Claims (8)
- 팽창된 소맥식품을 제조하기 위한 방법에 있어서, 소맥을 분쇄하여 얻어진 밀기울을 제거하지 않은 소맥분에 수분을 첨가하고, 균일하게 혼합하여 반죽을 만들고, 그 반죽을, 반죽내에서 열과 증기를 발생시키는데 충분한 비율로 다이를 통해 이송하고, 소맥을 조절하도록 다이내에서 반죽을 요리하고, 증기를 갑자기 배출시켜 반죽을 팽창시키도록 그 반죽을 저압지역으로 압출하는 단계들로 이루어진 것을 특징으로 하는 소맥식품 제조방법.
- 제1항에 있어서, 상기 소맥이 적어도 11% 단백질을 가지는 상기 방법.
- 제1항에 있어서, 상기 반죽이 약 14-18 중량%의 수분을 가지는 상기 방법.
- 제1항에 있어서, 상기 반죽이 시간당 약 1000파운드의 비율로 압출되는 상기 방법.
- 제1항에 있어서, 상기 저압지역이 대략 대기압을 갖는 상기 방법.
- 제1항에 있어서, 상기 소맥이 다이의 최소 직경보다 크지 않은 입자 크기를 갖는 상기 방법.
- 제1-6항 중 한항에 있어서, 상기 열 및 증기가 상기 반죽 내에서 발생되고 상기 반죽이 그 반죽 및 다이에 어떤 외부열을 가함이 없이 다이내에서 요리되는 상기 방법.
- 제1항에 있어서, 상기 반죽이 포오크 커얼 형태를 갖는 팽창된 식품을 형성하도록 상기 저압 지역내로 압출되는 상기 방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
