Abstract

a presente invenção refere-se a um método de cozimento e esterilização de alimentos dispostos em uma embalagem selada que compreende uma válvula unidirecional que se abre a uma pressão supra-atmosférica de 2 a 20 kpa (20 a 200 mbar), o referido método compreende as etapas de: a) aquecer a embalagem selada para cozinhar a comida; b) submeter a embalagem selada da etapa a) a uma pressão subatmosférica de modo que o gás saia da embalagem selada através da válvula; e c) autoclavar o pacote selado da etapa b) a uma pressão supra-atmosférica.
