Description
本發明係關於呈味改善劑者,尤其係關於不降低含鉀鹽之飲食品具有的鹽味,更不改變飲食品原本的風味輪廓(Flavor Profile),減輕來自鉀鹽的金屬味等之不愉快味之優異的呈味改善劑。
食鹽(氯化鈉)係藉由賦予飲食物鹽味而調整味道,或提升保存性或物性等之食品業界不可或缺的素材。然而過度攝取食鹽時,體內堆積許多鈉,隨之而血管的水分量增加,血壓上升。亦即,高血壓發病原因與過度攝取食鹽密切相關已為今日的常識,而且成為引起其他合併症(心臟病、腎臟病等)的原因亦為眾知事實,隨著人口組成的高齡化,希望攝取量減少。
因此,近年來以世界規模地執行減少食鹽攝取量的行動,歐美推薦1日的目標攝取量為6g。另一方面,於日本國內,厚生勞働省雖勸告每一天的食鹽攝取量為10g以下,但於日本高血壓學會之「高血壓治療指導方針(guideline)」則接受WHO或歐美的基準,食鹽攝取量係以每一天6g以下為宜。相對於此,依據近年來國民營養調查的結果,揭示日本人1日攝取約11~14g的食鹽。
因此,近年來嘗試減少飲食物中所含食鹽的量,具體上揭示幾個嘗試藉由增強鹽味.鹽辛味以減少使用食鹽量。作為不防礙飲食物原本的風味而增強鹽味的方法,已知例如含有千日菊醯胺之組成物增強鹽味(專利文獻1)。藉由此方法減少鈉含量時,雖可增強某程度的鹽味,但因為未見有基料整體呈味的增強效果,所以指出不能補足減少鈉含量而發生整體的呈味不足。
另一方面,作為減少飲食物中鈉量之方法,揭示藉由具有鹽味之氯化鉀或氯化鎂或氯化鈣以取代部份食鹽中的鈉,相對地減少鈉量的方法(專利文獻2),但任一種皆有苦味或鹼澀味、金屬味等之來自素材之不愉快味道,大幅限制該使用量、使用範圍。
改善氯化鉀呈味性之目的下,亦進行許多配合無機鹽或調味料、甘味料等於氯化鉀之嘗試。作為改善氯化鉀呈味之成分,已知有麩胺酸鹽、核酸系呈味物質(專利文獻3、專利文獻4)、檸檬酸鹽(專利文獻5)、自己分解酵母(專利文獻6)、粉末固形鹽滷(專利文獻7)、昆布萃取物(專利文獻8)、茶,魚腥草、麥、番石榴、蕎麥(專利文獻9)、源自蕈類成分(專利文獻10)等。另外,揭示混合氯化鈉及氯化鉀於膠黏劑,形成顆粒化之技術(專利文獻11)、組合氯化鉀及纖維素系物質等以改善氯化鉀食感之方法(專利文獻12)等。然而,此等情況亦又具有獨特的來自素材的不愉快味道,強烈要求其改善。
然而,上述之傳統技術係因為與氯化鉀組合之無機鹽、調味料等具有香味、不愉快味道,所以使用量受到限制,不能得到充分的氯化鉀呈味改善效果的情況亦多,尚未開發出品質上可充分滿足含鉀飲食品的呈味改善劑。

發明之揭示
本發明的目的係提供不影響飲食品原本的香味,改善鉀鹽特有的不愉快味道,進而提高鉀鹽作為食鹽代替品之價值,減少飲食品鈉量之手段及食鹽組成物。以及提供具有改善食鹽組成物不愉快味道之效果之呈味改善劑。
本發明者等為解決傳統技術的問題點,努力進行研究的結果係發現藉由使奎尼酸或含奎尼酸之組成物、千日菊醯胺或含千日菊醯胺之植物萃取物或植物精油、蔥屬(Allium)植物萃取物之至少1種含於鉀鹽或含鉀鹽之飲食品中,可改善鉀鹽特有的鹼澀味或金屬味等之不愉快味道,進而增強鹽味及呈味,而完成本發明。
本發明係如下述所組成。
(1)含有選自奎尼酸或含奎尼酸之組成物、千日菊醯胺或含千日菊醯胺之植物萃取物或植物精油、蔥屬(Allium)植物萃取物所成群之至少1種為特徵之鉀鹽或含鉀鹽之飲食品的呈味改善劑。
(2)含有選自奎尼酸或含奎尼酸之組成物、千日菊醯胺或含千日菊醯胺之植物萃取物或植物精油、蔥屬植物萃取物所成群之2種以上為特徵之鉀鹽或含鉀鹽之飲食品的呈味改善劑。
(3)含奎尼酸之組成物係以水萃取處理茶葉得到萃取液,接著,以吸附劑純化處理該萃取液所得之純化物而成為特徵之(1)或(2)記載之呈味改善劑。
(4)含奎尼酸之組成物係將咖啡豆萃取物進行水解處理,純化水解處理物所得之含奎尼酸之咖啡豆水解物而成為特徵之(1)或(2)記載之呈味改善劑。
(5)千日菊醯胺或含千日菊醯胺之植物萃取物或植物精油係源自荷蘭千日菊(Spilanthes acmella)或黃花千日菊(Spilanthes paniculata)之萃取物或精油為特徵之(1)或(2)記載之呈味改善劑。
(6)蔥屬植物萃取物係紅蔥(shallot)及/或洋蔥之萃取物為特徵之(1)或(2)記載之呈味改善劑。
(7)蔥屬植物萃取物係於-20~0℃自蔥屬植物以醇水溶液所萃取出者為特徵之(1)、(2)或(6)中任一項記載之呈味改善劑。
(8)含有(1)~(7)中任一項記載之呈味改善劑為特徵之鉀鹽組成物。
(9)含有(1)~(7)中任一項記載之呈味改善劑為特徵之含鉀鹽之飲食品。
(10)含鉀鹽之飲食品係減鹽飲食品之(9)記載之含鉀鹽之飲食品。
(11)添加(1)~(7)中任一項記載之呈味改善劑為特徵之含鉀鹽之飲食品的呈味改善方法。
(12)含鉀鹽之飲食品係減鹽飲食品為特徵之(11)記載之含鉀鹽之飲食品的呈味改善方法。

因為本發明之呈味改善劑係不影響飲食品原本的香味,可改善鉀鹽特有的金屬味、鹼澀味等之不愉快味道,增強鹽味,所以比以往容易使用減鹽食品等,可提高鉀鹽作為之食鹽代替品之價值。
本發明之呈味改善劑使用之奎尼酸(1,3,4,5-四羥基環己烷-1-羧酸)係存在許多於蔓越莓果汁等之外,亦以綠原酸(Chlorogenic Acid)等之奎尼酸衍生物廣泛地分布於植物中,可藉由萃取等方法自植物得之。另外,亦可化學合成,市售作為試藥等。本發明中雖可將市售之奎尼酸直接作為呈味改善劑使用,但若考慮作為呈味改善劑使用於飲食品時,以使用自果汁、茶、咖啡等可食性植物原料所得之含奎尼酸之組成物為宜,尤其以奎尼酸含量多,亦容易取得之茶葉或咖啡豆為原料為宜。具體上可自茶葉及咖啡豆得到如下之本發明之呈味改善劑。
原材料之茶葉係只要為山茶科之茶樹(Camellia sinensis var.)之芽、葉、莖,不論品種、產地皆可使用,另外,可為生葉,亦可為經前處理過者。作為茶的前處理方法雖有不發酵、半發酵、發酵,但任一種處理方法者皆可。可舉如作為不發酵茶之綠茶(煎茶、玉露、被覆茶、番茶、玉綠茶、抹茶、焙茶等)、作為半發酵茶之烏龍茶、包種茶等、作為發酵茶之紅茶。雖可使用任一種的茶葉作為原料,但就奎尼酸之產率等之觀點,以紅茶葉為原料為宜。
使用水及/或極性有機溶劑萃取原材料之茶葉。
作為極性有機溶劑,可列舉甲醇、乙醇、2-丙醇、丙酮等之溶劑,可使用此等之1種或2種以上之混合物,因應需要,可使用與水之混合形態亦即水溶液之形態。就對人體之安全性及操作性之觀點,使用於萃取的溶劑係以水或如乙醇、丙醇、丁醇之碳數2~4之脂肪族醇為宜,以水或乙醇或此等之混合物最佳。使用於萃取的溶劑量雖可任意選擇,但一般使用茶葉的1~30倍量(重量),以使用5~20倍量為宜。萃取的溫度及時間係可任意決定,雖無特別限定,但適當為10~100℃,1~12小時,以1~2小時為宜。
自茶葉等萃取之萃取液係除去不溶解物,因應需要進行濃縮後,進行下述之純化處理。
將前述萃取步驟所得之萃取液,藉由接觸例如活性碳、矽膠、合成吸附劑之吸附劑,進行純化處理,可得到本發明之呈味改善劑。
作為吸附劑之性狀,以比表面積300~600m2
/g,細孔徑為50~300之多孔性體為宜。不侷限活性碳、矽膠、合成吸附劑等之種類,皆可使用。
尤其,使用合成吸附劑為宜,作為該例,可列舉由苯乙烯-二乙烯苯共聚物系樹脂而成之合成吸附劑「Diaion(註冊商標)HP」(三菱化學股份有限公司製)、丙烯酸酯系樹脂之合成吸附劑「Amberlite(註冊商標)XAD-7」(Rohm and Haas公司製)等。
接觸此等吸附劑之方法係可為批式、柱式中任一種皆可,但就商業上生產規模,以柱式有利,適宜之處理條件為空間速度SV=1。
由吸附劑純化處理所得之萃取液雖可直接、或濃縮作為本發明之呈味改善劑使用,但若考慮作業性良好時,以藉由減壓濃縮或冷凍乾燥等除去溶劑,作為粉末狀使用為宜。
另外,藉由使用以下所述之純化處理,因為可除去著色物質、咖啡因、多酚類、多糖類、蛋白質、鈣、鉀、鈉等之礦物質成分、胺基酸類等之前述吸附劑不能除去之夾雜物,可得到效果更高之呈味改善劑。
亦即,將以水萃取處理茶葉而得之萃取液,以吸附劑純化處理所得之純化物,進一步以1種或2種以上選自如下所述(a)藉由分離膜進行處理、(b)藉由添加有機溶劑之不溶解物處理及(c)藉由陽離子交換樹脂處理之純化方法進行處理,可得到效果更高之呈味改善劑。
(a)~(c)之純化方法係因應需要,可選擇任一個,或適當組合2個以上。
藉由膜(過濾)處理以除去高分子之多糖類及蛋白質而純化的方法。作為膜的種類,可利用超濾膜、逆滲透膜、透析膜。
藉由添加有機溶劑於萃取液或該濃縮液,以除去析出的不溶解物而純化的方法。
作為添加的有機溶劑,可列舉甲醇、乙醇、正丙醇、丙酮等,就安全性及操作性之觀點,此等中以乙醇為適宜。添加量並非受特別限定,相對於萃取液或濃縮液,以0.1~10質量份為適宜。
藉由使萃取液或濃縮液接觸陽離子交換樹脂而純化的方法。
本發明中使用之陽離子交換樹脂之種類並非受特別限定,但可舉例如由苯乙烯系樹脂而成之磺酸基作為取代基之「Amberlite(註冊商標)IR120B」(Rohm and Haas公司製)或「Diaion(註冊商標)SK1B」(三菱化學股份有限公司)等為適宜者。
經過上述(a)~(c)之純化步驟所得之純化物雖可直接作為呈味改善劑使用,但若考慮作業性良好時,藉由減壓濃縮或冷凍乾燥等以除去溶劑,以粉末狀使用為宜。
原材料之咖啡豆並不侷限於產地品種,可使用任意豆子。咖啡生豆中含有大量的奎寧酸係綠原酸等之衍生物,經焙炒的咖啡豆係於焙炒時,綠原酸類被水解而產生奎尼酸。因此,原材料為經焙炒過之咖啡豆時,將焙炒咖啡豆直接或粉碎後,藉由水及/或水溶性溶劑進行萃取,將所得之萃取液交予於與茶葉時同樣的純化步驟,可製作本發明之呈味改善劑。使用咖啡生豆時,將藉由萃取生豆所得之含綠原酸等之萃取液,使用如下述之酵素或鹼進行水解。
將咖啡生豆直接或粉碎後,藉由水及/或水溶性溶劑進行萃取。作為水溶性溶劑,可列舉甲醇、乙醇、2-丙醇、丙酮等之溶劑,可使用此等1種或2種以上之混合物,因應需要,可以水溶液形態使用。萃取法係可以一般所使用之條件,並非特別限定者,萃取溶劑量係使用咖啡豆之1~30倍量,以5~20倍量為宜。可任意決定萃取溫度及時間,雖非特別限定者,但以50~100℃,1~24小時,以2~8小時為適當。萃取液係除去不溶解物後,因應需要而經濃縮步驟、酵素分解。所得之萃取液係水萃取液時則直接,含水溶性溶劑時則藉由濃縮等使水溶性溶劑量為5%以下後進行酵素處理為宜。
於酵素分解時可使用鞣酸酶(tannase)或綠原酸酯酶。作為可利用的鞣酸酶種類並非特別限定者,可列舉麴菌等之絲狀菌、酵母、細菌等之微生物,尤其Aspergillus(麴菌)屬或Penicillium(青黴菌)屬所產生之鞣酸酶,但以Aspergillus屬為宜,以使用Aspergillus oryze(米麴菌)所產生之鞣酸酶尤佳。關於可利用之綠原酸酯酶的種類亦非特別限定者,可列舉由Aspergillus屬或Penicillium屬、Botrytis屬等之絲狀菌所產生者,但以使用Aspergillus屬為宜,以日本麴菌(Aspergillus japonicus)或黑麴菌(Aspergillus niger)所產生之綠原酸酯酶尤佳。此等酵素被市售,例如可自KIKKOMAN股份有限公司之製品取得。另外,此等酵素係可以使用由各種固定化方法而固定化者,亦可得到更高效果。
酵素分解的條件雖非特別限定者,但以30~50℃,1~48小時為宜,以35~45℃,2~24小時更適當。
將咖啡豆萃取物以酵素進行水解處理,除去不溶解物後,使水解處理物接觸吸附劑以純化,得到含奎寧酸之咖啡豆水解物。藉由接觸吸附劑,以除去未反應之綠原酸、副產物之咖啡酸、或咖啡因等之夾雜物所純化。作為吸附劑之種類,只要係高分子樹脂系吸附劑即可,並非特別限定者,可舉例如AmberliteIR(organo股份有限公司)之陽離子交換樹脂、苯乙烯-二乙烯苯系合成吸附劑Diaion HP(三菱化學股份有限公司)等,以使用Diaion HP-20為宜。使接觸此等樹脂之方法可為批式、柱式中任一種皆可,但就生產規模一般為柱式。
所得之液狀組成物雖可直接作為本發明之呈味改善劑使用,但以藉由減壓濃縮、冷凍乾燥等除去溶劑,得到粉末狀的目的呈味改善劑為宜。所得之呈味改善劑係除了奎寧酸之外,亦含單糖類、胺基酸等,奎寧酸、單糖類之含有率分別約為30~50質量%、20~40質量%。認為由奎寧酸與其他成分之相乘效果而具有呈味改善劑效果。
進行鹼水解時,將咖啡豆微粉碎,於其中加入鹼水溶液,以60~90℃加熱攪拌10~60分鐘。作為鹼水溶液,可使用氫氧化鈣、氫氧化鈉、碳酸鈉等之水溶液,以使用氫氧化鈣為宜。水解後,加入鹽酸、硫酸、草酸、磷酸等酸於反應液中進行中和處理。
將經中和處理之水解液,交予離子交換膜電氣透析裝置,除去藉由中和產生的鹽。脫鹽係希望以使用相當於陰離子交換膜之分離分子量為100~300,以100為宜的相當膜進行,另外,可使用陽離子交換膜,並無特別限制。
進行上述之水解處理所得之液狀組成物係可直接作為呈味改善劑使用,但以藉由減壓濃縮、冷凍乾燥等除去溶劑,得到粉末狀的目的呈味改善劑為宜。
另外,由如此之粉末狀含奎寧酸之茶葉萃取物而成之呈味改善劑中之奎寧酸、單糖類之含有率係分別約為5~35重量%、1~40重量%,另一方面,由粉末狀之含奎寧酸之咖啡豆水解物而成之呈味改善劑中之奎寧酸、單糖類之含有率係分別約為30~50重量%、20~40重量%。
所謂使用於本發明之呈味改善劑之千日菊醯胺(N-異丁基-2,6,8-癸三烯醯胺)係指菊科荷蘭千日菊(Spilanthes acmella)或黃花千日菊(Spilanthes acmella var.oleracea)等所含之辣味成份。千日菊醯胺係自前述植物採取、純化所得以外,亦可化學合成。亦可使用本發明中任一種方法所得之千日菊醯胺,另外,無須純度高者。於其他成分的味道或氣味不影響飲食品香味下,含千日菊醯胺之植物萃取物或植物精油不經純化亦可使用。就安全性的觀點,以使用自具有食用經驗之植物所得之萃取物或精油為宜,另外,就供給、價格等之實用性之觀點,以使用千日菊醯胺含量多之荷蘭千日菊或黃花千日菊之萃取物或精油尤佳。
千日菊醯胺係例如可自千日菊醯胺含量高之荷蘭千日菊或黃花千日菊之全草或花頭萃取或蒸餾而採取。若列舉由萃取之採取法時,將荷蘭千日菊或黃花千日菊之花頭乾燥.粉碎後,以有機溶劑萃取,得到含千日菊醯胺之萃取液。使用於萃取之有機溶劑並無特別的限制,可適當單獨或混合甲醇、乙醇、丙醇、丙二醇等之醇類、丙酮等之酮類、乙酸乙酯等之酯類、二乙二醇等之醚類、己烷、庚烷等之烴類使用。如醇類之極性有機溶劑為宜,就安全性之觀點,以乙醇尤佳。自所得萃取液餾去溶劑,可得到含千日菊醯胺之萃取液。
所得之含千日菊醯胺之萃取物雖可直接作為本發明之呈味改善劑使用,但萃取物所含千日菊醯胺以外之成分對飲食品香味造成影響成為問題時,以進一步藉由蒸餾等之純化方法提高千日菊醯胺含量為宜。作為精製方法係可列舉分子蒸餾、薄膜蒸餾、各種層析法等,藉由單獨或適當組合使用此等純化方法,可得到千日菊醯胺含量高之呈味改善劑。
所謂本發明所使用之蔥屬植物係只要屬於蔥屬植物即可,並非特別限定者,可使用蒜頭、洋蔥、紅蔥(shallot)、青蔥、韮菜、分蔥、淺蔥、韭蔥(Leek)及茖葱(Allium victorialis ssp.platyphyllus)等。以使用大蒜(Alliumsativum L.)、洋蔥(Allium capa L.)及紅蔥(Allium ascalonicum L.)為宜,以使用紅蔥(Allium ascalonicum L.)及/或洋蔥(Allium capa L.)尤佳,以使用紅蔥(Allium ascalonicum L.)最好。上述蔥屬植物係可單獨,亦或組合2種以上使用。此等植物係可生的狀態切細,或因應目的經過乾燥或加熱處理所萃取,但以生的狀態切細,立即進行冷卻、萃取為宜。
本發明中蔥屬植物之萃取溫度雖無特別限定,但以未達萃取原料結凍之可及低溫進行為宜,-20℃~0℃為適當。以-15℃~0℃尤佳,以-15℃~-5℃最好。蔥屬植物雖於溶劑存在下,於-20℃程度不結凍,但萃取溫度低於-20℃,植物中細胞未被冷凍破壞時,雖然產率升高,但或許因為不適合成分亦被萃取出,香味上有變差之虞。若萃取溫度超過0℃時,植物中的酵素反應變得活躍,控制香味有變得困難之虞。
本發明之萃取蔥屬植物所使用之醇性溶劑係只要分子內具有一個以上的羥基,上述萃取溫度為液體時即可,並非特別限定者,可列舉甲醇、乙醇、丙醇、異丙醇等之一元醇、丙二醇、甘油等之多元醇,以使用甲醇、乙醇、丙醇、異丙醇等之一元醇為宜,以選擇乙醇最好。上述醇類係可以水溶液之形態使用,以30~95%之水溶液為宜,以50~90%之水溶液尤佳,以60~85%之水溶液最好。未滿30%時,以低溫萃取時,溶劑可能於萃取中冷凍,超過95%時萃取時間有變長之虞。
本發明中蔥屬植物之萃取時間係任意設定,並非特別限定者,但以低溫萃取時,以8~96小時進行為宜,以24~48小時尤佳,以48~72小時進行最好。若未滿8小時,萃取效率可能變低,耗費96小時以上進行萃取,於經濟上並不適合。
本發明之呈味改善劑係可使用於鉀鹽或含鉀鹽之飲食品,並無特別的限制,尤其適合於改善廣泛地作為食鹽代替品使用之氯化鉀之呈味。直接添加呈味改善劑於鉀鹽時,混合粉末化之呈味改善劑與鉀鹽之混合粉末,或亦可鉀鹽與呈味改善劑一同溶解於水成水溶液,亦可於水溶液再加入糊精等之賦形劑,藉由噴霧乾燥而成粉末化組成物。亦可添加呈味改善劑於鉀鹽與食鹽、天然鹽、鹽滷等之混合物。
使用呈味改善劑於使用鉀鹽之減鹽食品等之含鉀鹽飲食品時,於該飲食品之製造過程中,可添加適當的呈味改善劑,亦可添加呈味改善劑於已含鉀鹽之飲食品,亦可添加混合上述呈味改善劑及鉀鹽之組成物於飲食品,作為含鉀鹽飲食品。
另外,本發明之呈味改善劑係除了可作為氯化鉀等之食鹽代替品所使用之鉀鹽之外,可添加於含麩胺酸鉀、檸檬酸鉀等之飲食品,減輕鉀化合物之金屬味或鹼澀味等之不愉快味道,改善呈味性。
本發明之呈味改善劑對鉀鹽之添加量係因應由氯化鉀等之食鹽取代率、鉀鹽之添加濃度、其他食品原材料而適當設定,並無特別限定。奎尼酸或含奎尼酸之組成物時,相對於鉀鹽,作為奎尼酸適當量為20~10000ppm,以200~5000ppm之添加量為宜,千日菊醯胺或含千日菊醯胺之植物萃取物或植物精油係相對於鉀鹽,作為千日菊醯胺適當量為1~5000ppm,以10~2000ppm之添加量為宜,蔥屬植物萃取物之含量係相對於鉀鹽,作為適當之萃取物固形分為2~40000ppm,以200~10000ppm之添加量為宜。
直接添加本發明之呈味改善劑於飲食物時,因應飲食品所含鉀鹽的含量,添加必要量之呈味改善劑,但一般而言,奎尼酸或含奎尼酸之組成物時,飲食物中奎寧酸適當量係添加0.1ppm~10ppm,以1ppm~5ppm為宜,千日菊醯胺或含千日菊醯胺之植物萃取物或植物精油時,飲食物中千日菊醯胺適當量係添加5ppb~1000ppb,以50ppb~500ppb為宜,蔥屬植物萃取物時,飲食物中萃取物固形物適當量係0.01ppm~200ppm,以1ppm~50ppm之添加量為宜。含奎尼酸之組成物、千日菊醯胺及蔥屬植物萃取物之比率並無特別限制,可以任意比率配合使用。
呈味改善劑之添加量變多時,因為可感到呈味改善劑本身的香味,所以一般而言係使用其以下之添加量,但呈味改善劑本身的香味不形成問題時,使用超過上述添加量亦無妨。
本發明之奎尼酸或含奎尼酸之組成物、千日菊醯胺或含千日菊醯胺之植物萃取物或植物精油及蔥屬植物萃取物,雖可單獨作為呈味改善劑使用,但亦可併用2種以上作為呈味改善劑使用,此時各呈味改善效果相乘,比單獨使用時顯示更高的效果。併用2種以上時之配合比率,一般係奎尼酸/千日菊醯胺=1/1~100/1、蔥屬萃取物/千日菊醯胺=1/1~1000/1、奎尼酸/蔥屬萃取物=1/1~1/10為宜。

添加本發明之呈味改善劑之對象飲食品係只要含鉀之飲食品即可,並無特別限定,可添加於尋求改善呈味性之所有飲食品。可舉例如(1)菓子類等、(2)麵包類、麵類、飯類等、(3)醃漬物類等、(4)使用魚介類之加工飲食物等、(5)使用獸肉之加工飲食物等、(6)調味料等、(7)其他等。以下係舉例本發明相關的飲食物。
作為菓子類,可舉例如仙貝、小米菓、米香、麻糬類、餡餅、外郎、紅豆餡類、羊羹、水羊羹、錦玉、果凍、長崎蛋糕、糖球、軟式餅乾、硬式餅乾、洋芋片、甜餅乾、派、布丁、奶油餡、布丁餡、泡芙、鬆餅、海棉蛋糕、甜甜圈、巧克力、口香糖、牛奶糖、糖果、花生醬等之糊類等。
作為麵包類、麵類、飯類,可舉例如麵包、烏龍麵、拉麵、中華麵、壽司、五味飯、炒飯、肉菜燴飯(pilaf)、餃子皮、燒賣皮、大阪燒、章魚燒等。
作為醃漬物類,可舉例如米糠漬、梅乾、福神漬、米麴漬、千枚漬、辣韮、味噌漬、澤庵漬及此等醃漬物素等。
作為魚介類,可舉例如鯖魚、沙丁魚、秋刀魚、鮭魚、鮪魚、鰹魚、鯨魚、鰈魚、玉筋魚、香魚等之魚類、日本魷(Todarodes pacificus)、透抽、擬眼烏賊(Sepia lycidas)、螢烏賊等之烏賊類、真蛸(Octopus vulgaris)、短蛸(Octopus ocellatus)等之章魚類、明蝦、牡丹蝦、龍蝦、草蝦等之蝦類、帝王蟹、松葉蟹、三疣梭子蟹、毛蟹等之蟹類、海瓜子、蛤蜊、干貝、牡蠣、貽貝等之貝類等。作為使用此等之加工飲食物,可舉例如罐裝、煮魚、佃煮、魚漿、水產練製品(竹輪、魚板、炸魚板、蟹肉棒等)、油炸物、天婦羅等。
作為獸肉,可舉例如雞肉、豬肉、牛肉、羊肉、馬肉等。作為使用此等之加工飲食物,可舉例如咖哩、燉菜、燉牛肉、牛肉燴飯的材料、肉醬、麻婆豆腐、漢堡、餃子、釜飯材料、湯類、肉丸子、肉塊、獸肉罐等。
作為調味料,可舉例如桌上鹽、調味鹽、醬油、粉末醬油、味噌、粉末味噌、醬醪、醬醢、拌飯料、茶泡飯料、瑪淇淋、美乃滋、沙拉醬、醋、三杯醋、粉末壽司醋、中華料理素、油炸物沾汁、麵沾汁、醬汁、蕃茄醬、烤肉醬、咖哩塊、燉菜素、湯之素、高湯素、綜合調味料、新味醂、油炸粉、章魚燒粉等之預拌粉等。
亦可適用於其他,如乳酪、奶油等之乳製品、蔬菜、筑前煮、關東煮、火鍋等之煮物類、外帶便當材料或熟食類、蕃茄汁、運動飲料等。
本發明之呈味改善劑,尤其不論係減鹽目的之欲提高食鹽之氯化鉀取代率,適合於就氯化鉀之鹼澀味等之呈味性上取代率受限制之飲食品,上述飲食品中,以使用於魚板、火腿、麵包、鹽乾物、醃漬物、梅乾、醬油、高湯、魚醬、味噌、醬汁、湯、奶油、美淇淋、美乃滋、沙拉醬、調味食品、休閒點心等尤佳。
另外,若使用本發明之呈味改善劑時,不侷限於氯化鉀,即使為含鉀飲食品,例如含麩胺酸鉀、檸檬酸鉀等之飲食品,仍可減輕此等金屬味或鹼澀味等之不愉快味道,改善呈味性。
以下係舉實施例具體說明本發明,但本發明並非侷限於實施例記載者。
將500g之咖啡生豆進行微粉碎後,加入5000ml之70質量%乙醇,將其加熱回流2小時。將液體冷卻後,以離心過濾器進行固液分離,將濾液減壓濃縮至乙醇含量至5重量%以下,加入1000單位的綠原酸酯酶(kikkoman公司製),於40℃下攪拌3小時。藉由離心分離除去不溶解物後,將該處理液,通過填充1000ml之合成吸附劑(前述「Diaion HP-20」)之管柱,藉由將溶出來的液體進行冷凍乾燥,得到26.6g之來自咖啡生豆之含奎寧酸組成物(以下記為「含奎寧酸之組成物(1)」)。
另外,1單位的綠原酸酯酶係於30℃的水中,1分鐘水解1微莫耳5-咖啡醯奎寧酸的酵素量。另外,此組成物中,含32%之奎寧酸。
加入1000g蒸餾水於紅茶葉,將其以30分鐘常溫(15~30℃)進行萃取。將萃取液以離心過濾器進行固液分離,得到900g的濾液。加入30g之活性炭於該濾液,攪拌1小時進行純化處理。之後,除去活性炭,進行濃縮後,得到140g之濃縮液。供予濃縮液於填充100ml之陽離子交換樹脂(前述「Diaion SK1B」)之管柱,以空間速度SV=2送液,進行純化處理(再純化處理第1次)。濃縮通過液約成40g後,加入52.5g之95%乙醇、2g之活性炭,進行攪拌及冷卻後,過濾不溶解物(再純化處理第2次)。將78g之所得之濾液,藉由冷凍乾燥,得到4.7g之紅茶葉萃取物(以下記為「含奎寧酸之組成物(2)」)。另外,此組成物中,含16%之奎寧酸。
於10kg之荷蘭千日菊(Spilanthes acmella)之花頭乾燥品(粉碎成約5mm者)加入100kg之99容量%乙醇,以75℃~回流溫度萃取5小時。冷卻萃取液至40℃後,藉由離心過濾器進行固液分離,將該萃取液於減壓下濃縮至20kg。加入0.2kg之活性炭於濃縮液,攪拌1小時後,加入矽藻土,加壓過濾以除去活性炭,進一步於減壓下進行濃縮而得0.43kg之荷蘭千日菊濃縮物。加入2kg之蒸餾水於此濃縮物,以2kg之醋酸乙酯進行萃取3次。合併經萃取之醋酸乙酯層,加入矽藻土,加壓過濾後,藉由減壓濃縮,得到0.31kg之千日菊粗萃取物。產率為3.1%。千日菊醯胺含量為12.4%。混合100g之上述千日菊粗萃取物與100g之脂肪酸三甘油酯,使用減壓薄膜蒸餾裝置,以真空度:3~5Pa,蒸發面溫度:110~150℃進行蒸餾,得到33.3g之餾出液。產率為33%,千日菊醯胺含量:38.0質量%。
將300g之荷蘭千日菊之花頭乾燥品,以3200g之95容量%乙醇進行回流萃取1小時。冷卻萃取液,進行固液分離後,加入矽藻土過濾。將濾液藉由減壓濃縮餾去乙醇後,加入300g的水,以300ml之己烷進行萃取3次。合併經萃取之己烷層,藉由減壓濃縮餾去己烷,得到8.4kg之粗萃取物。產率為2.8%(千日菊醯胺含量為9.5%)。將8.4g之粗萃取物由矽膠管柱層析(200g之矽膠,5cm)進行分離(以正己烷:醋酸乙酯=8:2沖提),分取千日菊醯胺分離部份(Rf值=0.2~0.3,正己烷:醋酸乙酯=7:3),藉由將溶劑減壓下餾去,得到2.76g之粗千日菊醯胺分離部份1。接著,將該粗千日菊醯胺分離部份1於減壓下(0.1mmHg),使用Kugelrohr蒸餾裝置進行單蒸餾純化(180℃),得到098g之粗千日菊醯胺分離部份2。產率為
0.33%(千日菊醯胺含量為41.9%)。將0.98g之該粗千日菊素分離部份2再由矽膠管柱層析法(矽膠為200g,5cm)進行分離(以正己烷:乙酸乙酯=95:5至90:10沖提),分取千日菊醯胺分離部份(Rf值=0.2,正己烷:乙酸乙酯=7:3),藉由減壓下餾去溶劑,而得0.52g之純化千日菊醯胺。產率為0.17%。千日菊醯胺含量為98質量%。千日菊醯胺的結構係測定質子及碳13NMR,與已知文獻數據相比較而確認。
藉由特開2002-186448號公報記載之方法,將紅蔥於-12℃下,使用76%(v/v)乙醇水溶液進行萃取,自萃取液去除溶劑而得紅蔥萃取物(固形物含量為24%)。
使用由製造例1~5所得之呈味改善劑,調查對鉀鹽或含鉀鹽之飲食品的呈味改善效果。另外,於下述的試驗例中,官能評估的評分基準係使用表1記載者。
添加40kg之氯化鉀於400kg的水,使完全溶解後,加入製造例1之含鉀鹽之組成物,使最終粉末中奎寧酸含量成為4%,調製含奎尼酸之組成物之氯化鉀水溶液。將該水溶液,以入口溫度為120℃,出口溫度為80℃進行噴霧乾燥,得到38kg之含有4%之奎寧酸之氯化鉀粉末(本發明品1)。溶解此粉末於水,使氯化鉀濃度成為1%,以未添加本發明之呈味改善劑之1%氯化鉀水溶液為對照,由10位熟練評估員進行呈味評估。該結果係過半數的評估員認為本發明品1與對照相比,氯化鉀特有的金屬味、鹼澀味減低,認可本發明之呈味改善效果。
加入10g之製造例3之粗千日菊醯胺、20g之加工澱粉、70g之糊精於150g的水,進行乳化,將其噴霧乾燥而得千日菊醯胺粉末。添加0.5g之此粉末於100g之氯化鉀,均勻混合,得到氯化鉀混合粉末(本發明品2)。溶解此粉末於水,使氯化鉀濃度成為1%,以未添加本發明之呈味改善劑之1%氯化鉀水溶液為對照,由10位熟練評估員進行呈味評估。該結果係過半數的評估員認為本發明品2與對照相比,氯化鉀特有的金屬味、鹼澀味減低,認可本發明之呈味改善效果。另外,未見有評估員感到來自發明品之異味異臭。

於0.75質量%之氯化鉀水溶液,添加製造例1~5之呈味改善劑,使含奎寧酸之組成物(製造例1、2)、千日菊醯胺(製造例3、4)、紅蔥萃取物(製造例5)於氯化鉀水溶液中含量係分別如表2記載之值,以未添加呈味改善劑品為對照,由10位熟練評估員,基於表1之評分基準進行呈味評估。該結果如表2所示。
如表2所示,可知添加各呈味改善劑於氯化鉀水溶液之呈味改善效果。另外,併用複數的呈味改善劑,更提高改善效果。
於配方1之減鹽烏龍麵沾汁,添加製造例2、4、5之呈味改善劑,使含奎寧酸組成物(製造例2)、純化千日菊醯胺(製造例4)、紅蔥萃取物(製造例5)於烏龍麵沾汁中含量係分別如表3記載之值,以未添加呈味改善劑品為對照,由10位熟練評估員,基於表1之評分基準進行呈味評估。該結果如表3所示。
如表3所示,添加本發明之呈味改善劑之含奎寧酸之組成物及純化千日菊醯胺於減鹽烏龍麵沾汁時,可見到氯化鉀特有的金屬味之呈味改善效果,並且亦見到鹽味增強效果。此效果係再併用紅蔥萃取物時而更加提升。另一方面,未見對烏龍麵沾汁原本風味之柴魚風味造成不良影響。另外,亦未見有評估員感到來自本發明品之異味異臭。
於市售品之減鹽淺醃漬之素(稀釋品),添加製造例2、4、5之呈味改善劑,使含奎寧酸之組成物(製造例2)、純化千日菊醯胺(製造例4)、紅蔥萃取物(製造例5)於淺醃漬之素中含量係分別如表3記載之值,以未添加呈味改善劑品為對照,由10位熟練評估員,基於表1之評分基準進行呈味評估。該結果如表4所示。
如表4所示,添加本發明之呈味改善劑之含奎寧酸之組成物及純化千日菊醯胺於減鹽淺醃漬之素時,可見到氯化鉀特有的不愉快味道之呈味改善效果,尤其藉由併用紅蔥萃取物時,亦見到淺醃漬之素原本呈味之鹽味、鮮味等之增強效果。
於配方2之減鹽紫蘇沙拉醬中,添加製造例2、4、5之呈味改善劑,使含奎寧酸之組成物(製造例2)、純化千日菊醯胺(製造例4)、紅蔥萃取物(製造例5)於沙拉醬中含量係分別如表5記載之值,以未添加呈味改善劑品為對照,由10位熟練評估員,基於表1之評分基準進行呈味評估。該結果如表5所示。
如表5所示,添加本發明之呈味改善劑之含奎寧酸之組成物、純化千日菊醯胺、紅蔥萃取物於減鹽紫蘇沙拉醬時,可見到氯化鉀特有的不愉快味道之呈味改善效果。另一方面,未見對紫蘇沙拉醬原本風味之紫蘇風味造成不良影響。另外,亦未見有評估員感到來自本發明品之異味異臭。
於市售品之減鹽義大利沙拉醬中,添加製造例1、2、4、5之呈味改善劑,使含奎寧酸之組成物(製造例1、2)、純化千日菊醯胺(製造例4)、紅蔥萃取物(製造例5)於沙拉醬中含量係分別如表6記載之值,以未添加呈味改善劑品為對照,由10位熟練評估員,基於表1之評分基準進行呈味評估。該結果如表6所示。
如表6所示,添加本發明之呈味改善劑之含奎寧酸之組成物、純化千日菊醯胺、紅蔥萃取物於減鹽義大利沙拉醬時,可見到氯化鉀特有的鹼澀味之呈味改善效果。另一方面,未見對義大利沙拉醬特有的酸味造成不良影響。
於配方3之減鹽法式清湯中,添加製造例2、4、5之呈味改善劑,使含奎寧酸之組成物(製造例2)、純化千日菊醯胺(製造例4)、紅蔥萃取物(製造例5)於清湯中含量係分別如表7記載之值,以未添加呈味改善劑品為對照,由10位熟練評估員,基於表1之評分基準進行呈味評估。該結果如表7所示。
如表7所示,添加本發明之呈味改善劑之含奎寧酸之組成物、純化千日菊醯胺、紅蔥萃取物於法式清湯時,可見到氯化鉀特有的金屬味之呈味改善效果。另一方面,未見對法式清湯原本風味之雞肉風味造成不良影響。
於配方4之減鹽拉麵高湯中,添加製造例2、4、5之呈味改善劑,使含奎寧酸之組成物(製造例2)、純化千日菊醯胺(製造例4)、紅蔥萃取物(製造例5)於高湯中含量係分別如表8記載之值,以未添加呈味改善劑品為對照,由10位熟練評估員,基於表1之評分基準進行呈味評估。該結果如表8所示。
溶解20g之上述粉末於500g之熱水。
如表8所示,添加本發明之呈味改善劑之含奎寧酸之組成物、純化千日菊醯胺、紅蔥萃取物於減鹽拉麵高湯時,可見到氯化鉀特有的不愉快味道之呈味改善效果。另一方面,幾乎未見對減鹽拉麵高湯原本風味之雞肉風味造成不良影響,併用含奎寧酸之組成物、純化千日菊醯胺、紅蔥萃取物時雞肉風味略增強。另外,亦未見有評估員感到來自本發明品之異味異臭。
於配方5之豬肉味噌湯中,添加製造例1、2、4、5之呈味改善劑,使含奎寧酸之組成物(製造例1、2)、純化千日菊醯胺(製造例4),紅蔥萃取物(製造例5)於湯中含量係分別如表9記載之值,以未添加呈味改善劑品為對照,由10位熟練評估員,基於表1之評分基準進行呈味評估。該結果如表9所示。
如表9所示,添加本發明之呈味改善劑之含奎寧酸之組成物、純化千日菊醯胺、紅蔥萃取物於減鹽豬肉味噌湯時,可見到氯化鉀特有的鹼澀味之呈味改善效果。另外,亦見到關於豬肉味噌湯特有鮮味之增強效果。
於配方6之減鹽義大利蔬菜濃湯中,添加製造例1~5之呈味改善劑,使含奎寧酸之組成物(製造例1、2)、純化千日菊醯胺(製造例3、4)、紅蔥萃取物(製造例5)於義大利蔬菜濃湯中含量係分別如表10記載之值,以未添加呈味改善劑品為對照,由10位熟練評估員,基於表1之評分基準進行呈味評估。該結果如表10所示。
如表10所示,添加本發明之呈味改善劑之含奎寧酸之組成物、純化千日菊醯胺、紅蔥萃取物於減鹽義大利蔬菜濃湯時,可見到氯化鉀特有的不愉快味道之呈味改善效果。另外,關於義大利蔬菜濃湯特有的蕃茄風味,亦見到部份的增強效果。另一方面,亦未見有評估員感到來自本發明品之異味異臭。
於配方7之減鹽奶油濃湯中,添加製造例1、2、4、5之呈味改善劑,使含奎寧酸組成物(製造例1、2)、純化千
日菊醯胺(製造例4)、紅蔥萃取物(製造例5)於奶油濃湯中含量係分別如表11記載之值,以未添加呈味改善劑品為對照,由10位熟練評估員,基於表1之評分基準進行呈味評估。該結果如表11所示。
如表11所示,添加本發明之呈味改善劑之含奎寧酸之組成物、純化千日菊醯胺、紅蔥萃取物於減鹽奶油濃湯時,可見到氯化鉀特有的不愉快味道之呈味改善效果。另外,關於奶油濃湯特有的牛奶風味或甜味,亦見到部份的增強效果。
於配方8之減鹽肉醬中,添加製造例1、2、4、5之呈味改善劑,使含奎寧酸之組成物(製造例1、2)、純化千日菊醯胺(製造例4)、紅蔥萃取物(製造例5)於肉醬中使其含量係分別如表12記載之值,以未添加呈味改善劑品為對照,由10位熟練評估員,基於表1之評分基準進行官能性評估。該結果如表12所示。
如表12所示,添加本發明之呈味改善劑之含奎寧酸之組成物、純化千日菊醯胺、紅蔥萃取物於減鹽肉醬時,可見到氯化鉀特有的金屬味之呈味改善效果。另外,關於肉醬特有的蕃茄風味,亦見到增強效果。另一方面,亦未
見有評估員感到來自本發明品之異味異臭。
因為本發明之呈味改善劑係不影響飲食品原本的香味,可改善鉀鹽特有的金屬味、鹼澀味等之不愉快味道,增強鹽味,所以比以往容易使用於減鹽食品等,可提高鉀鹽作為食鹽代替品之價值。
Claims (19)
- 一種氯化鉀或含氯化鉀之飲食品的呈味改善劑,其特徵係含有下述組成物(1)或(2)作為有效成分,(1)(a)奎尼酸或含奎尼酸之組成物、(b)千日菊醯胺或含千日菊醯胺之植物萃取物或植物精油;(2)(a)奎尼酸或含奎尼酸之組成物、(b)千日菊醯胺或含千日菊醯胺之植物萃取物或植物精油、及(c)於-20~0℃以醇水溶液自蔥屬(Allium)植物所萃取出之蔥屬植物萃取物。
- 如申請專利範圍第1項之呈味改善劑,其中含奎尼酸之組成物係以水萃取處理茶葉得到萃取液,接著,以吸附劑純化處理該萃取液所得之純化物而成。
- 如申請專利範圍第2項之呈味改善劑,其中茶葉為紅茶葉。
- 如申請專利範圍第1項或第2項之呈味改善劑,其中含奎尼酸之組成物係將咖啡豆萃取物進行水解處理,純化水解處理物所得之含奎尼酸之咖啡豆水解物而成。
- 如申請專利範圍第1項或第2項之呈味改善劑,其中千日菊醯胺或含千日菊醯胺之植物萃取物或植物精油係源自荷蘭千日菊(Spilanthes acmella)或黃花千日菊(Spilanthes paniculata)之萃取物或精油。
- 如申請專利範圍第1項或第2項之呈味改善劑,其中蔥屬植物萃取物係紅蔥(shallot)及/或洋蔥之萃取物。
- 一種氯化鉀組成物,其特徵係含有如申請專利範圍 第1項至第6項中任一項之呈味改善劑。
- 一種含氯化鉀之飲食品,其特徵係含有如申請專利範圍第1項至第6項中任一項之呈味改善劑。
- 如申請專利範圍第8項之含氯化鉀之飲食品,其中含氯化鉀之飲食品係使用氯化鉀之減鹽飲食品。
- 一種含氯化鉀之飲食品的呈味改善方法,其特徵係添加如申請專利範圍第1項至第6項中任一項之呈味改善劑。
- 一種含氯化鉀之飲食品的呈味改善方法,其特徵係,以相對於飲食品中氯化鉀而言,奎尼酸量成為20~10000ppm、千日菊醯胺量成為1~5000ppm、或蔥屬植物萃取物固形分成為2~40000ppm之添加量添加如申請專利範圍第1項至第6項中任一項之呈味改善劑。
- 如申請專利範圍第10項或第11項之含氯化鉀之飲食品的呈味改善方法,其中含氯化鉀之飲食品係使用氯化鉀之減鹽飲食品。
- 一種含氯化鉀之飲食品用香味料組成物,其特徵係含有如申請專利範圍第1項至第6項中任一項之呈味改善劑。
- 一種含氯化鉀之飲食品,其特徵係含有如申請專利範圍第13項之香味料組成物。
- 如申請專利範圍第14項之含氯化鉀之飲食品,其中含氯化鉀之飲食品係使用氯化鉀之減鹽飲食品。
- 一種食鹽組成物,其特徵係含有氯化鉀及如申請 專利範圍第1項至第6項中任一項之呈味改善劑。
- 一種飲食品,其特徵係含有如申請專利範圍第16項之食鹽組成物。
- 如申請專利範圍第17項之飲食品,其中飲食品係使用氯化鉀之減鹽飲食品。
- 一種飲食品之減鹽方法,其特徵係於飲食品中添加如申請專利範圍第16項之食鹽組成物。
