Abstract
【解決手段】 食品1を容器2内に入れ、この食品1入り容器2を、連通孔3を穿設した一次フィルム4で封止して容器封入食品Aとし、この容器封入食品Aを、蒸気流入部5と蒸気排出部6とを備えた加熱容体7内に配置し、前記蒸気流入部5から加熱容体7内に水蒸気を流入せしめると共に、この水蒸気を前記蒸気排出部6から排出しながら容器封入食品Aを加熱処理した後、前記一次フィルム4の上から前記連通孔3を覆うようにして二次フィルム8を止着する。

Claims (7)
- 食品を容器内に入れ、この食品入り容器を、連通孔を穿設した一次フィルムで封止して容器封入食品とし、この容器封入食品を、蒸気流入部と蒸気排出部とを備えた加熱容体内に配置し、前記蒸気流入部から加熱容体内に水蒸気を流入せしめると共に、この水蒸気を前記蒸気排出部から排出しながら容器封入食品を加熱処理した後、前記一次フィルムの上から前記連通孔を覆うようにして二次フィルムを止着することを特徴とする容器封入食品の製造方法。
- 前記加熱処理に際して、前記蒸気流入部からの水蒸気流入量を調整することにより前記加熱容体内の加熱温度制御を行うことを特徴とする請求項1記載の容器封入食品の製造方法。
- カバー体で覆った前記容器封入食品を前記加熱容体内に配置し、このカバー体に向けて前記蒸気流入部から水蒸気を流入させて加熱処理することを特徴とする請求項1,2のいずれか1項に記載の容器封入食品の製造方法。
- 勾配屋根を有する前記カバー体で前記容器封入食品を覆うことを特徴とする請求項3記載の容器封入食品の製造方法。
- 前記一次フィルムに、U字状若しくはV字状若しくはX字状の切り込みを形成してこの切り込みを前記連通孔としたことを特徴とする請求項1〜4のいずれか1項に記載の容器封入食品の製造方法。
- 前記連通孔は、切断具により一次フィルムに前記切り込みを形成すると同時に切り込みの切断片に上向きのくせ付けを行うか若しくは、切り込みを形成した後、この切り込みの切断片に上向きのくせ付けを行うことを特徴とする請求項5記載の容器封入食品の製造方法。
- 1000気圧以上の高圧処理を施した食品を容器内に入れ、この食品入り容器を、連通孔を穿設した一次フィルムで封止して容器封入食品とすることを特徴とする請求項1〜6のいずれか1項に記載の容器封入食品の製造方法。
