(3)发酵:将红曲、葡萄汁以及步骤(2)中的所述中药提取液置于发酵罐中,调整各成分的含量,然后加入干酵母和冰糖混合均匀,进行发酵;
(4)过滤灭菌:将发酵后的酒液过滤,去除沉淀物,并对酒液灭菌;
(5)装罐:将上述灭菌后的酒液进行灌装,放置阴凉处密封保存,即得红曲葡萄酒。
进一步,步骤(1)中所述非塑料容器为玻璃容器或陶瓷罐。
进一步,步骤(2)中所述中药提取液不添加任何有机溶剂。
进一步,所述步骤(3)中,发酵温度控制在25-30℃,发酵时间为15-20天。
进一步,所述步骤(3)中的干酵母为0.01-0.1份的干酵母粉。
葡萄籽是葡萄酒厂的下脚料,含有丰富各种氨基酸、维生素及矿物质。葡萄籽提取物,具有清除自由基、抗肝脏肿瘤的作用,还可以对抗神经系统的损伤,同时葡萄籽提取物具有超强抗氧化能力,是维他命E的50倍,能延缓老化,预防动脉硬化。
瓜拉纳是一种常绿蔓生植物,其种子烘干后,呈棕褐色,略带苦味。其主要成份是瓜拉纳因,长期食用,有提神醒脑、滋阴壮阳、恢复体力、补充能量、强身健体之功效,此外,还含有丰富的氨基酸、生物碱、多种矿物质丹宁酸,多种维生素和碳水化合物,非常利于人体的组织吸收,有改变人体组织结构而延年益寿的功效,不论男女老幼都可食用,尤其适用于机能衰退有慢性疾病的人。
当归别名秦归、云归、西当归、岷当归,味甘、辛、苦、性温。补血活血、润燥滑肠、免疫之功效。
枸杞子具有降低血糖、降血压、抗脂肪肝作用,并能抗动脉粥样硬化。泽泻、山楂、柴胡、菊花、陈皮等不仅滋阴补肾、益精填髓、活血化瘀,并且能恢复体力、补充能量、增强免疫力及强身健体之功效。
相对于现有技术,本发明的有益效果在于:
(1)本发明的加工方法简单、节约成本、无添加有机溶剂、酒精转化率高,环境无污染,制备的红曲葡萄酒具有抗神经衰弱、抗过度疲劳的功效,其口感醇厚,色泽澄清、风味独特。
(2)本发明在满足饮用酒功能的同时,具有丰富的营养价值和医药保健作用,其与水溶性红曲结合发酵,酒中含有的洛伐他汀具有降血脂,降血压的功效,红曲中的有效成分与中药提取液中的有效成分相互协调,协同作用,功效相互增进。
具体实施方式
为了使本领域的人员更好地理解本发明的技术方案,下面结合本发明的附图,对本发明的技术方案进行清楚、完整的描述,基于本申请中的实施例,本领域普通技术人员在没有做出创造性劳动的前提下所获得的其它类同实施例,都应当属于本申请保护的范围。
实施例一:
一种红曲葡萄酒,有下列原料组成,均为重量份:红曲20,葡萄40,中药提取液10,冰糖5-20,所述红曲为水溶性红曲,红曲中洛伐他汀的含量为100000-200000mg/kg;所述中药提取液按重量份数计,包括以下组分:葡萄籽10,瓜拉纳5,枸杞子10,泽泻10,当归10,山楂10,柴胡5,菊花5,陈皮5。
所述红曲葡萄酒的制备步骤如下:
(1)、制葡萄汁:将葡萄清洗、晾干、粉碎、过滤后,放入经过消毒的玻璃容器或陶瓷罐内,得葡萄汁;
(2)、制中药提取液:将葡萄籽、枸杞子、泽泻、当归、山楂、柴胡、菊花、陈皮烘干粉碎成粗粉,按照所述重量份装入通透袋中,将装有中药的通透袋放入锅中,加入中药质量10-15倍的水,大火加热至沸腾后,小火熬煮20-30分钟,取出通透袋,倒出药液,再次将通透袋放入锅中,加水熬煮,重复操作一次,合并两次所得药液,减压浓缩成中药提取液,离心除杂,灭菌,在此提取过程中不添加任何有机溶剂;
(3)、发酵:将红曲、葡萄汁以及步骤(2)中的所述中药提取液置于发酵罐中,调整各成分的含量,然后加入干酵母和冰糖混合均匀,进行发酵,并把发酵温度控制在25-30℃,发酵时间为15-20天,所述干酵母为0.01-0.1份的干酵母粉;
(4)、过滤灭菌:将发酵后的酒液过滤,去除沉淀物,并对酒液灭菌;
(5)、装罐:将上述灭菌后的酒液进行灌装,放置阴凉处密封保存,即得红曲葡萄酒。
实施例二:
一种红曲葡萄酒,有下列原料组成,均为重量份:红曲30,葡萄50,中药提取液15,冰糖5-20,所述红曲为水溶性红曲,红曲中洛伐他汀的含量为100000-200000mg/kg;所述中药提取液按重量份数计,包括以下组分:葡萄籽12,瓜拉纳8,枸杞子12,泽泻12,当归12,山楂12,柴胡8,菊花5-10,陈皮8。
所述红曲葡萄酒的制备步骤如下:
(1)、制葡萄汁:将葡萄清洗、晾干、粉碎、过滤后,放入经过消毒的玻璃容器或陶瓷罐内,得葡萄汁;
(2)、制中药提取液:将葡萄籽、枸杞子、泽泻、当归、山楂、柴胡、菊花、陈皮烘干粉碎成粗粉,按照所述重量份装入通透袋中,将装有中药的通透袋放入锅中,加入中药质量10-15倍的水,大火加热至沸腾后,小火熬煮20-30分钟,取出通透袋,倒出药液,再次将通透袋放入锅中,加水熬煮,重复操作一次,合并两次所得药液,减压浓缩成中药提取液,离心除杂,灭菌,在此提取过程中不添加任何有机溶剂;

实施例三:
一种红曲葡萄酒,有下列原料组成,均为重量份:红曲40,葡萄60,中药提取液20,冰糖5-20,所述红曲为水溶性红曲,红曲中洛伐他汀的含量为100000-200000mg/kg;所述中药提取液按重量份数计,包括以下组分:葡萄籽15,瓜拉纳10,枸杞子15,泽泻15,当归15,山楂15,柴胡10,菊花10,陈皮10。
所述红曲葡萄酒的制备步骤如下:
(1)、制葡萄汁:将葡萄清洗、晾干、粉碎、过滤后,放入经过消毒的玻璃容器或陶瓷 罐内,得葡萄汁;
(2)、制中药提取液:将葡萄籽、枸杞子、泽泻、当归、山楂、柴胡、菊花、陈皮烘干粉碎成粗粉,按照所述重量份装入通透袋中,将装有中药的通透袋放入锅中,加入中药质量10-15倍的水,大火加热至沸腾后,小火熬煮20-30分钟,取出通透袋,倒出药液,再次将通透袋放入锅中,加水熬煮,重复操作一次,合并两次所得药液,减压浓缩成中药提取液,离心除杂,灭菌,在此提取过程中不添加任何有机溶剂;
(3)、发酵:将红曲、葡萄汁以及步骤(2)中的所述中药提取液置于发酵罐中,调整各成分的含量,然后加入干酵母和冰糖混合均匀,进行发酵,并把发酵温度控制在25-30℃,发酵时间为15-20天,所述干酵母为0.01-0.1份的干酵母粉;
(4)、过滤灭菌:将发酵后的酒液过滤,去除沉淀物,并对酒液灭菌;
(5)、装罐:将上述灭菌后的酒液进行灌装,放置阴凉处密封保存,即得红曲葡萄酒。
为验证本发明红曲葡萄酒的效果,以本发明红曲葡萄酒为治疗手段,将180位患有高血压、高血脂的40-80岁人群(其中,40-50岁中年人50名,50-60岁中老年人64名,60-80岁老年人66名)平均分成两组进行人体试验,分别为实验组和对照组,每人每天两次,每次两杯,一杯100ml,实验组服用本实施例三的红曲葡萄酒,对照组则服用等量的葡萄酒,90天统计疗效,测试结果见表1。
其中血压降低的测试标准为:收缩压降低的范围在10-30mmHg,为显效;收缩压降低的范围在5-10mmHg,为有效;收缩压无任何改善,为无效。
血脂降低的测试标准为:高血脂的诊断标准是按照人体内部胆固醇的高低来判断的,所以总胆固醇降低的范围在0.5-1mmol/L,为显效;总胆固醇降低的范围在0.1-0.5mmol/L,为有效;总胆固醇无任何改善,为无效。

服用实施例三红曲葡萄酒的实验人群和服用普通葡萄酒的对照人群,去医院进行体检, 从表1可以看出,中年、中老年以及老年人的症状都有较大改善,血压、血脂降低,效果显著,这与红曲中的洛伐他汀密切相关,此外红曲中富含多种活性成分,其与中药提取液的多种氨基酸、生物碱,维生素等物质相辅相成,协同作用,共同调节机体,具有抗疲劳、补充能量、活血化瘀、防止动脉硬化、增强免疫力、强身健体之功效,因此本发明红曲葡萄酒在满足饮用酒功能的同时,还具有丰富的营养价值和医药保健作用,适用于不同群体。
此外,应当理解,虽然本说明书按照实施方式加以描述,但并非每个实施方式仅包含一个独立的技术方案,说明书的这种叙述方式仅仅是为清楚起见,本领域技术人员应当将说明书作为一个整体,各实施例中的技术方案也可以经适当组合,形成本领域技术人员可以理解的其他实施方式。

Claims (8)

  1. 一种红曲葡萄酒,其特征在于,有下列原料组成,均为重量份:红曲20-40,葡萄40-60,中药提取液10-20,冰糖5-20;
    所述中药提取液按重量份数计,包括以下组分:葡萄籽10-15,瓜拉纳5-10,枸杞子10-15,泽泻10-15,当归10-15,山楂10-15,柴胡5-10,菊花5-10,陈皮5-10。
  2. 如权利要求1所述的一种红曲葡萄酒,其特征在于,有下列原料组成,均为重量份:红曲30,葡萄50,中药提取液15,冰糖5-20;
    所述中药提取液按重量份数计,包括以下组分:葡萄籽12,瓜拉纳8,枸杞子12,泽泻12,当归12,山楂12,柴胡8,菊花5-10,陈皮8。
  3. 如权利要求2所述的一种红曲葡萄酒,其特征在于,所述红曲为水溶性红曲,红曲中洛伐他汀的含量为100000-200000mg/kg。
  4. 如权利要求3所述的一种红曲葡萄酒的制备方法,其特征在于,步骤如下:
    (1)制葡萄汁:将葡萄清洗、晾干、粉碎、过滤后,放入经过消毒的非塑料容器内,得葡萄汁;
    (2)制中药提取液:将葡萄籽、瓜拉纳、枸杞子、泽泻、当归、山楂、柴胡、菊花、陈皮烘干粉碎成粗粉,按照所述重量份装入通透袋中,将装有中药的通透袋放入锅中,加入中药质量10-15倍的水,大火加热至沸腾后,小火熬煮20-30分钟,取出通透袋,倒出药液,再次将通透袋放入锅中,加水熬煮,重复操作一次,合并两次所得药液,减压浓缩成中药提取液,离心除杂,灭菌;
    (3)发酵:将红曲、葡萄汁以及步骤(2)中的所述中药提取液置于发酵罐中,调整各成分的含量,然后加入干酵母和冰糖混合均匀,进行发酵;
    (4)过滤灭菌:将发酵后的酒液过滤,去除沉淀物,并对酒液灭菌;
    (5)装罐:将上述灭菌后的酒液进行灌装,放置阴凉处密封保存,即得红曲葡萄酒。
  5. 如权力要求4所述的一种红曲葡萄酒的制备方法,其特征在于,步骤(1)中所述非塑料容器为玻璃容器或陶瓷罐。
  6. 如权力要求4所述的一种红曲葡萄酒的制备方法,其特征在于,步骤(2)中所述中药提取液不添加任何有机溶剂。
  7. 如权力要求4所述的一种红曲葡萄酒的制备方法,其特征在于,所述步骤(3)中,发酵温度控制在25-30℃,发酵时间为15-20天。
  8. 如权力要求4所述的一种红曲葡萄酒的制备方法,其特征在于,所述步骤(3)中的干酵母为0.01-0.1份的干酵母粉。
