Description
レモンの果皮を次の3部位(図2の1〜3)に分けて、それぞれの苦味および香りの強さを直接食べ、または匂いを嗅いで評価した。評価は、1を弱いとし、5を強いとし、5段階で評価した。
根菜類用の回転ドラム式皮むき装置を用いて、レモン全果の超表層部を、油胞の90%以上が残る程度に、除去した。得られたレモン加工品を半分に切断し、果肉と種子と、じょうのう膜の大部分を取り除いた果皮加工品を得た(図4)。これを水中で破砕乳化し、遠心分離で固形分を取り除いて、乳化液を作成した。得られた乳化液を、表2の処方で配合し、瓶に充填した後、炭酸ガスを圧入し、85℃5分間で加熱殺菌して炭酸飲料1を製造した。比較として、超表層部を除去しない以外は同様にして調製した炭酸飲料2、また、超表層部だけではなくフラベド部も除去した以外は同様にして調製した炭酸飲料3を作成した。それぞれの飲料の苦味及び香りの強さを、実施例1と同様にして評価した。
根菜類用の回転ドラム式皮むき装置を用いて、レモン全果の超表層部を、油胞の90%以上が残る程度に、除去した。得られたレモン加工品を4つ切りにし、Brix10とpなるように水と砂糖を加えて、家庭用ミキサーで破砕し、ガーゼで濾して、レモンジュースとした。得られたレモンジュースは、レモンの香気が好ましく感じられ、酸味は強いが、レモン独特の刺激性の強い苦味は低減されていた。
実施例2で製造したレモン果皮加工品(図4)を、短冊状に切りそろえ、鍋にレモン果皮加工品100質量部、砂糖80質量部を入れ、レモン果皮加工品が浸かる程度の量の水を加え、弱火で煮詰めた。少し汁気が残る程度のときに火を止め、鍋から取り出し、半日から1日程度乾燥させた。グラニュー糖をまぶして、レモンピールとした。得られたレモンピールは、不快な苦味が少なく、食べやすいものであった。
根菜類用の回転ドラム式皮むき装置を用いて、ナツミカン全果の超表層部を、油胞の90%以上が残る程度に、除去した。得られたナツミカン加工品100質量部を皮と果肉とに分け、皮は短冊状に切りそろえ、果肉はじょうのう膜ごと小片に切り分けた。ナツミカンの果肉を鍋に入れ、加熱することによりピューレ状にした。ここに、果皮(超表層部が取り除かれたもの)と、60〜70質量部の砂糖を加えて鍋に入れ、適度な固さになるまでかき混ぜながら煮詰めてマーマレードとした。得られたマーマレードは、ナツミカンらしい爽やかな風味と適度なほろ苦さを有しており、不快な苦味は感じられなかった。
Claims (7)
- 柑橘果実の果皮の一部が外部表面から1mm以内の厚さで取り除かれており、かつ、果皮の一部を除去する前の油胞の個数に対して50%を超える数の油胞が破壊されずに維持されている、柑橘果実加工品。
- 柑橘果実の果皮の一部が、外部表面から0.7mm以内の厚さで取り除かれている、請求項1に記載の柑橘果実加工品。
- 前記柑橘果実の果皮の一部が、果皮の外部面積全体に基づいて、50%以上の面積である、請求項1または2に記載の柑橘果実加工品。
- 果皮の一部を除去する前の油胞の個数に対して70%以上の油胞が破壊されずに維持されている、請求項1〜3のいずれか1項に記載の柑橘果実加工品。
- さらに、果肉と種子が取り除かれている、請求項1〜4のいずれか1項に記載の柑橘果実加工品。
- さらに、じょうのう膜とアルベドの90質量%以上とが取り除かれている、請求項5に記載の柑橘果実加工品。
- 請求項1〜6のいずれか1項に記載の柑橘果実加工品と水または有機溶媒とを含む、柑橘果実抽出物。
