Abstract
1468405 Treating milk ALFA-LAVAL AB 17 April 1974 [19 July 1973] 16893/74 Heading A2D A method of treating a -liquid, e.g. milk, with hydrogen peroxide to increase the keeping quality of the liquid comprises generating the hydrogen peroxide in the liquid by enzymatic means. In the case of milk, the hydrogen peroxide may activate the lactoperoxidase-thiocyanate system therein to form antibacterial substances in situ. The liquid can be mixed with an enzyme and a substance that can release hydrogen peroxide under the influence of said enzyme. Alternatively the liquid may be mixed with an enzyme or enzyme system that can generate hydrogen peroxide in conjunction with a substance present in the liquid. Further the liquid may be mixed with a substance that can generate hydrogen peroxide under the influence of an enzyme that is normally present in -the liquid. The enzyme or enzymes may be attached to a matrix. which is positioned in a vessel, and the liquid brought into contact with said enzyme or enzymes by suitable flow means (Fig. 3, not shown). Suitable enzymes are glucose oxidase, L-amino acid oxidase, galactose oxidase, xanthine oxidase, and a mixture of #-galactosidase and glucose oxidase. The liquid under treatment may be cooled.
