Abstract
본 발명에 따른 대파향이 가미된 식용유지는, 식용유지 100 중량부 대비 건향신재료 23 ~ 42 중량부를 식용유지에 중탕하여 얻어진 대파향신유에 대파풍미유및 녹차추출액을 혼합하여 이루어지고, 본 발명에 따른 향이 가미된 식용유지를 이용하여 요리하는 경우에 향미를 증진시키는 효과가 있고, 비활성처리된 녹차추출액의 산패를 막고, 향이 보관기간 중에 안정적으로 유지되는 효과가 있다.

Claims (4)
- 대파, 마늘, 고추씨를 전처리하고 수분함량을 15% 미만으로 건조하여 건향신재료를 제조하는 1 단계;
상기 건향신재료를 선별망에 넣고 식용유지에 중탕하여 대파향미유를 제조하는 2단계;
상기 대파향미유를 냉각하는 3단계;
상기 냉각된 대파향미유에 대파풍미유와 녹차추출액을 투입하고 교반하여 혼합대파향미유를 제조하는 4단계; 및
상기 혼합대파향미유를 여과 및 정제하는 5단계를 포함하여 이루어지고,
상기 대파풍미유는
식물성유지와 골파향을 3:7 중량부로 혼합한 것으로, 혼합대파향미유 총중량 대비 0.3~1.5중량%로 첨가하고,
상기 녹차추출액은
녹차를 에탄올에 혼입하여 교반하고 50~ 60℃에서 100~150분간 녹차성분을 추출하고, 100~110℃ 로 10분간 가열한 후 여과하여 녹차추출물을 제조하고, 상기 녹차추출물에 에탄올과 유화제를 각각 3:2:5의 중량비로 혼합하여 90~95℃에서 60분간 유화시킨 다음, 75~85℃에서 10~20 시간 가열한 후 냉각 및 여과시켜 제조하는 것으로, 혼합대파향미유 총중량 대비 0.005~0.02 중량%로 첨가하는 것을 특징으로 하는 대파향이 가미된 식용유지의 제조방법.
- 청구항 1에 있어서,
상기 제1단계는 건대파 1중량부 대비하여 건마늘과 건고추씨를 각각 0.3 ~ 0.5 중량부 및 0.05 ~ 0.1 중량부로 첨가하여 건향신재료를 제조하는 것을 특징으로 하는 대파향이 가미된 식용유지의 제조방법.
- 청구항 1에 있어서,
상기 제2단계는 식용유지 100 중량부 대비 건향신재료 23 ~ 42 중량부를 첨가하고, 100~ 170℃ 에서 50~70분간 중탕하여 대파향미유를 제조하는 것을 특징으로 하는 대파향이 가미된 식용유지의 제조방법.
- 청구항 1 내지 청구항 3 가운데 어느 하나의 항에 의한 제조방법으로 제조되며, 식용유지 100 중량부 대비 건향신재료 23 ~ 42 중량부를 식용유지에 중탕하여 얻어진 대파향신유에 대파풍미유및 녹차추출액을 혼합하되, 총중량을 기준으로 대파풍미유 0.3~1.5중량%, 녹차추출액 0.005~0.02 중량%, 잔량의 대파향신유로 구성되는 대파향이 가미된 식용유지.
