Abstract

Procedimiento para la fabricación de una bebida con sabor de yogur, caracterizado porque: a) se hidrolizan enzimáticamente sólidos proteínicos lácticos en suspensión acuosa, b) se hace fermentar con un cultivo de yogur una solución que comprende los sólidas proteínicos lácticos hidrolizados en a) y lactosa, c) se prosigue, en su caso, la acidificación de la solución por adición de un ácido comestible y se separan los insolubles d) se acondiciona la bebida así obtenida y se la pasteuriza.
