Abstract

유지성분 중량에 대하여 40wt.% 이상의 SUS 타입 트리글리세리드를 함유한 유지성분 95∼40wt.%와 라우린 유지성분 5∼60wt.%를 함유해서 된 아이스크리임등의 냉동과자 제조용 유지원료가 개시되어 있다. 위에 나온 유지원료를 사용한 냉동과자도 개시되어 있다.

Claims (7)

  1. 유지성분 중량에 대하여 40wt.% 이상의 SUS 타입 트리글리세리드를 함유한 유지성분 95∼40wt.%와 라우린 유지성분 5∼60wt.%를 함유해서 된 냉동과자 제조용 유지원료.
  2. 제1항에 있어서, 40wt.% 이상의 SUS 타입 트리글리세리드를 함유한 유지성분이 파암 중간 획분인 유지원료.
  3. 제1항에 있어서, 상기 원료를 아이스 크리임 제조에 사용되는 유지원료.
  4. 제1항에 의한 유지원료를 함유한 냉동과자.
  5. 제5항에 있어서, 유지원료중에서 40wt.% 이상의 SUS 타입 트리글리세리드를 함유한 유지성분이 파암 중간 획분인 냉동과자.
  6. 제4항에 있어서, 냉동과자가 아이스 크리임인 냉동과자.
  7. 제1항에 의한 유지원료를 기타의 원료와 혼합하여서 되는 냉동과자의 제조방법.
