Abstract
A glucose isomerase enzyme preparation, used for converting glucose to fructose, is prepared by growing a Streptomyces species microorganism e.g. olivochromogenes, venezuelae, in a medium containing assimilable nitrogen. The culture medium may be prepared from starch and xylose material e.g. xylan hydrolysate, having a pH 7 to 9, and is incubated at 20-40 degrees C.
