Abstract

본 발명은 난소화성 말토덱스트린 함유 혈당상승 억제용 즉석밥의 제조 방법에 관한 것으로, 더욱 상세하게는 원료미를 세미하여 침지 및 탈수시킨 후, 용기에 충전하는 단계(단계 1); 용기에 충전된 원료미를 가열 살균하는 단계(단계 2); 난소화성 말토덱스트린 함량이 즉석밥 210g을 기준으로 5.0g 내지 8.0g 함유된 취반수를 원료미가 충전되어 있는 용기에 충전하고 스팀으로 취반하는 단계(단계 3); 및 상기 취반된 즉석밥을 밀봉하는 단계(단계 4)를 포함한다.
