Abstract
Description
その結果、植物粒子を、加温下で液化した固体脂の共存下で、平均粒径が25μm以下となるまで微粉砕処理した後、冷却して固体脂を硬化させることにより、外観及び食味の改善された植物微粉砕物を含有する植物含有固体脂組成物が得られることを見出し、本発明を完成するに至った。
[1]固体脂中に植物微粉砕物を含有する植物含有固体脂組成物を製造する方法であって、
植物粒子を、加温下で液化された固体脂の共存下で、平均粒径が25μm以下となるまで微粉砕処理した後、冷却して固体脂を硬化させることを含む方法。
[2]前記微粉砕処理により、植物微粉砕物の表面が固体脂でコーティングされ、植物微粉砕物の表層が固体脂で浸潤される、[1]に記載の方法。
[3]固体脂と植物微粉砕物の合計に対する植物微粉砕物の比率が15質量%以上85質量%以下である、[1]又は[2]に記載の方法。
[4]前記微粉砕処理が、湿式ビーズミル処理及び/又はロールミル処理による、[1]〜[3]のいずれかに記載の方法。
[5]固体脂が、カカオバター、ココナッツオイル、パーム油、パーム核油、ヘット、ギー、ラード、及びバターから選ばれる1以上である、[1]〜[4]のいずれかに記載の方法。
[6]前記微粉砕処理後の植物微粉砕物と液化された固体脂との混合物に加水して均質化した後、凍結乾燥処理により固体脂を硬化させる、[1]〜[5]のいずれかに記載の方法。
[7]固体脂と植物微粉砕物の合計に対する加水量が10質量%以上60質量%以下である、[6]に記載の方法。
[8]前記凍結乾燥処理により、多孔質構造が形成されるように硬化させる、[6]又は[7]に記載の方法。
[9][1]〜[8]のいずれかに記載の方法により製造される植物含有固体脂組成物。
[10]平均粒径が25μm以下の植物微粉砕物の表面が、固体脂でコーティングされ、植物微粉砕物の表層が固体脂で浸潤されてなる植物含有固体脂組成物。
[11]固体脂と植物微粉砕物の合計に対する植物微粉砕物の比率が15質量%以上85質量%以下である、[10]に記載の植物含有固体脂組成物。
[12]多孔質構造を有する、[10]又は[11]に記載の植物含有固体脂組成物。
[13]固体脂中に植物微粉砕物を含有する植物含有固体脂組成物の外観及び食味を改善する方法であって、
植物粒子を、加温下で液化された固体脂の共存下で、平均粒径が25μm以下となるまで微粉砕処理した後、冷却して固体脂を硬化させることを含む方法。
[14]前記微粉砕処理により、植物微粉砕物の表面が固体脂でコーティングされ、植物微粉砕物の表層が固体脂で浸潤される、[13]に記載の方法。
当該植物含有固体脂組成物における固体脂と植物微粉砕物の合計に対する植物微粉砕物の比率は、前記のように15質量%以上85質量%以下であるのが好ましい。また、前記のように本発明の植物含有固体脂組成物を、微粉砕処理後、加水して均質化した後、凍結乾燥して固形化した場合には、得られた組成物は多孔質状となる。
平均粒径25μm以下まで微粉砕処理され、硬化されてなるこの植物含有固体脂組成物は、後記実施例に示すように従来の植物含有固体脂組成物とは相違する性質を有し、構造や特性で特定することが不可能又は実際的でない組成物である。
本発明の植物含有固体脂組成物の一態様としては、前記植物微粉砕物を加温下で液化された前記固体脂とともに平均粒径25μm以下まで微粉砕処理した後、さらに加水、均質化され、凍結乾燥処理されてなる多孔質状の植物含有固体脂組成物が挙げられる。また、前記固体脂と前記植物微粉砕物の合計に対する前記植物微粉砕物の比率は15質量%以上85質量%以下が好ましい。尚、ここでいう多孔質とは、多数の細孔を有する態様を指し、前記多孔質状の植物含有固体脂組成物は、窒素法BET比表面積測定法により得られる比表面積が、1m2/g以下であることが好ましい。
ここでは、本発明の植物含有固体脂組成物を調製し、その特性について調べた。
5:ムラのない一様な外観を呈しており好ましい。
4:ほぼムラのない一様な外観を呈しており、やや好ましい。
3:違和感を覚えるほどのムラのある外観ではなく、許容範囲。
2:やや違和感を覚えるムラのある外観であり、やや好ましくない。
1:明らかに違和感を覚えるムラのある外観であり、好ましくない。
5:保形性が高く、口どけがよく、滑らかでざらつきは全く感じられず、好ましい。
4:やや保形性が高く、口どけがややよく、滑らかでざらつきをほとんど感じず、やや好ましい。
3:ややもろい物性であり、やや口どけに難があり、ややざらつきがあるが全体的に滑らかであり許容範囲。
2:ややぼろぼろとした物性であり、ややざらつきがあり、やや好ましくない。
1:ぼろぼろとした物性であり、ざらつきがあり、好ましくない。
5:植物素材由来の香味が著しく強く、余韻もあり、好ましい。
4:植物素材由来の香味が強く、やや余韻もあり、やや好ましい。
3:植物素材由来の香味があり、やや余韻が弱いが、許容範囲。
2:植物素材由来の香味が弱く、余韻が弱く、やや好ましくない。
1:植物素材由来の香味が著しく弱く、余韻がなく、好ましくない。
5:優れる。
4:やや優れる。
3:許容範囲。
2:やや劣る。
1:劣る。
実施例1において、カカオバターとともに植物粒子を微粉砕処理し、植物微粉砕物の平均粒径が25μmの場合に、顕著な外観・食味・食感の改善効果が奏されることが分かった。これに対して、カカオバターとともに微粉砕処理をしない場合、植物微粉砕物の平均粒径が40μm以下(比較例3の剥皮大豆粉末)、10μm以下(比較例2のカカオマス粉末、比較例3のトウモロコシ種実粉末)でも、外観・食味が劣るものになってしまうことが分かった。
実施例1、2では、固体脂の代表としてカカオバターを選択して検証したが、他の固体脂、他の植物粒子の植物微粉砕物でも同様の現象が生じるか否かを検証した。表2に示す各種固体脂を用いて各種植物粒子の湿式微粉砕物を調製した。尚、粒径の調整は、微細化処理時間を適宜調節することによって行なった。その他、サンプルの調製は実施例1に準じて行なった。これを実施例1と同様に評価した。
実施例1〜3では、固体脂と植物素材の合計に対する植物素材の含有比を60質量%に固定して検証を行なった。そこでここでは、植物素材の含有量を表4に示すように変化させ、その範囲の検証を行なった。その他、サンプルの調製及び評価は実施例1と同様に行なった。これを実施例1と同様に評価した。
実施例1〜4において、植物素材の湿式微粉砕処理はビーズミル処理によって行なった。ここでは、表5に示すその他の方法でも同様の作用効果が奏されるか否かを検証した。
ここでは、多孔質状である植物含有固体脂組成物の調製、検証を行なった。実施例5で調製した植物含有固体脂組成物を加温・再溶解し、これに表6に示すように加水し、攪拌して均一化し、凍結乾燥して、多孔質状である植物含有固体脂組成物を調製した。その他、サンプルの調製及び評価は実施例1と同様に行なった。これを実施例1と同様に評価した。
実施例1〜6では、本発明の植物含有固体脂組成物が著しく優れた外観、食感、食味の作用効果の特性を有することが分かった。そこでここでは、これら特性が表7に示す他の方法(表7の対照1、対照2)に比べて、なぜ生じるのかその機序について検討した。尚、この場合、室温で硬化する固体脂では検討が困難であるため、20℃で液体状である液状油を用いて検討を行なった。

ここでは、実施例7で調製した方法と同じ方法で、トウモロコシ種実粗粉砕物50質量%とオリーブオイルを50質量%で配合した点のみを変えて調製した植物微粉砕物含有液状組成物を追加して検討を行なった(図5に示す、試験例36:油中微粉砕処理あり、比較例23:油中微粉砕処理なし)。図5に、実施例7と同様にこれらを室温で96hr静置した後の状態を示す。
そこでここでは、さらにこれら植物微粉砕物含有液状組成物中の植物粒子と油分の存在態様について詳細に観察し、その前記比較例と試験例における現象の違いがどのような構造の差異によって生じているかを検討した。
実施例9において、油中微粉砕処理が、植物微粉砕物含有液状組成物中の植物粒子と油分の存在態様に影響していることがわかった。そこで、この存在態様が、本発明の効果にどのように関わっているかについて検討した。
Claims (13)
- 固体脂中に、植物微粉砕物の表面が固体脂にコーティングされ、植物微粉砕物の表層が固体脂で浸潤された植物微粉砕物を含有する植物含有固体脂組成物を製造する方法であって、植物微粉砕物の平均粒子径の1.5倍以上で平均粒子径が20μm以上200μm以下の粗粉砕植物粒子を、乳化剤を添加せず、加温下で液化された固体脂の共存下で、平均粒子径が25μm以下となるまで微粉砕処理した後、冷却して固体脂を硬化させることを含む方法。
- 前記微粉砕処理により、植物微粉砕物をスライドグラスとプレパラートに挟み込んで潰した状態における、光学顕微鏡下の観察において、固体脂に浸潤されていない内側部分の露出面積の割合が、粒子全体の70%以下とする、請求項1記載の方法。
- 固体脂と植物微粉砕物の合計に対する植物微粉砕物の比率が15質量%以上85質量%以下である、請求項1又は2に記載の方法。
- 前記微粉砕処理が、湿式ビーズミル処理及び/又はロールミル処理による、請求項1〜3のいずれか1項に記載の方法。
- 固体脂が、カカオバター、ココナッツオイル、パーム油、パーム核油、ヘット、ギー、ラード、及びバターから選ばれる1以上である、請求項1〜4のいずれか1項に記載の方法。
- 前記微粉砕処理後の植物微粉砕物と液化された固体脂との混合物に加水して均質化した後、凍結乾燥処理により固体脂を硬化させる、請求項1〜5のいずれか1項に記載の方法。
- 固体脂と植物微粉砕物の合計に対する加水量が10質量%以上60質量%以下である、請求項6に記載の方法。
- 前記凍結乾燥処理により、多孔質構造が形成されるように硬化させる、請求項6又は7に記載の方法。
- 平均粒径が25μm以下の植物微粉砕物の表面が、固体脂がコーティングされ、植物微粉砕物の表層が固体脂で浸潤されてなる植物微粉砕物を含有する植物含有固体脂組成物であって、当該植物微粉砕物の表層の固体脂による浸潤が、植物微粉砕物をスライドグラスとプレパラートに挟み込んで潰した状態における、光学顕微鏡下の観察において、固体脂に浸潤されていない内側部分の露出面積の割合が、粒子全体の70%以下である、乳化剤非添加の植物含有固体脂組成物。
- 固体脂と植物微粉砕物の合計に対する植物微粉砕物の比率が15質量%以上85質量%以下である、請求項9に記載の植物含有固体脂組成物。
- 多孔質構造を有する、請求項9又は10に記載の植物含有固体脂組成物。
- 固体脂中に、植物微粉砕物の表面が固体脂にコーティングされ、植物微粉砕物の表層が固体脂で浸潤された植物微粉砕物を含有する植物含有固体脂組成物の外観及び食味を改善する方法であって、植物微粉砕物の平均粒子径の1.5倍以上で平均粒子径が20μm以上200μm以下の粗粉砕植物粒子を、乳化剤を添加せず、加温下で液化された固体脂の共存下で、平均粒子径が25μm以下となるまで微粉砕処理した後、冷却して固体脂を硬化させることを含む方法。
- 前記微粉砕処理により、植物微粉砕物をスライドグラスとプレパラートに挟み込んで潰した状態における、光学顕微鏡下の観察において、固体脂に浸潤されていない内側部分の露出面積の割合が、粒子全体の70%以下とする、請求項12に記載の方法。
