず、具材の食べごたえも良好と言えるレベルに達するものではなかった。
(試験例3)具材のサイズ及び具材の種類の検討
(1)試験品の調製(実施例13~16、比較例5~6)
表3に示す配合割合(質量%)で、濃口醤油(食塩分18%)、砂糖、液糖、醸造酢(酸度15%)、及び脂質含有発酵物[豆板醤(脂質含有量1.8%)、コチュジャン(脂質含有量1.5%)]を水に溶解し、常温で混合撹拌(撹拌条件:高速)して調味液を調製した。長辺の異なる乾燥タマネギ、又は生タマネギを、液状調味料全量に対して調味液中で膨潤後の含有量が55質量%(具材と脂質含有発酵物の含有比=22:1)となるように、広口カップに充填した後、上記調味液を投入し、フィルムシートでシールした。次に、高温加熱処理機により蒸気で加熱を開始し、75℃まで15分間昇温した後、75℃で10分間加熱処理を行い、試験品の密閉容器入り具材含有液状調味料を得た。

表3に示す配合割合(質量%)で、濃口醤油(食塩分18%)、砂糖、液糖、醸造酢(酸度15%)、及び脂質含有発酵物[豆板醤(脂質含有量1.8%)、コチュジャン(脂質含有量1.5%)]を水に溶解し、常温で混合撹拌(撹拌条件:高速)して調味液を調製した。長辺の異なる乾燥タマネギ、又は生タマネギを、液状調味料全量に対して調味液中で膨潤後の含有量が55質量%(具材と脂質含有発酵物の含有比=22:1)となるように、広口カップに充填した後、上記調味液を投入し、フィルムシートでシールした。次に、高温加熱処理機により蒸気で加熱を開始し、75℃まで15分間昇温した後、75℃で10分間加熱処理を行い、試験品の密閉容器入り具材含有液状調味料を得た。

(1)で調製した試験品について、試験例1と同様の方法で官能評価を行った。

表3に示されるように、長辺が3~60mmの範囲の乾燥具材を用いた実施例13~16の液状調味料は、好ましい発酵感が十分感じられるとともに、具材の食べごたえが良好であった。また、当該液状調味料を用いて加熱調理した料理にも好ましい発酵感が十分感じられるとともに、具材の食べごたえが良好であった。一方、長辺が3mm未満である比較例5や、生具材を用いた比較例6の液状調味料、及び、当該調味料を用いて加熱調理した料理にはいずれも好ましい発酵感が十分に感じられず、具材の食べごたえも良好と言えるレベルに達するものではなかった。
(試験例4)具材含有量の検討
(1)試験品の調製(実施例17~22、比較例7)
表4に示す配合割合(質量%)で、濃口醤油(食塩分18%)、砂糖、液糖、醸造酢(酸度15%)、及び脂質含有発酵物[豆板醤(脂質含有量1.8質量%)、コチュジャン(脂質含有量1.5質量%)]を水に溶解し、常温で混合撹拌(撹拌条件:高速)して調味液を調製した。乾燥タマネギ(長辺:40mm)を、液状調味料全量に対して調味液中で膨潤後の含有量が表4に示す含有量となるように、広口カップに充填した後、上記調味液を投入し、フィルムシートでシールした。次に、高温加熱処理機により蒸気で加熱を開始し、75℃まで15分間昇温した後、75℃で10分間加熱処理を行い、試験品の密閉容器入り具材含有液状調味料を得た。

表4に示されるように、液状調味料全量に対して調味液中で膨潤後の具材の含有量が10~80質量%である実施例17~22の液状調味料は、好ましい発酵感が十分感じられるとともに、具材の食べごたえが良好であった。また、当該液状調味料を用いて加熱調理した料理にも好ましい発酵感が十分感じられるとともに、具材の食べごたえが良好であった。一方、液状調味料全量に対して調味液中で膨潤後の具材の含有量が80質量%を超える比較例7の液状調味料及び当該液状調味料を用いて加熱調理した料理には、いずれも十分な発酵感が感じられなかった。
本発明は、具材及び調味料全体に好ましい発酵感が増強され、かつ加熱調理後においても具材の食感が損なわれず、具材の食べごたえが十分である、密閉容器入り具材含有液状調味料であり、加熱調理等に簡便に使用することできる液状調味料の製造分野において利用できる。
本明細書で引用した全ての刊行物、特許及び特許出願をそのまま参考として本明細書に組み入れるものとする。
Claims (9)
- 具材、脂質含有発酵物、及び食酢を含有する、密閉容器入り具材含有液状調味料。
- 前記脂質含有発酵物中の脂質含有量が、脂質含有発酵物全量に対して1~80質量%である、請求項1に記載の密閉容器入り具材含有液状調味料。
- 前記具材が乾燥具材である、請求項1又は2に記載の密閉容器入り具材含有液状調味料。
- 前記具材と脂質含有発酵物の含有比が質量比で95:1~5:1である、請求項1~3のいずれか1項に記載の密閉容器入り具材含有液状調味料。
- 前記具材の含有量が、湿重量で調味料全体の10~80質量%である、請求項1~4のいずれか1項に記載の密閉容器入り具材含有液状調味料。
- 前記脂質含有発酵物が、豆板醤、コチュジャン、甜麺醤、味噌、チーズ、発酵バター、及びアンチョビから選ばれる少なくとも1種である、請求項1~5のいずれか1項に記載の密閉容器入り具材含有液状調味料。
- 前記具材の調味液中で膨潤後の長辺が3~60mmである、請求項1~6のいずれか1項に記載の密閉容器入り具材含有液状調味料。
- 前記密閉容器入り具材含有液状調味料が、加熱調理用である、請求項1~7のいずれか1項に記載の密閉容器入り具材含有液状調味料。
- 以下の工程:
(a)調味液中で膨潤後の具材の長辺が3~60mmである具材を、湿重量で調味料全体の10~80質量%含有するように密閉可能な容器に投入した後、食酢及び脂質含有発酵物を含む調味液を添加し、容器を密閉する工程;
(b)前記具材と調味液を充填した密閉容器を60~100℃で20~120分間撹拌することなく加熱処理する工程;及び
(c)加熱処理後、常温になるまで放置又は冷却する工程;
を含む、密閉容器入り具材含有液状調味料の製造方法。
