Abstract

Un método destinado a la preparacion de un té de hojas para infusiones con agua fría.Las hojas verdes del té se maceran, se tratan con tanasa, se fermentanen presencia de peroxido de hidrogeno, en una cantidad que es suficiente para activar lasperox idasas endogenas a fin de oxidar el ácido gálico y otroscompuestos que se liberan por el tratamiento con tanasa, y luego se secan. El producto final es un te de hojas negras que se infunde en agua fría o caliente,para brindar un buen sabor ycolor.
