Abstract

1397410 Treating yeast DISTILLERS CO (YEAST) Ltd 22 Aug 1972 [9 Sept 1971] 42163/71 Heading A2D [Also in Division C6] Granulated yeast is rendered more free-flowing and less prone to form lumps, especially when moist, by adding thereto a small amount e.g. less than 5% by weight, based on the dry matter content of the yeast, of hydrophobic silicic acid. In producing dried yeast, granulated compressed yeast of 27-40% dry matter (if necessary, pre-treated with sodium chloride to reduce stickiness) is treated with hydrophobic silicic acid and is disintegrated without application of pressure in such a way as to increase the volume: weight ratio without substantial breakdown of the yeast cells themselves, and the disintegrated yeast is dried. Alternatively, a yeast cream may be spraydried to form a powder and the powder further dried in trays after the addition of the hydrophobic silicic acid.
