Abstract

1361846 Fructose: enzymatic isomerization of glucose AGENCY OF INDUSTRIAL SCIENCE & TECHNOLOGY 30 July 1971 [30 July 1970] 35868/71 Heading C2S [Also in Division C3] Glucose and converted starch (90 DE) are converted into fructose by an intracellular glucose isomerase obtained by culturing a glucose isomerase-producing microorganism of the genus Streptomyces wherein the process is characterized by adding or replenishing the culture medium, at least during the term of glucose isomerase induction with an inducer selected from one or more of D-xylose, xylobiose, D-xylulose, xylan, xylan hydrolysates and xylan containing materials, such that amounts of the inducer in the culture medium are maintained at or above a predetermined level.
