とした。
総合評価は、肉粒の硬さに加え、弾力感や味を含んだ評価とし、
×;無添加と同等または劣る
△;無添加に比べてやや良い
○;無添加に比べて良い
◎;無添加に比べて非常に良い
とした。
対牛肉0.5%のポリリン酸ナトリウムを、第1ミンチ処理工程31aで添加し、第2ミンチ処理工程31b終了後に寝かせ時間を変えて寝かせ工程を行った場合、第1ミンチ処理工程31aと第2ミンチ処理工程31bとの間に予備混合工程を行った場合、第1混合工程50前に予熱工程を行った場合の食感を比較した。その結果を表5に示す。
Claims (6)
- 畜肉をミンチ処理する複数のミンチ処理工程と、ミンチ状畜肉と他の食材を混合する混合工程とを備え、最後のミンチ処理工程を除くいずれかのミンチ処理工程を行う際に、ピロリン酸ナトリウム,トリポリリン酸ナトリウム,テトラポリリン酸ナトリウム,リン酸三ナトリウム,リン酸水素二ナトリウム,コハク酸二ナトリウム,クエン酸ナトリウム,クエン酸カリウム,炭酸ナトリウム,炭酸カリウム,重炭酸ナトリウム,重炭酸カリウムの少なくともいずれか1種を含む畜肉の改質剤を添加することを特徴とする畜肉加工食品の製造方法。
- 前記改質剤とともに、塩及びゼラチンの少なくとも一方を添加することを特徴とする請求項1記載の畜肉加工食品の製造方法。
- 前記改質剤を添加するミンチ処理工程と、次のミンチ処理工程との間に、ミンチ状畜肉を混ぜる予備混合工程を行うことを特徴とする請求項1又は2記載の畜肉加工食品の製造方法。
- 前記改質剤を添加するミンチ処理工程から前記他の食材を混合する混合工程までの間に、ミンチ状畜肉を寝かせてゲル化させる寝かし工程を行うことを特徴とする請求項1乃至3のいずれか1項記載の畜肉加工食品の製造方法。
- 前記他の食材を混合する混合工程の前に、ミンチ状畜肉を予熱する予熱工程を行うことを特徴とする請求項1乃至4のいずれか1項記載の畜肉加工食品の製造方法。
- 前記複数のミンチ処理工程が第1ミンチ処理工程と第2ミンチ処理工程であり、前記第1ミンチ処理工程の直前に前記改質剤を添加することを特徴とする請求項1乃至5のいずれか1項記載の畜肉加工食品の製造方法。
