Abstract
"MéTODOS PARA PREPARAR CHá DE FOLHA DE INFUSãO EM áGUA FRIA, E PARA GERAR ESPéCIES COLORIDAS EM UM PRODUTO DE CHá DE INFUSãO EM áGUA FRIA, CHá DE FOLHA DE INFUSãO EM áGUA FRIA, E, Pó DE CHá DE INFUSãO EM áGUA FRIA". Um método para preparar um chá de folha de infusão em água fria. As folhas de chá verde são maceradas, tratadas com tanase, fermentadas na presença de peróxido de hidrogênio em uma quantidade que é suficiente para ativar peroxidases endógenas para oxidar ácido gálico e outros compostos que são liberados pelo tratamento de tanase, e depois secadas. O produto final é um chá preto de folha que infunde em água quente ou fria para dar bons aroma e cor.
