Abstract

La presente invención se refiere a un procedimiento de preparación de arroz cocinado que contiene maltodextrina indigerible para inhibir la elevación de azúcar en la sangre. El procedimiento comprende las etapas de: 1) lavar arroz en bruto, remojar el arroz lavado en agua, deshidratar el arroz remojado y cargar el arroz deshidratado en un recipiente; 2) esterilizar por calor el arroz cargado en el recipiente; 3) suministrar el agua de cocinado que contiene maltodextrina indigerible en una cantidad de 5,0-8,0 g, en base a 210 g del arroz cocinado, en el recipiente cargado de arroz y cocer el arroz con vapor; y 4) sellar el arroz cocinado.
