Abstract

In this process, the flour or grain is forced through a perforated grid with compaction by at least 10%, based on the bulk density of the starting state, in order to form granules or pellets, and is subsequently milled again. An improvement of the baking and keeping properties of the products baked from the flour or grain is thus achieved.
