1319745 Instant tea TENCO BROOKE BOND Ltd 6 March 1972 [9 March 1971] 6405/71 Addition to 1204585 Heading A2B Green tea leaf is disintegrated, mixed with water in a fermentation vessel in the absence of any molecular oxygen containing gas, and hydrogen peroxide solution is added at a constant rate to the resulting suspension, the dissolved oxygen concentration thereof being monitored, the addition of hydrogen peroxide being stopped when a sudden rise in the dissolved oxygen concentration is observed, further enzyme activity being eliminated either after or upon completion of the desired fermentation and either after or before removal of insoluble materials, and the resulting liquor is dried, for example by spray or freeze drying, if desired after adjusting the volatiles concentration and/or mixing with liquor from other sources.
