Abstract

Soguk su ile demlenen yaprak çay hazirlamak için bir yöntemdir. Yesil çay yapraklarinin ufalanir, tanaz ile islenir, dahili peroksidazlarin gallik asidi ve tanaz islemi ile açiga çikan diger bilesikleri oksitleme üzere aktiflestirilmeleri için yeterli miktarda hidrojen peroksit varliginda mayalanir, ve daha sonra kurutulur. Nihai ürün iyi bir aroma ve renk vererek sicak veya soguk su ile demlenen bir siyah yaprak çaydir.
