Abstract
本發明提供一種含有10~80 mg/L之甜菊醇糖苷及聚葡萄糖之類啤酒發泡性飲料、上述聚葡萄糖之含量為4~40 g/L之上述類啤酒發泡性飲料、及作為非醱酵飲料之上述任一類啤酒發泡性飲料。
Description
本發明係關於一種糖質含量得到抑制且味道一致性良好、類啤酒性優異之類啤酒發泡性飲料。本申請主張基於2017年1月30日在日本提出申請之日本專利特願2017-014011號之優先權,將其內容援用於此。
隨著消費者嗜好之多樣化,啤酒或發泡酒等類啤酒發泡性飲料正有多種多樣之商品不斷上市。尤其是根據近年來消費者之健康意向,對於低卡路里或低糖質之類啤酒發泡性飲料之需求日漸提高。例如,啤酒雖已成為利用由酵母醱酵生成之酒精以及尚未完全分析之多樣成分而具有飲用感且餘味悠長之均衡性良好之止渴飲料,但卡路里或糖質含量較高。相對於此,不經由醱酵步驟而製造之非醱酵類啤酒發泡性飲料雖與醱酵類啤酒發泡性飲料相比有成分組成簡單、飲用感較弱之傾向,但容易控制卡路里或糖質含量。因此,例如,藉由使用高甜度甜味料或水溶性食物纖維等更低糖質、低卡路里之原料代替蔗糖,而能夠相對容易地製造低糖質、低卡路里之非醱酵類啤酒發泡性飲料。高甜度甜味料有阿斯巴甜、蔗糖素、乙醯磺胺酸鉀、糖精等人工甜味料、及甜菊萃取物、甘草萃取物、羅漢果萃取物、索馬甜、赤藻糖醇等天然甜味料。由於是更接近蔗糖之甜味物質,故而於飲料中廣泛使用阿斯巴甜等人工甜味料。其中,大多高甜度甜味料之甜味殘留較強或具有苦味或澀味等,甜味物質與蔗糖不同。因此,已知有若干改善高甜度甜味料之甜味物質之方法。例如,於專利文獻1中,記載了藉由於含有乙醯磺胺酸鉀及蔗糖素之飲料中添加酸味賦予物質及苦味賦予物質而能夠改善乙醯磺胺酸鉀等甜味之殘留。添加至飲料中之水溶性食物纖維有難消化性糊精、聚葡萄糖、大豆食物纖維等。又,水溶性食物纖維亦存在發揮除使飲料之萃取物量增大而增強滋味無窮感以外之效果之情況。例如,於專利文獻2中,記載了藉由於包含鈉鹽之飲食物中添加水溶性食物纖維,而能夠使鹹味增強或掩蓋因鉀鹽等產生之異味(刺激味)。又,於專利文獻3中,記載了藉由於包含高甜度甜味料之碳酸飲料中調配難消化性糊精,而使泡穩定化。此外,尤其是難消化性糊精已知有抑制糖之吸收速度之作用或整腸作用等功能,故而可被較佳地用於面向健康意向之消費者之飲料。 [先前技術文獻] [專利文獻][專利文獻1]日本專利特開2016-127855號公報[專利文獻2]國際公開第2012/017710號[專利文獻3]日本專利特開2015-43765號公報
[發明所欲解決之問題] 本發明之目的在於提供一種糖質含量得到抑制且味道一致性良好、類啤酒性優異之類啤酒發泡性飲料。 [解決問題之技術手段] 本發明者等人為了解決上述課題而進行了努力研究,結果發現,藉由使用甜菊萃取物或其酵素處理物作為高甜度甜味料且併用聚葡萄糖,可獲得抑制糖質含量並且具備類啤酒性及良好之味道一致性之類啤酒發泡性飲料,從而完成了本發明。本發明之類啤酒發泡性飲料係下述[1]至[5]。[1]一種類啤酒發泡性飲料,其特徵在於含有10~80 mg/L之甜菊醇糖苷及聚葡萄糖。[2]如上述[1]之類啤酒發泡性飲料,其中上述聚葡萄糖之含量為4~40 g/L。[3]如上述[1]或[2]之類啤酒發泡性飲料,其為非醱酵飲料。[4]如上述[1]至[3]中任一項之類啤酒發泡性飲料,其中上述甜菊醇糖苷係選自由甜菊苷(Stevioside)、甜菊雙糖苷A(Rebaudioside A)、及該等之糖基轉移酶處理物所組成之群中之1種以上。[5]如上述[1]至[4]中任一項之類啤酒發泡性飲料,其中酒精含量未達1.0%。 [發明之效果] 根據本發明,能夠提供一種糖質含量得到抑制且味道一致性良好、澀味與甜味之均衡性良好且類啤酒性優異之類啤酒發泡性飲料。
本發明及本申請說明書中之所謂類啤酒發泡性飲料係指具有類啤酒性(香味上使人想起啤酒之味道)之發泡性飲料。本發明中之類啤酒發泡性飲料之酒精濃度並無限定,可為1.0體積%以上之酒精飲料,亦可為未達1.0體積%之所謂無酒精飲料。又,本發明中之類啤酒發泡性飲料可為經由利用酵母使醱酵原料醱酵之醱酵步驟而製造之醱酵類啤酒發泡性飲料,亦可為不經由醱酵步驟而製造之非醱酵類啤酒發泡性飲料。具體而言,可列舉啤酒、發泡酒、無酒精啤酒等。此外,亦可為將經由醱酵步驟而製造之飲料與含酒精之蒸餾液混合而獲得之甜露酒類。其中,就香味均衡性之觀點而言,類啤酒發泡性飲料較佳為非醱酵之飲料。本發明之類啤酒發泡性飲料含有甜菊醇糖苷作為甜味料。甜菊醇糖苷(具備甜菊醇骨架之糖苷)係來自甜菊(Stevia rebaudiana BERTONI)葉之天然之高甜度甜味料,藉由調配適量之甜菊醇糖苷,而能夠與調配其他高甜度甜味料之情形同樣地提昇類啤酒發泡性飲料之滋味無窮感,改善飲用感。甜菊醇糖苷具有特有之澀味,因此,一般於作為蔗糖之代替品添加至飲料時,大多情況下其澀味會成為飲料之異味。又,甜菊醇糖苷之甜味係餘味較強者,且甜味物質亦與蔗糖不同,該方面對於作為蔗糖之代替品而言稍有問題。然而,於類啤酒發泡性飲料之情形時,該甜菊醇糖苷特有之澀味使主要來自啤酒花之類似啤酒之苦味及澀味提昇。又,源自甜菊醇糖苷之甜味係於如與啤酒花苦味相同之時期被感受到,因此,因不自然之甜味損害類啤酒性之情況較少,反而藉由味道之複雜性增加,而滋味無窮感提昇,從而使飲用感得到改善。如此,本發明之類啤酒發泡性飲料藉由調配甜菊醇糖苷,而與使用蔗糖或其他高甜度甜味料之飲料相比,甜味與苦味之均衡性更良好,類啤酒性更優異。作為本發明之類啤酒發泡性飲料所含有之甜菊醇糖苷,只要為具有甜菊醇骨架之甜味成分則並無特別限定,可為甜菊之葉中含有之天然甜菊醇糖苷本身,亦可為藉由糖基轉移酶,對於天然之甜菊醇糖苷,使葡萄糖或果糖進行糖基轉移而成之甜菊醇糖苷。作為甜菊醇糖苷,例如可列舉甜菊苷、甜菊雙糖苷A、甜菊雙糖苷C、及杜克苷A。本發明之類啤酒發泡性飲料所含有之甜菊醇糖苷可為1種,亦可為2種以上。含有甜菊醇糖苷之非醱酵類啤酒發泡性飲料例如能夠藉由將含有甜菊醇糖苷之甜菊萃取物、甜菊粉末、或由該等精製而得之甜菊醇糖苷作為原料而進行製造。甜菊萃取物除利用適當之萃取溶劑自甜菊之葉萃取之萃取物本身以外,亦包含該萃取物之粗精製物或生成物。又,藉由將對甜菊萃取物、甜菊粉末、或由該等精製而得之甜菊醇糖苷進行糖基轉移酶處理而成者(以下,有時稱為「酵素處理甜菊」)作為原料,亦能夠製造本發明之類啤酒發泡性飲料。作為本發明之類啤酒發泡性飲料所含有之甜菊醇糖苷,較佳為含有選自由甜菊苷、甜菊雙糖苷A、及該等之糖基轉移酶處理物所組成之群中之1種以上,尤其是,更佳為含有選自由甜菊苷及該等之糖基轉移酶處理物所組成之群中之1種以上,進而較佳為含有甜菊苷之糖基轉移酶處理物。飲料中之甜菊醇糖苷之含量例如可根據藉由HPLC(High Performance Liquid Chromatography,高速液相層析法)分析獲得之色譜圖之峰面積而求出。關於根據峰面積之定量方法,可根據面積百分率法求出,亦可根據與濃度已知之標準品之峰面積之比而求出。作為本發明之類啤酒發泡性飲料之甜菊醇糖苷之含量,只要為能夠賦予充分之飲用感及類似啤酒之澀味且由甜菊醇糖苷產生之甜味不被感受為作為類啤酒發泡性飲料之異味之量,則並無特別限定,可考慮目標製品品質等而適當決定。作為本發明之類啤酒發泡性飲料之甜菊醇糖苷之含量,較佳為10~80 mg/L,更佳為20~80 mg/L,進而較佳為20~50 mg/L,進而更佳為20~40 mg/L。本發明之類啤酒發泡性飲料之甜菊醇糖苷之含量亦可基於經蔗糖換算之含量來決定。例如,甜菊醇糖苷之含量較佳為飲料之經蔗糖換算之含量成為1~15 g/L之量,更佳為成為2.5~12 g/L之量,進而較佳為成為3~7 g/L之量。再者,所謂「高甜度甜味料之經蔗糖換算之含量」係指使高甜度甜味料之含量乘以甜度而得之量。例如,於甜度180之酵素處理甜菊為28 mg/L之情形時,經蔗糖換算之量成為5 g/L。本發明之類啤酒發泡性飲料除甜菊醇糖苷以外,亦含有聚葡萄糖作為水溶性食物纖維。藉由尤其使用聚葡萄糖作為水溶性食物纖維,而因甜菊醇糖苷產生之澀味或甜味一致,能夠進一步改善類似啤酒之良好之澀味及滋味無窮感。作為本發明之類啤酒發泡性飲料之聚葡萄糖之含量,只要為能夠將由甜菊醇糖苷產生之甜味及澀味整體改善為更溫和之味道之量,則並無特別限定,可考慮所調配之甜菊醇糖苷之量或目標製品品質等而適當決定。作為本發明之類啤酒發泡性飲料之聚葡萄糖之含量,較佳為4~40 g/L,更佳為4~30 g/L,進而較佳為4.5~25 g/L,進而更佳為6~20 g/L。本發明之類啤酒發泡性飲料藉由使用甜菊醇糖苷作為甜味料,即便不使用蔗糖,亦能夠達成類似啤酒之飲用感。作為本發明之類啤酒發泡性飲料之糖質濃度,較佳為未達2.0 g/100 mL,更佳為未達0.9 g/100 mL,進而較佳為未達0.5 g/100 mL。本發明之類啤酒發泡性飲料之糖質濃度例如可藉由僅使用糖質含量相對較低者作為原料而進行製造。作為本發明之類啤酒發泡性飲料,由於順應消費者之健康意向,故而較佳為嘌呤體濃度較低。本發明之類啤酒發泡性飲料之嘌呤體濃度較佳為未達0.2 mg/100 mL,更佳為0.1 mg/100 mL以下,進而較佳為未達0.08 mg/100 mL。再者,於本發明及本申請說明書中,所謂嘌呤體,係指腺嘌呤、黃嘌呤、鳥嘌呤、次黃嘌呤之嘌呤體鹼基4種之總量。類啤酒發泡性飲料或原料中之嘌呤體含量例如可藉由於利用過氯酸進行之水解後使用LC-MS/MS進行檢測之方法(「酒類之嘌呤體之微量分析之指導」,財團法人日本食品分析中心,網際網路<URL: http://www.jfrl.0r.jp/item/nutrition/ post-31.html>,2014年1月檢索)進行測定。本發明之類啤酒發泡性飲料較佳為僅含有甜菊醇糖苷作為甜味料之飲料,但亦可於無損本發明效果之範圍內,含有甜菊醇糖苷以外之甜味料。作為甜菊醇糖苷以外之甜味料,可為砂糖,可為甜度相對較低者,亦可為高甜度甜味料。作為甜度相對較低之甜味料,具體而言,可列舉多糖類、甜味系胺基酸。所謂多糖類,係指3個以上之單糖聚合而成之糖質。多糖類主要根據其大小大致分為澱粉、糊精及低聚醣。低聚醣係3~10個左右之單糖聚合而成之糖質,糊精係將澱粉水解而獲得之糖質且大於低聚醣者。作為甜味系胺基酸,可列舉丙胺酸或甘胺酸,較佳為丙胺酸。作為高甜度甜味料,可列舉乙醯磺胺酸鉀、紐甜(neotame)、阿斯巴甜、蔗糖素等。該等甜味料可僅使用1種,亦可將2種以上併用。本發明之類啤酒發泡性飲料可為僅含有聚葡萄糖作為水溶性食物纖維之飲料,亦可為含有聚葡萄糖以外之水溶性食物纖維之飲料。所謂水溶性食物纖維,係指溶解於水中且不被或難以被人之消化酶消化之碳水化合物。藉由含有水溶性食物纖維,而成為飲用感更良好之類啤酒發泡性飲料。作為調配至本發明之類啤酒發泡性飲料中之聚葡萄糖以外之水溶性食物纖維,例如可列舉難消化性糊精、大豆食物纖維、半乳甘露聚糖、菊糖、瓜爾膠分解物、果膠、阿拉伯膠等。該等水溶性食物纖維可僅使用1種,亦可將2種以上併用。本發明之類啤酒發泡性飲料較佳為進而含有酸味料。藉由含有酸味料,可獲得香味之均衡性優異、類啤酒性更強之類啤酒發泡性飲料。作為酸味料,只要為能夠調配至飲食品中之酸味料,則並無特別限定,可根據對最終製品要求之品質特性,與其調配量一起適當決定。作為酸味料,只要為通常用於飲食品之製造者,則並無特別限定,例如可列舉乳酸、檸檬酸、葡萄糖酸、蘋果酸、酒石酸、富馬酸、琥珀酸、己二酸、富馬酸、磷酸、及其等之鹽等。該等酸味料可僅使用1種,亦可將2種以上併用而使用。於本發明之類啤酒發泡性飲料含有酸之情形時,較佳為以飲料之pH值成為3.0~4.0之方式調整酸之添加量。若添加至飲料中之酸之量過多,則會導致酸味加強,而變得難喝。藉由以飲料之pH值成為3.0~4.0左右之方式調節酸之量進行添加,能夠於製造之非醱酵類啤酒發泡性飲料中,使香味之均衡性進一步改善。本發明之類啤酒發泡性飲料較佳為進而含有苦味料。苦味係啤酒之特徵之一,藉由含有苦味料,可獲得類啤酒性更強之類啤酒發泡性飲料。作為苦味料,只要為於作為製品之類啤酒發泡性飲料中呈現出與啤酒同質或者近似之苦味者,則並無特別限定,可為啤酒花中包含之苦味成分,亦可為啤酒花中不含之苦味成分。作為該苦味料,具體而言,可代表性地列舉:鎂鹽、鈣鹽、檸檬酸三丁酯、檸檬酸三乙酯、柚苷、苦木素、異α酸、四異α酸、β酸之氧化物、奎寧、苦瓜蛋白、槲皮苷、可可鹼、咖啡因等苦味賦予成分、及苦瓜、當藥茶、苦丁茶、洋艾萃取物、龍膽草萃取物、金雞納萃取物等苦味賦予素材。該等苦味料可僅使用1種,亦可將2種以上併用。大多數啤酒為淺黃色~深褐色或黑色之透明溶液。藉由使本發明之類啤酒發泡性飲料進而含有色素,可賦予與啤酒相同之顏色。作為該色素,只要為可賦予類似啤酒之顏色且可食用之色素,則並無特別限定,尤佳為焦糖化反應物(焦糖色素)。於本發明之類啤酒發泡性飲料含有色素之情形時,該色素之含量可根據所使用之色素之種類或對最終製品要求之品質特性等進行適當調整。作為本發明之類啤酒發泡性飲料,較佳為以飲料之色度成為2°EBC以上之方式添加色素,更佳為以成為5°EBC以上之方式進行添加,進而較佳為以成為7°EBC以上之方式進行添加,進而更佳為以成為7~16°EBC之方式進行添加。再者,色度可藉由EBC(European Brewery Convention,歐洲啤酒釀造協會)之Analytica-EBC標準法或依據其之方法進行測定。EBC係啤酒之分析中之色度單位,且係由數值(利用具有EBC色度之9個玻璃圓盤之比色器,以目視進行測定,或者基於波長430 nm下之吸光度算出)表示啤酒顏色之深淺者。啤酒之外觀上之最大特徵係於注入至容器時泛起白色之漂亮之泡沫。因此,本發明之類啤酒發泡性飲料較佳為進而含有起泡劑。作為該起泡劑,例如可列舉大豆食物纖維、大豆肽、大豆皂苷、海藻酸酯、皂樹皂苷等。該等起泡劑可僅使用1種,亦可將2種以上併用而使用。作為本發明之類啤酒發泡性飲料,較佳為含有選自由大豆肽、大豆食物纖維、海藻酸酯、及皂樹皂苷所組成之群中之1種以上,更佳為含有選自由大豆食物纖維及皂樹皂苷所組成之群中之1種以上。於本發明之類啤酒發泡性飲料含有起泡劑之情形時,該起泡劑之含量可根據所使用之起泡劑之種類或組合、對最終製品要求之品質特性等進行適當調整。作為本發明之類啤酒發泡性飲料,較佳為以飲料之NIBEM值成為80以上之方式添加起泡劑,更佳為以成為100以上之方式進行添加,進而較佳為以成為150以上之方式進行添加。再者,NIBEM值係以導電率測定所注入之泡沫之崩解速度而得者,且係啤酒等之泡沫持久性評價中所通常使用者。非醱酵類啤酒發泡性飲料之NIBEM值可藉由EBC(European Brewery Convention)之Analytica-EBC標準法或依據其之方法進行測定。作為本發明之類啤酒發泡性飲料,可為含有乙醇之酒精飲料,亦可為不含乙醇之無酒精飲料。於本發明之類啤酒發泡性飲料含有乙醇之情形時,飲料中之乙醇濃度較佳為1~9體積%,更佳為1~8體積%,進而較佳為1~7體積%。再者,含有乙醇之非醱酵類啤酒發泡性飲料可藉由將含酒精之蒸餾液作為原料而進行製造。含酒精之蒸餾液係指藉由蒸餾操作而獲得之含有酒精之溶液,可使用通常被分類為蒸餾酒者。例如可使用在酒類之製造中通常使用之原料用酒精、烈性酒、威士忌、白蘭地、伏特加、朗姆酒、龍舌蘭酒、杜松酒、燒酒等。本發明之類啤酒發泡性飲料可於無損本發明之效果之範圍內進而含有其他成分。作為該其他成分,可列舉來自酵母或來自小麥等穀物之蛋白質分解物、麥芽糖化液、果汁、香草、香料等。作為香料,例如可列舉啤酒風味料、啤酒香料、啤酒花香料、麥芽香料、碳酸增強劑等。本發明之類啤酒發泡性飲料除將甜菊醇糖苷及聚葡萄糖作為原料以外,可以與一般之類啤酒發泡性飲料之製造相同之方式進行製造。於本發明之類啤酒發泡性飲料為非醱酵類啤酒發泡性飲料之情形時,例如可藉由如下製造方法進行製造,該製造方法具有:將包含甜菊醇糖苷之原料、聚葡萄糖及其他原料混合而製備調合液之製備步驟、及於藉由上述製備步驟所獲得之調合液中添加二氧化碳之氣體導入步驟或添加碳酸水之加水步驟。於使用啤酒花或啤酒花萃取物等之類的包含α酸之原料作為苦味料之情形時,可藉由如下製造方法進行製造,該製造方法具有:將原料混合而製備調合液之製備步驟、對藉由上述製備步驟而獲得之調合液進行煮沸處理而使α酸異構化之異構化步驟、及於上述異構化步驟後向異構化之調合液中添加二氧化碳之氣體導入步驟或添加碳酸水之加水步驟。煮沸方法及其條件可適當決定。又,香料或色素之混合時機可與其他原料同時,亦可於氣體導入步驟或加水步驟之後。首先,於製備步驟中,藉由將原料混合,而製備調合液。於製備步驟中,較佳為將二氧化碳、香料及色素以外之全部原料混合而製備調合液。將各原料混合順序並無特別限定。可於原料水中同時添加全部原料,亦可於使先添加之原料溶解之後再添加其餘之原料等依次添加原料。又,例如可將固體(例如,粉末狀或顆粒狀)原料及酒精混合於原料水中,亦可預先將固體原料製成水溶液,再將該等水溶液及酒精、視需要之原料水進行混合。於在製備步驟中製備之調合液中產生不溶物之情形時,較佳為於任一步驟中對該調合液進行過濾等將不溶物去除之處理。尤其是,於進行異構化步驟之情形時,較佳為自異構化處理後之調合液去除不溶物。不溶物去除處理並無特別限定,可藉由過濾法、離心分離法等於該技術領域中通常使用之方法而進行。於本發明中,不溶物較佳為過濾去除,更佳為利用矽藻土過濾進行去除。繼而,作為氣體導入步驟,於藉由製備步驟獲得之調合液中添加二氧化碳。藉此,獲得非醱酵類啤酒發泡性飲料。藉由添加碳酸,而賦予與啤酒相同之爽快感。再者,二氧化碳之添加可藉由常規方法進行。例如,可將藉由製備步驟獲得之調合液與碳酸水混合,亦可於藉由製備步驟獲得之調合液中直接添加二氧化碳並使其溶解。添加二氧化碳之後,亦可對所獲得之非醱酵類啤酒發泡性飲料進一步進行過濾等將不溶物去除之處理。不溶物去除處理並無特別限定,可藉由於該技術領域中通常使用之方法而進行。所獲得之非醱酵類啤酒發泡性飲料通常藉由填充步驟而填充至罐、瓶、PET瓶等容器中而作為製品發貨。於本發明之類啤酒發泡性飲料為醱酵類啤酒發泡性飲料之情形時,例如可藉由釀造(醱酵原料液製備)、醱酵、貯酒、過濾之步驟進行製造。作為原料之包含甜菊醇糖苷之原料及聚葡萄糖之添加時間或添加量係以於最終獲得之飲料中之濃度包含在所需濃度之範圍內之方式進行適當調整。包含甜菊醇糖苷之原料及聚葡萄糖例如可於釀造步驟中與醱酵原料等同時進行添加,亦可添加至醱酵步驟後之醱酵液中。首先,作為釀造步驟(醱酵原料液製備步驟),對包含醱酵原料及水之混合物進行糖化處理,對所獲得之糖化液進行煮沸處理。具體而言,首先,製備包含醱酵原料及原料水之混合物並進行加溫,使醱酵原料之澱粉質糖化。作為醱酵原料,可僅使用穀物原料,亦可僅使用糖質原料,亦可將兩者混合而使用。作為穀物原料,例如可列舉大麥或小麥、該等之麥芽等麥類、米、玉米、大豆等豆類、薯類等。穀物原料可以穀物糖漿、穀物萃取物等之形式使用,較佳為以進行粉碎處理而獲得之穀物粉碎物之形式使用。穀物類之粉碎處理可藉由常規方法進行。作為穀物粉碎物,亦可為如麥芽粉碎物、玉米澱粉、玉米粗粉等般實施於粉碎處理之前後通常進行之處理而得者。麥芽粉碎物只要為藉由常規方法使大麥、例如二稜大麥發芽並將其乾燥後粉碎成特定之粒度者即可。作為於本發明中所使用之穀物原料,可為1種穀物原料,亦可為將複數種穀物原料混合而成者。例如,亦可使用麥芽粉碎物作為主原料,並使用米或玉米之粉碎物作為副原料。作為糖質原料,例如可列舉液糖等糖類。糖化處理係利用來自穀物原料等之酵素或另外添加之酵素而進行。糖化處理時之溫度或時間可考慮所使用之穀物原料等之種類、穀物原料在醱酵原料整體中所占之比率、所添加之酵素之種類或混合物之量、目標醱酵類啤酒發泡性飲料之品質等而適當調整。例如,糖化處理可藉由將包含穀物原料等之混合物於35~70℃下保持20~90分鐘等常規方法而進行。又,較佳為添加α-澱粉酶、葡糖澱粉酶、聚三葡萄糖酶等糖化酶或蛋白酶等酵素劑。藉由將於糖化處理後獲得之糖化液煮沸,可製備湯汁(糖化液之煮沸物)。糖化液較佳為於煮沸處理前進行過濾,對所獲得之濾液進行煮沸處理。又,亦可使用於麥芽萃取物中添加溫水而成者代替該糖化液之濾液,並將其煮沸。煮沸方法及其條件可適當決定。藉由於煮沸處理前或煮沸處理過程中適當添加香草等,能夠製造具有所需香味之醱酵類啤酒發泡性飲料。尤其是啤酒花較佳為於煮沸處理前或煮沸處理過程中進行添加。藉由於啤酒花之存在下進行煮沸處理,能夠高效地煮出啤酒花之風味、香氣成分。啤酒花之添加量、添加態樣(例如分數次進行添加等)及煮沸條件可適當決定。於藉由釀造步驟獲得之湯汁(煮沸過之糖化液)中,包含因沈澱而產生之蛋白質等糟粕。因此,較佳為於醱酵步驟前,作為固液分離處理步驟,將至少一部分之固形物成分自該湯汁中去除。將固形物成分去除之固液分離處理一般係藉由使用被稱為漩渦槽之槽將沈澱物去除而進行。此時之湯汁之溫度只要為15℃以上即可,一般於50~100℃左右進行。將糟粕去除後之湯汁(濾液)係利用板式冷卻器等冷卻至適當之醱酵溫度。可將去除該粕之後之湯汁直接作為醱酵原料液,亦可以將去除後之湯汁調整為所需萃取物濃度之液體作為醱酵原料液。繼而,作為醱酵步驟,將酵母接種至醱酵原料液而進行醱酵。醱酵所使用之酵母並無特別限定,通常可自酒類之製造所使用之酵母中適當選擇而使用。可為上面醱酵酵母,亦可為下面醱酵酵母,就容易應用於大型釀造設備而言,較佳為下面醱酵酵母。進而,作為貯酒步驟,使所獲得之醱酵液於貯酒槽中熟成,於0℃左右之低溫條件下進行貯藏,使其穩定化之後,作為過濾步驟,對熟成後之醱酵液進行過濾,藉此,將酵母及於該溫度區域中不溶之蛋白質等去除,從而能夠獲得目標醱酵類啤酒發泡性飲料。該過濾處理只要為能夠將酵母過濾去除之方法即可,例如可列舉矽藻土過濾、利用平均孔徑為0.4~0.6 μm左右之過濾器進行之過濾器過濾等。又,為了製成所需之酒精濃度,亦可於過濾前或過濾後添加適量之水而進行稀釋。所獲得之醱酵類啤酒發泡性飲料通常藉由填充步驟進行裝瓶,而作為製品發貨。此外,於利用酵母之醱酵步驟以後之步驟中,例如藉由與含酒精之蒸餾液進行混合,而能夠製造相當於酒稅法中之甜露酒類之醱酵類啤酒發泡性飲料。含酒精之蒸餾液之添加可於用以調整酒精濃度之加水前進行,亦可於加水後進行。所添加之含酒精之蒸餾液就可製造具有更佳之麥感之醱酵類啤酒發泡性飲料而言,較佳為麥烈性酒。 [實施例] 其次,示出實施例及參考例,更詳細地說明本發明,但本發明並不限定於以下之實施例等。 [參考例1] 於非醱酵類啤酒發泡性飲料中調配甜菊醇糖苷,調查對呈味之影響。作為甜菊醇糖苷,使用酵素處理甜菊。 <非醱酵類啤酒發泡性飲料之製造> 首先,準備對海庫勒斯(Herkules)種啤酒花之啤酒花萃取物(製品名:「CO2
Hop Extract」,Barth-Haas Group公司製造)進行煮沸處理所得物作為原料。於原料水中,分別以飲料之異α酸含量成為0.02 g/L之方式調配該煮沸處理所得之啤酒花萃取物,以飲料之終濃度成為0.3 g/L之方式調配焦糖色素,以飲料之終濃度成為0.50 g/L之方式調配磷酸,以飲料之終濃度成為0.35 g/L之方式調配檸檬酸鈉,且以飲料之終濃度成為0.8 g/L之方式調配啤酒香料,將所獲得之飲料作為基底飲料。對該基底飲料,以飲料中之最終濃度成為表1中記載之量之方式調配酵素處理甜菊(商品名:「SK SWEET FZ」,主成分:甜菊苷及其酵素處理物(85%以上),而製造非醱酵類啤酒發泡性飲料。具體而言,將全部原料調配至原料水中並調整為1 L而製備調合液(一次原料液)。繼而,向澄清化之一次原料液之液中吹入二氧化碳,以二氧化碳成為2.9氣體容積之方式使其溶解,藉此獲得非醱酵類啤酒發泡性飲料。 <官能評價> 所製造之非醱酵類啤酒發泡性飲料之官能評價係由啤酒類專業官能檢查員5名,對飲料之甜味、澀味及類啤酒性,將對照樣品(基底飲料)設為3分,將感受強於對照樣品者設為5分,將感受弱於對照樣品者設為1分,以五個等級評價進行官能評價。所謂類啤酒性係綜合地判斷是否接近啤酒。於與對照樣品相比存在0.5分以上之差之情形時,該飲料係評價為較對照更良好(有改善效果),於存在1分以上之差之情形時,該飲料係評價為較對照顯著地良好(有顯著之效果)。將各非醱酵類啤酒發泡性飲料之官能評價之結果與酵素處理甜菊之調配量(mg/L)一併示於表1。評價欄中,括弧內之數值表示有多名進行該評價之官能檢查員之情形時之人數。結果,於酵素處理甜菊之調配量為15 mg/L(甜菊苷及其酵素處理物之含量為12.75~15 mg/L之範圍內)之樣品1-2、酵素處理甜菊之調配量為30 mg/L(甜菊苷及其酵素處理物之含量為25.5~30 mg/L之範圍內)之樣品1-3、酵素處理甜菊之調配量為50 mg/L(甜菊苷及其酵素處理物之含量為42.5~50 mg/L之範圍內)之樣品1-4、酵素處理甜菊之調配量為80 mg/L(甜菊苷及其酵素處理物之含量為68~80 mg/L之範圍內)之樣品1-5中,與基底飲料(對照樣品)相比澀味較強,類啤酒性得到改善。另一方面,於酵素處理甜菊之調配量為120 mg/L之樣品1-6之非醱酵類啤酒發泡性飲料中,雖澀味充分,但強烈感受到作為異味之甜味,類啤酒性較對照樣品下降。 [表1]
[參考例2] 於非醱酵類啤酒發泡性飲料中調配甜菊醇糖苷、乙醯磺胺酸鉀或蔗糖素,調查對呈味之影響。作為甜菊醇糖苷,使用與參考例1相同之酵素處理甜菊。調配之高甜度甜味料之濃度係以甜度成為相同程度之方式進行調整。具體而言,於參考例1中使用之基底飲料中,以飲料中之最終濃度成為表2中記載之量之方式調配酵素處理甜菊(甜度180)、乙醯磺胺酸鉀(甜度200,San-Ei Gen公司製造)、及蔗糖素(甜度600,San-Ei Gen公司製造),除此以外,以與參考例1相同之方式製造非醱酵類啤酒發泡性飲料。將調配有酵素處理甜菊之樣品2-1作為對照樣品,除此以外,以與參考例1相同之方式,進行所製造之各非醱酵類啤酒發泡性飲料之官能評價,將所得之結果與調配至各飲料中之高甜度甜味料之量(mg/L)一併示於表2。結果,於調配有乙醯磺胺酸鉀之樣品2-2及調配有蔗糖素之樣品2-3之非醱酵類啤酒發泡性飲料中,儘管甜度與調配有酵素處理甜菊之樣品2-1相同,卻感受到異質之甜度,導致類啤酒性下降,又,澀味亦下降。推測其原因是否在於:甜菊醇糖苷之甜味之表現遲於乙醯磺胺酸鉀或蔗糖素,因此,與來自異構化啤酒花萃取物之啤酒之獨特之苦味相競爭,藉此不會感受到成為異味之甜味,而有助於飲用感及類啤酒性之提高。 [表2]
[實施例1] 於調配有甜菊醇糖苷之類啤酒發泡性飲料中,進而調配聚葡萄糖,調查對呈味之影響。作為甜菊醇糖苷,調配與參考例1中類啤酒性之評價最高之樣品1-3相同量(30 mg/L)之與參考例1相同之酵素處理甜菊。具體而言,於參考例1中使用之基底飲料中,以飲料中之最終濃度成為表3中記載之量之方式分別調配酵素處理甜菊、及聚葡萄糖劑(製品名:「Litesse HF」,食物纖維純度:95%,Danisco公司製造),除此以外,以與參考例1相同之方式製造非醱酵類啤酒發泡性飲料。表3之「聚葡萄糖濃度[g/L]」中,上段為調配至飲料中之聚葡萄糖劑之濃度,下段為實際上調配至飲料中之聚葡萄糖之濃度。將僅調配有酵素處理甜菊之樣品3-1作為對照樣品,除此以外,以與參考例1相同之方式,進行所製造之各非醱酵類啤酒發泡性飲料之官能評價,將所得之結果示於表3。如表3所示,於聚葡萄糖之調配量為4.75 g/L以上之樣品3-3~樣品3-6之非醱酵類啤酒發泡性飲料中,苦味或甜味雖與樣品3-1之非醱酵類啤酒發泡性飲料並無多大差異,但類啤酒性得到改善,進而,根據官能檢查員之評價可知,啤酒味道溫和。尤其是,於聚葡萄糖之調配量為4.75~19 g/L樣品3-3~樣品3-5中,類啤酒性得到顯著改善。根據該等結果確認:藉由併用甜菊醇糖苷與聚葡萄糖,能夠改善類啤酒性。 [表3]
於此,針對各樣品,進而對溫和度進行官能評價。此處,「溫和」係刺激之反義詞,係指順滑且一致之味感。具體而言,由相同之啤酒類專業官能檢查員5名,與對照樣品(樣品3-1)進行比較,將較對照樣品溫和度提昇者評價為「○」,將與對照樣品為相同程度者評價為「△」,將較對照樣品下降(=有刺激感)者評價為「×」。將對各樣品進行各評價之官能檢查員之人數示於表4。 [表4]
如表4所示,於聚葡萄糖之調配量為4.75 g/L以上之樣品3-3~樣品3-6之非醱酵類啤酒發泡性飲料中,過半數之官能檢查員判定為溫和。根據該結果,推測:於樣品3-3~樣品3-6之非醱酵類啤酒發泡性飲料中,相較於僅調配有酵素處理甜菊之樣品3-1,類啤酒性得到改善,其原因在於:藉由聚葡萄糖,而刺激減少,香味實現一致性,藉此實現類似啤酒味道之一致性。推測:尤其是藉由聚葡萄糖,使來自甜菊醇糖苷之澀味品質得到改善從而賦予來自澀味之適度之飲用感之情況亦有助於類啤酒性之改善。另一方面,於聚葡萄糖之調配量為38 g/L樣品3-6中,溫和度雖有所改善,但類啤酒性下降,因此,若變得過於溫和,則味道變淡而發現不期望之傾向。 [實施例2] 對藉由併用調配甜菊醇糖苷與聚葡萄糖而產生之類啤酒性之改善效果是否亦可藉由甜菊醇糖苷與其他水溶性食物纖維之併用調配而獲得進行調查。作為甜菊醇糖苷,調配與參考例1中類啤酒性之評價最高之樣品1-3為相同量(30 mg/L)之與參考例1相同之酵素處理甜菊。具體而言,於參考例1中使用之基底飲料中,以飲料中之水溶性食物纖維之最終濃度成為9.5 g/L之方式分別調配酵素處理甜菊、及聚葡萄糖劑(製品名:「Litesse HF」,食物纖維純度:95%,Danisco公司製造)或難消化性糊精劑(製品名:「E纖維」,食物纖維純度:90%,Danisco公司製造),除此以外,以與參考例1相同之方式製造非醱酵類啤酒發泡性飲料。將調配有酵素處理甜菊之樣品4-1作為對照樣品,除此以外,以與參考例1相同之方式,進行所製造之各非醱酵類啤酒發泡性飲料之類啤酒性之官能評價。又,將調配有酵素處理甜菊之樣品4-1作為對照樣品,除此以外,以與參考例1相同之方式,進行所製造之各非醱酵類啤酒發泡性飲料之溫和度之官能評價。將結果示於表5。如表5所示,於調配有難消化性糊精之樣品4-2之非醱酵類啤酒發泡性飲料中,與調配有聚葡萄糖之樣品4-3之非醱酵類啤酒發泡性飲料不同,未觀察到溫和度或類啤酒性之改善。根據該結果確認:藉由與甜菊醇糖苷併用調配而產生之類啤酒性改善效果係調配有水溶性食物纖維中之尤其是聚葡萄糖之情形時所特有之效果。 [表5]
Claims (5)
- 一種類啤酒發泡性飲料,其特徵在於含有10~80mg/L之甜菊醇糖苷及4~40g/L之聚葡萄糖。
- 如請求項1之類啤酒發泡性飲料,其為非醱酵飲料。
- 如請求項1或2之類啤酒發泡性飲料,其中上述甜菊醇糖苷係選自由甜菊苷、甜菊雙糖苷A、及該等之糖基轉移酶處理物所組成之群中之1種以上。
- 如請求項1或2之類啤酒發泡性飲料,其中酒精含量未達1.0%。
- 如請求項3之類啤酒發泡性飲料,其中酒精含量未達1.0%。
