本発明におけるチョコレート生地には、上記の添加工程において、β型StOSt結晶を少なくとも含むシーディング剤が添加される。なお、本発明におけるシーディング剤は、β型StOSt結晶からなるものでもよく、β型StOSt結晶のほか、その他の油脂や、固形分(糖類、粉乳等)等を分散媒体として含むものであってもよい。シーディング剤中のβ型StOSt結晶は、10質量%以上であることが好ましく、30質量%以上であることがより好ましい。
本発明におけるβ型StOSt結晶は、StOStを含有する油脂から調製できる。StOStを含有する油脂をβ型StOSt結晶に調製するには、油脂中のStOSt含量が低い(例えば、油脂中に40質量%未満である)場合、油脂を加熱して油脂結晶を融解させた後、オンレーター、コンビネーター、ボテーター等の急冷混捏装置により急冷結晶化を行い、27℃程度で1日程度調温することにより、ペースト状又は可塑性状のβ型StOSt結晶を含むシーディング剤を調製できる。
添加工程における、融液状のチョコレート生地に添加するβ型StOSt結晶の量は、チョコレート生地中の油脂に対して0.05~5質量%であることが好ましく、0.1~4.5質量%であることがより好ましく、0.2~4質量%あることがさらに好ましい。β型StOSt結晶の添加量が上記範囲であると、チョコレート生地の生地温度が高温(例えば、32~40℃)であっても、さらに、このような高温下でチョコレート生地を保持しても、安定したシーディングの効果を期待できる。
本発明におけるチョコレート生地は、生地粘度の上昇を抑制するために、上記の添加工程後、融液状のチョコレート生地を10分以上、生地温度を32~40℃に保持してもよい。チョコレート生地にβ型StOSt結晶を添加し、添加後も32~40℃で、好ましくは15分以上、さらに好ましくは30分以上保持することにより、チョコレート生地の粘度の上昇を効果的に抑制できる。保持工程におけるチョコレート生地の温度は、34~39℃が好ましく、35~39℃がより好ましく、37~39℃がさらに好ましい。
本発明のチョコレート被覆食品は、添加工程後、又は、添加工程及び保持工程後に得られたチョコレート生地を、所望の食品に被覆することにより得られる。チョコレート生地を食品に被覆する方法は、特に限定されず、公知の方法を用いて製造することができる。例えば、チョコレート生地を食品にエンロービング(上掛け)、塗布、又は噴霧する方法が挙げられる。また、チョコレート生地に食品をどぶ漬けしてもよい。チョコレート生地を食品に被覆する際には、減圧する等の処理をあわせて行うことにより、食品内部にチョコレート生地を含浸させてもよい。
添加工程後、又は、添加工程及び保持工程後に得られたチョコレート生地は、冷却固化してもよく、この工程により、チョコレート生地からチョコレートを効率的に製造できる。また、被覆工程後に得られた食品は、冷却固化してもよく、この工程により、被覆されたチョコレート生地が冷却固化して、チョコレート被覆食品を効率的に製造できる。
本発明において「チョコレート」とは、「チョコレート類の表示に関する公正競争規約」(全国チョコレート業公正取引協議会)又は法規上の規定等により限定されるものではなく、食用油脂、糖類を主原料とし、必要によりカカオ成分(カカオマス、ココアパウダー等)、乳製品、香料、乳化剤等を加え、チョコレート製造の工程(混合工程、微粒化工程、精練工程、調温工程、成形工程、冷却工程等)の一部又は全部を経て製造されたものを指す。また、本発明におけるチョコレートは、ダークチョコレート、ミルクチョコレートのほか、ホワイトチョコレート、カラーチョコレート等も含む。
本発明におけるチョコレート生地は、例えば、生地粘度が上がりやすいココアバターがリッチなテンパー型チョコレート生地であっても、経時的な生地粘度の上昇が抑制されているので作業性がよい。そのため、本発明によれば、チョコレート風味豊かなチョコレートが被覆されたチョコレート被覆食品を効率良く製造できる。
各トリアシルグリセロール含量は、ガスクロマトグラフ法(JAOCS,vol70,11,1111-1114(1993)準拠)及び銀イオンカラム-HPLC法(J.High Resol.Chromatogr.,18,105-107(1995)準拠)により測定した。
チョコレート生地の粘度は、BH型粘度計(東機産業社製)を使用し、No.6のローターを4rpmで回転させ、3回転後の読み取り数値に装置係数(2500)を乗じて求めた。
既知の方法に従って、ハイオレイックヒマワリ油40質量部に、ステアリン酸エチルエステル60質量部を混合し、1,3位選択性リパーゼ製剤を添加してエステル交換反応を行った。ろ過処理によりリパーゼ製剤を除去し、得られた反応物を薄膜蒸留にかけ、反応物から脂肪酸エチルを除去して蒸留残渣を得た。得られた蒸留残渣を乾式分別により高融点部を除去し、得られた低融点部からアセトン分別により2段目の低融点部を除去して中融点部を得た。得られた中融点部を常法によりアセトン除去及び脱色、脱臭処理して、StOSt含量が67.3質量%であるStOSt含有油脂を得た。
以下の方法に従って、β型StOSt結晶を含む油脂である、シーディング剤A及びシーディング剤Bを得た。得られたシーディング剤の結晶型及びβ型StOSt結晶含量を表1にまとめた。
ハイオレイックヒマワリ油75質量部とStOSt含有油脂(StOSt含量67.3質量%)25部とを混合し、60℃で完全に油脂結晶を融解させた後、オンレーターにて急冷結晶化を行い、27℃で1日調温して、ペースト状のシーディング剤Aを得た。
StOSt含有油脂(StOSt含量67.3質量%)を加熱し、油脂結晶を完全に融解させた後冷却し、油温が30℃の時点でシーディング剤Aを対油0.5質量%添加して、20℃まで冷却した。冷却後、38℃6時間と30℃6時間の調温サイクルを5サイクル繰り返した後、-20℃で粉砕し、その後篩かけをして、平均粒径が100μmである粉末状のシーディング剤Bを得た。
表2の配合に従って、原材料を混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が35℃である融液状チョコレート生地A(生地の油脂含量35質量%)を調製した。該融液状チョコレート生地にシーディング剤Bを対油0.5質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して0.335質量%)添加し、攪拌しながら引き続き35℃にて保持した。シーディング剤添加後、60分、120分、180分の各時点においてチョコレート生地を採取し、ポリカーボネート製の型に充填して、10℃の冷蔵庫で冷却固化した(実施例1~3)。また、対照として、シーディング剤を添加する代わりに、通常のテンパリング操作(小型テンパリング機(Pavioni社製、Minitemper)を使用し、一旦50℃に加温した融液状チョコレート生地を30℃まで冷却し、1分間30℃で保持した後、32℃で3分間保持)を行って冷却固化したものと(参考例1)、シーディング剤の添加もテンパリング操作も行わず、35℃の融液状チョコレート生地をそのまま冷却固化したものを作製した(比較例1)。

表2の配合に従って、原材料を混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が30℃である融液状チョコレート生地A(生地の油脂含量35質量%)を調製した。該融液状チョコレート生地にシーディング剤Bを対油0.5質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して0.335質量%)添加し、攪拌しながら引き続き30℃にて保持した。シーディング剤添加前、シーディング剤添加後10分、20分、30分、40分、50分の各時点においてチョコレート生地を採取し、各時点における粘度を測定した(比較例2~7)。結果を表4に示す。なお、表4中、「*」はシーディング後の保持時間(単位:分)を示し、「-」は評価不能であったことを示し、「+」は比較例2の生地粘度を1としたときの倍数を示す。
表2の配合に従って、原材料を混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が35℃である融液状チョコレート生地A(生地の油脂含量35質量%)を調製した。該融液状チョコレート生地にシーディング剤Aを対油10質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して1.68質量%)添加し、攪拌しながら引き続き35℃にて保持した。シーディング剤添加後、60分、120分、180分の各時点においてチョコレート生地を採取し、ポリカーボネート製の型に充填して、10℃の冷蔵庫で冷却固化した(実施例4~6)。
表2の配合に従って、原材料を混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が36℃である融液状チョコレート生地A(生地の油脂含量35質量%)を調製した。該融液状チョコレート生地にシーディング剤Bを対油2.0質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して1.34質量%)添加し、攪拌しながら引き続き36℃にて保持した。シーディング剤添加後、60分、120分、180分の各時点においてチョコレート生地を採取し、ポリカーボネート製の型に充填して、10℃の冷蔵庫で冷却固化した(実施例7~9)。また、対照として、シーディング剤の添加もテンパリング操作も行わず、36℃の融液状チョコレート生地をそのまま冷却固化したものを作製した(比較例8)。
表7の配合に従って、チョコレート生地Bとチョコレート生地Cの原材料をそれぞれ混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が38℃である融液状チョコレート生地B、C(生地の油脂含量35質量%)を調製した。該融液状チョコレート生地B、Cのそれぞれにシーディング剤Bを対油5.0質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して3.35質量%)添加し、攪拌しながら引き続き38℃にて保持した。シーディング剤添加後、チョコレート生地Bについては60分、360分の各時点において、また、チョコレート生地Cについては、60分、1440分の各時点において、チョコレート生地を採取し、ポリカーボネート製の型に充填して、10℃の冷蔵庫で冷却固化した(生地B:実施例10~11、生地C:実施例12~13)。また、対照として、シーディング剤の添加もテンパリング操作も行わず、38℃の融液状チョコレート生地B、Cをそのまま冷却固化したものを作製した(比較例9、10)。
表9の配合に従って、原材料を混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が39℃である融液状チョコレート生地D(生地の油脂含量35質量%)を調製した。該融液状チョコレート生地にシーディング剤Bを対油2.0質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して1.34質量%)添加し、攪拌しながら引き続き39℃にて保持した。シーディング剤添加後、60分、180分、360分の各時点においてチョコレート生地を採取し、ポリカーボネート製の型に充填して、10℃の冷蔵庫で冷却固化した(実施例14~16)。また、対照として、シーディング剤の添加もテンパリング操作も行わず、39℃の融液状チョコレート生地をそのまま冷却固化したものを作製した(比較例11)。
表11の配合に従って、原材料を混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が36℃である融液状チョコレート生地E、F、G、H(生地の油脂含量35質量%)を調製した。各融液状チョコレート生地にシーディング剤Bを対油0.5質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して0.335質量%)添加し、攪拌しながら10分間保持した。シーディング剤添加10分後に各チョコレート生地を採取し、ポリカーボネート製の型に充填して、10℃の冷蔵庫で冷却固化した(比較例12、実施例17~19)。なお、表11中、「*」はパーム中融点画分を示す。

表13の配合に従って、原材料を混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が35℃である融液状チョコレート生地I、J、K、L(生地の油脂含量35質量%)を調製した。各融液状チョコレート生地にシーディング剤Bを対油0.5質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して0.335質量%)添加し、攪拌しながら10分間保持した。シーディング剤添加10分後に各チョコレート生地を採取し、ポリカーボネート製の型に充填して、10℃の冷蔵庫で冷却固化した(実施例20~23)。
既知の方法に従って、ハイオレイックヒマワリ油40質量部に、ベヘン酸エチルエステル60質量部を混合し、1,3位選択性リパーゼ製剤を添加してエステル交換反応を行った。ろ過処理によりリパーゼ製剤を除去し、得られた反応物を薄膜蒸留にかけ、反応物から脂肪酸エチルを除去して蒸留残渣を得た。得られた蒸留残渣を乾式分別により高融点部を除去し、得られた低融点部からアセトン分別により2段目の低融点部を除去して中融点部を得た。得られた中融点部を常法によりアセトン除去及び脱色、脱臭処理して、BOB含量が65.0質量%であるBOB含有油脂を得た。
表16の配合に従って、原材料を混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が38℃である融液状チョコレート生地M(生地の油脂含量40質量%)を調製した。該融液状チョコレート生地にシーディング剤Bを対油1.0質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して0.67質量%)添加し、攪拌しながら10分間保持した。シーディング剤添加10分後にチョコレート生地を採取し、ポリカーボネート製の型に充填して、10℃の冷蔵庫で冷却固化した(実施例24)。また、生地温度が38℃である融液状チョコレート生地M(生地の油脂含量40質量%)に対して、シーディング剤Bの替りにシーディング剤Cを対油1.0質量%(β型BOB結晶として融液状チョコレート生地中の油脂に対して0.65質量%)添加し、攪拌しながら10分間保持した。シーディング剤添加10分後にチョコレート生地を採取し、ポリカーボネート製の型に充填して、10℃の冷蔵庫で冷却固化した(比較例13)。
上記[β型StOSt結晶(シーディング剤)の調製-I]の(シーディング剤B)と同様の方法で、シーディング剤Bを調製した。
表18の配合に従って、原材料を混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が45℃である融液状のチョコレート生地A-2(生地の油脂含量40質量%)を調製した。該融液状のチョコレート生地を、28℃まで冷却して1分間保持した後、30℃まで昇温して温度を30℃に保持した。30℃に昇温後、0分、20分、40分、60分の各時点においてチョコレート生地を採取し、各時点における生地粘度を測定した(比較例14)。また、これとは別に、生地温度が45℃である融液状のチョコレート生地A-2を28℃まで冷却して1分間保持した後、30℃まで昇温して10分間保持した。その後35℃まで昇温して温度を35℃で10分間保持した。10分間保持後、35℃を保持したまま、0分、20分、60分、180分の各時点においてチョコレート生地を採取し、各時点における生地粘度を測定した(比較例15)。また、これらとは別に、生地温度が45℃である融液状のチョコレート生地A-2を35℃まで冷却し、これにシーディング剤Bを対油0.5質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して0.335質量%)添加分散し、引き続き35℃で保持した。シーディング剤添加前、シーディング剤添加後20分、60分、180分の各時点においてチョコレート生地を採取し、各時点における生地粘度を測定した(実施例25)。比較例14、15及び実施例25における各チョコレート生地の粘度変化を表19~21に示す。なお、表19~21中、生地粘度の単位はセンチポアズ(cP)であり、「+」は保持時間0分の生地粘度を1としたときの倍数を示す。
市販のフランスパンを輪切りにした面に、上記比較例14の30℃保持20分のチョコレート生地、上記比較例15の35℃保持20分のチョコレート生地及び上記実施例25の35℃保持180分のチョコレート生地をそれぞれ塗布し、10℃の恒温槽内で冷却固化して比較例14-1、比較例15-1及び実施例25-1のチョコレート被覆食品を調製した。

表23の配合に従って、原材料を混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が45℃である融液状のチョコレート生地B-2、C-2、D-2(生地の油脂含量40質量%)を調製した。上記融液状のチョコレート生地B-2を30℃まで冷却し、これにシーディング剤Bを対油1質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して0.67質量%)添加分散し、引き続き30℃で30分保持した(比較例16)。また、これとは別に、上記45℃で融液状のチョコレート生地B-2、C-2、D-2をそれぞれ37℃まで冷却し、これらにシーディング剤Bを対油1質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して0.67質量%)それぞれ添加分散し、引き続き37℃で30分保持した(比較例17、実施例26、27)。
市販のビスケットの面に、上記比較例16、17及び実施例26、27のチョコレート生地をそれぞれ塗布した。比較例17のチョコレート生地を塗布したものは、10℃の恒温槽内で冷却固化して比較例17のチョコレート被覆食品を調製した。比較例16及び実施例26、27のチョコレート生地を塗布したものは、20℃の恒温槽内で冷却固化して比較例16及び実施例26、27-1のチョコレート被覆食品を調製した。なお、塗布に使用したビスケットの温度は21℃であった。

上記[BOB含有油脂及びβ型BOB結晶(シーディング剤C)の調製]と同様の方法で、BOB含有油脂及びβ型BOB結晶(シーディング剤BOB)を調製した。
表23のチョコレート生地D-2の配合に従って、原材料を混合した後、常法に従って、ロールリファイニング、コンチングを行い、生地温度が37℃である融液状のチョコレート生地(生地の油脂含量40質量%)を調製した。該融液状チョコレート生地にシーディング剤BOBを対油2.0質量%(β型BOB結晶として融液状チョコレート生地中の油脂に対して1.3質量%)添加分散し、引き続き37℃で30分保持した(比較例18)。また、これとは別に、上記生地温度が37℃である融液状のチョコレート生地にシーディング剤Bを対油1質量%(β型StOSt結晶として融液状チョコレート生地中の油脂に対して0.67質量%)添加分散し、引き続き37℃で30分保持した(実施例27)。
市販のビスケットの面に、上記比較例18のチョコレート生地を塗布した。比較例18のチョコレート生地を塗布したものは、20℃の恒温槽内で冷却固化して比較例18のチョコレート被覆食品を調製した。これとは別に38℃に調温したビスケットに実施例27のチョコレート生地を塗布した。実施例27のチョコレート生地を塗布したものは、25℃の恒温槽内で冷却固化して実施例27-2のチョコレート被覆食品を調製した。なお、比較例18のチョコレート生地の塗布に使用したビスケットの温度は21℃であった。
Claims (17)
- 融液状のチョコレート生地に、β型StOSt結晶を少なくとも含むシーディング剤を添加する添加工程を含み、
前記チョコレート生地は、前記チョコレート生地中の油脂においてStOStを26~70質量%含むチョコレートの製造方法。
(ただし、StOStは1,3-ジステアロイル-2-オレオイルグリセロールを示す) - 前記添加工程におけるチョコレート生地の生地温度は32~40℃である請求項1に記載のチョコレートの製造方法。
- 前記添加工程後、前記チョコレート生地の生地温度を10分以上、32~40℃に保持する保持工程をさらに含む請求項1又は2に記載のチョコレートの製造方法。
- 前記添加工程において、前記β型StOSt結晶は、前記チョコレート生地中の油脂に対して0.05~5質量%添加される請求項1から3のいずれか1項に記載のチョコレートの製造方法。
